Blueberry Muffin Bites!

If there’s one thing I love about summer…it’s the abundance of berries! Strawberries, raspberries, but my all time favorite are blueberries.

And I recently discovered an amazing treat that I’ve been topping practically everything with. Dried blueberries. (This is NOT a sponsored post – just good old fashioned, genuine love here, people! 🙂 )

They’re these fabulous sweet little nuggets of chewy goodness. I top my banana ice cream with them, I put them on top of smoothie bowls, I top my apple and almond butter slices with them, and just eat them by the handful!|

But today, I did something extra special — I made cookies with them!

Have you ever had a Larabar? They are my favorite energy bar. They’re made with all whole ingredients, like dates and nuts and dried fruit. Well, they have all different types of flavors, but hands down my favorite is their blueberry bar.

So, I decided to do a riff on that, and create Blueberry Muffin Bites!

These, friends, are exquisite. And I promise you, what they lack in visual aesthetics, they make up for in flavor. Trust me! 

And these “poppable” little treats are actually good for you! They’re grain and gluten free, vegan, paleo, and Specific Carb Diet friendly!

Here’s what you need: (Makes 12 cookies)

1/8 cup almonds
1/2 cup cashews
1/4 cup reserved almonds, halved
1/4 cup dried blueberries
4 dates
1 “dropper-full” of alcohol free, vanilla stevia
5 drops alcohol free, lemon stevia (option: sub 1/4 tsp lemon zest)

Tools:
Food processor
Good chef’s knife (this is the one I use and love)

Directions:
This truly couldn’t be simpler. Throw everything except the reserved 1/4 cup almond halves into the food processor. Process for about 2 minutes, until it starts to clump together. You may need to scrape the sides a couple of times.

Then, carefully take the blade out and mix in the almond halves.

Form into 1 Tbsp balls. Child for at least 30 minutes. Makes 12 balls.

Where to begin!? These little sweet treats are outrageously good! They’re chewy and sticky, slightly crunchy and 100% fantastic!

The dried blueberries are sweet with a hint of tang that is complimented beautifully by the intensely sweet dates! And the vanilla makes them seriously taste like blueberry muffins! You can allllmost taste the streusel topping! hahah They are SO GOOD!

And they’re healthy too! They’re full of fiber and protein to keep you full! Dates are packed with antioxidants, Vitamin A, Iron, Potassium and Calcium. The nuts are full of Vitamin E, Manganese, Zinc, and Copper! They’re practically a health food! 😉

Just try not to eat them all in one sitting! 😉

  1. I have gone to stocking the Larabar’s at work. I like the “2 ingredients” or “5 ingredients” rather than needing a chemistry PhD to understand what I am going to consume. Regarding berries, we have small blueberries, called either Huckleberries or Deerberies, here in West Virginia. With all the rain that we have had this Spring, our plants (all native, just nurtured by us) are loaded with berries. Of coures, they are low to the ground, the berries are about the size of ball barings, so it take some time fill a quart jar with them. It’s sort of a meditative experience picking them. – Oscar

  2. Thanks for sharing the recipe! Dried blueberries are great, but expensive. I like to buy them fresh and dry them low and slow in my oven.

I thought you might find this interesting and charming: in the Anishinaabek language (indigenous peoples of the Great Lakes area), the word for strawberry is “odemin” (heart berry), the word for raspberry in “mskomin” (red berry), the word for corn is “mndaamin”(amazing berry)… You likely see the pattern where the suffix “min” indicates a berry-esque situation. Wellll… the word for blueberry is simply “miin.” So, pretty much indicating the blueberry as the ultimate, ur-type, most essential manifestation of the entire berry form. Sounds about right 🙂

I was camping one time when I was younger, and it had just rained, and we came upon some blueberry bushes, and so we picked the wild blue berries that still had rain droplets on them – it was surreal. they were so delicious, and even more special because they were untouched and pristine! thanks Nichole for stopping by and sharing that fun fact!! 🙂 Hugs and love xox

  7. Oh yeah, I forgot about blueberry muffins. Sounds good.

    I don’t recall seeing banana ice cream at the grocery store, but there’s an ice cream shop in my city that has a few variations of it. The one that sounds most interesting to me is the banana pudding flavor. I suppose when I buy ice cream at the store, I could improvise something banana flavored by getting vanilla ice cream and making a milkshake with a banana in it.
