Strawberry FroYo!

Hey y’all!

I amย still sick. This sinus/upper respiratory illness is rocking. my. world.

I have not left my bed since Saturday. And let me tell you…the stir-crazy struggle is *real.* I am climbing the walls.

All I have to say isย thank the Good Lord (literally) for grocery delivery.

And thank goodness for that, because I’ve been a housebound sickie, and yetย MY FRIDGE IS STILL STOCKED. I’ve been able to cook all the healthy and healing foods my body needs right now, and all I have to do is get up to answer the door. ANYWHO

I think at this point, I’m aboutย thisclose to hacking up a lung, so needless to say, my throat wasย raw.ย And all I could dream of was a frozen treat to sooth the fiery sandpaper currently occupying my air pipe.

Enter: My Strawberry FroYo.

FroYo = “frozen yogurt.” And it’s one of the trendiest foods right now. I swear, you can’t walk 2 blocks in NYC without passingย at least three different FroYo shops! Pinkberry, Red Mango, Sweet Frog, 16 Handles, TCBY – it isย all the rage. And I’d be lying if I didn’t say that I secretly long for FroYo. Because, sadly, dairy (and sugar!) is not on the Specific Carb Diet.

But not to worry. Because my healthy version of FroYo will rival any commercial version you can buy at the food court.

Plus, you can feel really good about eating it.

This recipe is Gluten Free, Vegan, Specific Carb Diet friendly, and Paleo!

Here’s what you need:ย (Serves 2)

6 dates
8 whole frozen strawberries
1/4 cup cashews
1 1/2 Tbsp coconut butter
Optional: 12 drops of alcohol free stevia, or 1 tsp honey/agave

1/4 cup cashews, chopped (for garnish)

Tools:
Food Processor (This is the one I use and love)
Good Chef’s knife (Here’s a good one I use!)

 

This recipe couldn’t be simpler! Put your cashews into the food processor, and process until it resembles sand. Then, throw everything else into the food processor and process until thick, creamy and smooth! Freeze for 25-30 minutes. Garnish with chopped cashews.

Oh my gosh, where to begin with this amazingness!? First of all, the flavor was magnificent. It was sweet and fresh and just bursting with strawberry flavor. But it wasn’t just “strawberry” like you imagine an artificial strawberry ice cream…This was a complexย strawberry. The coconut butter, combined with the dates gave the strawberries a deep sweetness that had some weight to it. Sounds strange, but just try it and you’ll know what I’m talking about!

And then the texture was marvelous! It was super creamy and rich. And the coldness was so refreshing and soothing on my poor throat. I also loved the crushed cashews on top too. They gave a slight crunch that went perfectly with the luxurious and thick ice cream.

This was such a treat. And I am so excited to share it with you guys. Hopefully you can enjoy some this weekend!

  1. Iโ€™ve been under the weather as well. Itโ€™s a nasty virus. Iโ€™ve got no evergy and the cough is annoying. Feel better friend.

  2. A very healthy balm for a sore throat. Hope you are better soon. Do you take your flu shots each year? They prepare the body to fight most strains of flu, however the strains mutate so fast the medical profession is always slightly behind in that fight.

  6. sorry for not checking on you earlier Beaut, but obviously you need more rest to get better…take my advice, I have had two sinus surgeries and multiple ENT/allergy problems over the years, find the best ENT in the world and make an appointment (I can give you a name of the best ENT in the world, but you would have to go to Michigan to see him), and keep hydrating, hydrating, hydrating, with water and green tea, whatever works for you…coughing is your friend and bringing up the nasty junk that is clogging up the works is what it is all about, in short, work on getting that infection out so it does not go down any further wherever gravity takes it…praying for you too beaut…take care.

  7. Feel better soon! I got my first sinus infection during the summer of 2009. I’ve been plagued with at least one or two visits to urgent care every year since then. However, we’ve learned that a humidifier does wonders for us during allergy season, and I’ve been using more essential oils in the last year. I’m not a berry person, but you make strawberries and dairy-free frozen yogurt look amazing!

  8. hope you are better. Good recipe, but for good health please read about lectins (there are many of them in all beans, nuts, the group of solanaceous, all vegetables with seeds). I read just yesterday and it was a big surprise ๐Ÿ˜‰

  9. Hope you are feeling better! If not, some homemade chicken soup with cayenne pepper, minced garlic, powdered ginger & salt might soothe your throat & aid healing. This soup is good with cooked rice added, as you eat it. Apple Cider Vinegar (ACV) & Honey tonic made from ACV & Honey mixed in warm water is helpful, too. Praying for your recovery!
