Piña Colada Cookies!

It’s April. And you know what that means….

Granted, I woke up to SNOW on Monday in NYC, but hey – the warm weather is on the horizon, so what does that make me dream of?

The Beach. 

So here’s a little fun fact: When I was growing up, I was a huge Disney Channel Original Movie fan. I mean, we’re talking: High School Musical. The Lizzie McGuire Movie, Zenon the Zequel, Cadet Kelly, The Even Stevens Movie. I was all in.

But my favorite of all time was Rip Girls.

It starred Camilla Belle. Set in Hawaii. And I may or may not have had a slight surfer girl obsession afterwards, complete with a bedroom decoration overhaul.

So when it comes to anything beach or tropical themed, I like to consider myself an expert 🙂

Enter: my Piña Colada Cookies!

I whipped up these bad boys with visions of board shorts and palm trees in my head 🙂

Not only are they gorgeous, but they’re healthy! 

They a scrumptious blend of dried fruits and nuts. Kinda like an amped up version of a Larabar. Only, better, IMHO.

And they’re Grain and Gluten Free, Vegan, Paleo, and Specific Carb Diet friendly!

In a word…they’re DELICIOUS!

Tropical healthy cookie bites that take your taste buds to Hawaii! 🙂

Here’s what you need: (Makes 10 cookies) — enough for 3-4 people 😉

5 dates, pitted
4 dried pineapple rings
12 almonds
12 cashews
1/4 cup shredded coconut
2 Tbsp coconut butter (NOT oil)

Optional:
Melted dark chocolate (NOT S.C.D. friendly)

Tools:
Food Processor

Directions:
Put everything in the food processor and process for about a minute until everything is rough the same size. (Like the size of peppercorns.) Then, roll 1 Tbsp of dough into balls. Chill for at least 20 minutes, and enjoy.

Pro Tip: The dough may feel a bit wet when you roll it into balls initially, but that’s just the heat from the food processor melting the oils in the coconut butter. This will go away and “firm up” after 20 minutes in the fridge)

Optional: Melt about 1/4 cup dark chocolate in the microwave (do 30 second increments, stirring in between), or double boiler and dip half of the cookie. (Do this after they’ve firmed in the refrigerator for 20 minutes).

I was literally dreaming about my toes in the sand while chewing on these AMAZING COOKIES!

They’re so tropical! It’s seriously the cookie form of a Piña Colada! You’ve got the pineapple, you’ve got the coconut, you’ve got the sweetness from the dates…now all you need is rum!

But seriously, these are fantastic. They’re sticky and chewy, and the dark chocolate just takes them over the top!

Not to mention they look super elegant and “dressed up!”

I can’t wait to share these with my friends!

And you don’t have to tell anyone that they’re secretly healthy!! 😉

So bring on Spring Break!

  1. I have never tried a recipe from a website, but I’m going to make these. I am; it might take me a bit to get around to it, but I’m copying the recipe and I’m gonna do it. I’ll let you know how they turn out. Thanks.

  6. Yum! 👅 My mum used to make us her version of these when we were kids. She would make them out of whatever dried fruit and nuts she had on hand, so they were always a little different, but always delicious!

  7. These look so tasty! I love Larabars, so I bet these are great! I’m curious–since chocolate isn’t SCD friendly, are you able to eat the cookies with chocolate on them? If not, what do you do with them?

  9. Hey Lady, the round things look good, and my wife just made something similar a couple of weeks ago – trying to be healthy (for 10 minutes). This looks a little more appetizing.

    But here’s the thing. I know you get a boat load of comments, so you know your blog is a success. However, I personally want to tell you I appreciate what you do. I don’t get a chance to read a lot of blogs – which makes me feel guilty when people read mine – but I do check yours out fairly often. I just wanted you to know that if for any reason ever you feel discouraged or doubt your effectiveness, don’t. Sometimes we need to be reminded, even when we seem popular. I know for a fact that the Enemy can find ways to discourage us, even when things look good in the eyes of everyone else.

  10. There you go again got me looking at that cookie then at the junk that’s already in my trunk i cant get trunks lid close now but you must not be eating to many your looking great.
