Apple Pie Bites! (Paleo, Vegan & Gluten Free)

What a special day! My mom is in town, visiting me in NYC!

I am super excited to have her here in the Big Apple. We’re almost at the one year anniversary of her stroke, and what better way to celebrate her recovery than a mother/daughter weekend. — Well, aĀ midweek-weekend. If that makes any sense…

OK TIME FOR SOME COOKIES!

I originally made these bad boys for my sister-in-law’s baby shower.

And well…that baby is now a darling 4 year old. But these cookies have stood the test of time. They were the hit of the partyĀ then, and they’re still a party stand-byĀ now.

Yep! A Gluten Free, Vegan, Paleo, and Specific Carb Diet friendly cookie!

APPLE PIE BITES!

These crunchy little bites were sweet and spicy and utterly delightful!

Here’s what you need: (Makes 35 bites)

12 dates
1/4 cup Almond Butter
1/2 cup almonds
1/2 cup cashews
2 pinches of salt
1 cup of Baked Apple Chips
2 tsp ground cinnamon

Additional:
30 almonds, whole
30 almonds, halved
3/4 cup baked apple chips

Tools:
Food Processor (This is the one I use and LOVE)

Directions:
Put everything (minus the additional ingredients) into the food processor and process until it becomes like coarse sand.

Then, add in your additional 30 whole almonds and additional 3/4 cup apple chips. Pulse several times. (You want them to remain somewhat chunky for texture.)

Finally, stir in your additional 30 halved almonds.

Form balls out of 1 rounded tsp.

Chill for 30 minutes. Makes 35 bites.

Holy cow! What a delicious little cookie! Not only are they cute, but they are SO tasty! They tasteĀ justĀ like apple pie! They’re spicy from the cinnamon, and have a fresh, sweet flavor from the apples!

And they’re crunchy and chewy, and IĀ loveĀ them chilled! Simply incredible.

  1. I’m a sucker for apple pie things oh boy haha! Can’t wait to make these as soon as I get back home (aka return to an actual kitchen where i can actually cook!) And maybe I’ll make them to bring to holiday parties as well as they’re so simple to make!!

I needed a smile this morning and that did it, so thank you :):) I’ve always been a fairly healthy eater, open minded to eating and trying lots of different foods, but never really been one to see “Gluten Free, Vegan, Paleo, and Specific Carb Diet” recipes and thought mmmmmmm I want to make that hahaha but you are winning me over. Praying your visit with Mom will be one to remember, and full of blessings for you both :):)

  4. Yum! Iā€™m stuck in my dates/almonds/carob chip rutā€”Iā€™ll have to try these! What do you think about using real apples instead of the chips? Think itā€™ll make the substantive too watery?
