Hearty Vegetable Soup

I’m writing this, curled up in my bed, sick as a dog.

Even though I got a flu shot this year (first one ever, I might add) I still ended up with a nasty bug.

Such is life.

Anywho. When I was out at Sundance last week, we ate some pretty delicious food. And one night, while we were literally enjoying all-you-can-eat King Crab Legs, we opened up a discussion about the best meals we have ever eaten.

And sure, there were some Cheesecake Factory responses, and a couple Filet Mignon replies. But. Three of my family members cited my hearty vegetable soup as their all-time favorite meal.

I was floored. I mean, sure, my family is nice and likes to build one another up, but this wasn’t some pity remark. They actually meant it.

And I’m not going to lie…this soup is pretty amazing if I do say so myself.

And it’s Gluten Free, and SCD friendly – with a Vegan option!

So – without further ado:

Caralyn’s Hearty Turkey Vegetable Soup

What You Need: (Makes A LOT of soup)
1/4 cup Extra Virgin Olive Oil
1 white onion, diced
7 large carrots, chopped
1 bundle of celery, chopped
1 head of garlic, minced
2 cups fresh green beans, chopped
2 zucchini, chopped
1 can butter beans, drained and rinsed
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 rotisserie turkey breast – diced (Vegan Option: sub 8 oz crumbled seitan (not GF))
2 Tbsp oregano
2 Tbsp basil
1 Tbsp tarragon
1 Tbsp thyme
1 Tbsp sage
1/8 tsp cayenne pepper
2 bay leaves
8 oz freshly grated parmesan cheese (Vegan Option: sub 2 Tbsp nutritional yeast)
1 (or two) box(es) low sodium, organic chicken broth (Vegan Option: sub veg broth)

Tools:
Large stock pot
Large wooden spoon
Good Chef’s Knife (This is the one I use and love)
Tupperware for freezing half

Directions:
In a large stock pot, heat 1/4 cup Extra Virgin Olive Oil for 30 seconds over medium heat. Add the onions, season with salt and pepper, and sauté until translucent, about 3 minutes.

Next, stir in the carrots with the onions, season with another pinch of salt, and let cook for 3 minutes. Then, stir in the celery, and sauté for 3 more minutes.

Next, stir in the garlic, and sauté for 3 minutes.

Next, add the zucchini, green beans, another pinch of salt, and the spices (minus the bay leaves), and sauté for 5-7 minutes. ((You will feel like you are adding a lot of dried spices, but trust me, it is delicious!))

Meanwhile, drain and rinse the beans. And remove the skin, and carve the turkey breast, being careful not to include any cartilage.

Stir in the beans. Then stir in the turkey.

Finally, add the box of stock. If you want a thinner soup, use two boxes, but I like to use one so that it is thick, and more like a stew. At this point, add the bay leaves.

Cover and bring to a boil. Once boiling, pour in the parmesan cheese and stir to combine. This thickens the soup and gives it a lovely, creamy broth.

Turn off the heat, let cool. Freeze half and enjoy the other half for the next week!

This soup was a life saver during the 8 months I was home, helping my mom recover from her stroke. I would make this up on Sunday, and we’d enjoy it the whole week.

Not only is it incredibly healthy and delicious, but it was also a fool proof way for me to get my father – who is “allergic” to vegetables – to eat his veggies!

And the best thing about this soup is that it gets better with time. The flavors “marry” in the fridge, and it just blossoms, day after day.

The textures, the spices, the warm and filling ingredients – this soup won’t let you down.

Now if I could just figure out how to get these ingredients delivered to my apartment in 2 hours, without having to leave the cocoon I’ve created for myself under the covers. 🙂 — Oh wait, there’s Amazon Prime Now for that 😀

  1. I was just looking for a good hearty soup recipe; so your timing is perfect. And, I’ve been using the same chef’s knife since the early 1980’s. It’s still wonderful!

  2. I’m sorry you are ill. I had the flu shot and I’m just getting over the flu and now my sister has it. Many people in Minnesota have it as well. The worst I’ve seen in years. Lately, I have been eating much healthier and this soup looks amazing. I’m going to make it soon. Thanks an take care.

  3. Looks interesting. Maybe, I’ll make it someday. Though without the zucchini. I despise zucchini. (It’s got to do with a girl friend long ago that loved zucchini more than me.) One of my favorite soups is pea soup. I will write that post one of these days.

  5. I got the flu shot once in my life and that was the only tine i got the flu as well… So I’ve never really been a fan of getting the shot again!

  6. Thanks so much for sharing all of these. As far as the flu so sorry. You know I had it for two months and lost 20 pounds. Went to doctor, two rounds of antibiotics nothing! I finally told my husband, “I am either headed for the hospital or the grave!” It was that bad!

    I have to take a lot of herbs bc I am highly allergic to medications. So my husband went and got me some Royal Jelly. Within three days every flu symptom I had was gone! It builds up your immune system, also women you cannot have children get pregnant, (go read reviews) full of B vitamins and also lowers blood pressure as well it has anti-bacterial benefits. It also detoxes your liver, so does green tea.

    When you first start to take it start slow about one quarter to half dose for the first two weeks. It can make you a little upset stomach. Then increase dosage. Only take this if you are not allergic to bee products.

    Also get some “raw” honey, as it is not cooked. One tablespoon with one quarter of a teaspoon of ground cinnamon. Drink once a day for congestion.

    Hot Ginger tea: Get ginger root and grate some in a pot of boiling water or tea bags. Drink 2-3 cups a day, as it moves mucus. This is really how I finally got over it, but the Royal Jelly is what finally did it.

  7. Yum!, funny coincidence, I got a roast duck at the Asian Market the other day. I picked all the meat off reserved- made duck stock. Duck Soup- sauteed shallots, ginger, garlic, Serrano then added onion, carrots, celery. deglaze with rice vinegar and add stock duck. Prepare bowls with cooked rice noodles and Napa cabbage ladle soup over and top with cilantro and mint. I don’t use recipes for savory cooking

  9. There’s a chain food place called Sweet Tomatoes. It has a seven vegetable soup that looks similar. I like it. Your food recipes and descriptions are, on point. Like. Tiny shows in my head. It’s great.

  10. We are a family of soup lovers. Started by my mother who used to make an awesome turkey soup just by boiling up the bones after Christmas and adding shredded turkey leftovers. I tend to use whatever is leftover in the fridge and always start with an onion and a potato in there. Another favourite is Parsnip and Pear. I will definitely try yours though it looks wonderful.   14. I do not know how you feel about inoculations, but, even if you do not get a (highly recommended) flu shot, please consider, no, get it, a pneumonia vaccination. Pneumonia is the coup de grace of diseases. More people die from pneumonia, during or after other diseases, than anything else. Google it, then get your shot. Every five years will be fine.

  17. Looks good, which is hard for that type of dish in a picture, sounds awesome to eat. But only will happen if someone else fixed it. I love good food, will wait for it, pay for it, don’t have the kitchen patience to fixit. Maybe what bowl if i am in New York 😃 God Bless you!

  18. I will definitely be trying this! It looks/sounds amazing! Soups are my go-to with meal prep and my crazy nurse schedule it’s so easy to pre-portion them out and make my lunches “grab and go” and I was looking for a new soup recipe feeling burnt out on my other soups!
