Carrot Cake Bites!

OK – I want to start out by saying how excited and grateful I am that y’all are enjoying my recipes! There was something in the water this past week, because I got so. many. emails. from wonderful readers who have made and loved my recipes! I love getting your success stories and photos! Alright – onto tonight’s recipe!

SO – I’m going to be honest. If you were to come over to my apartment in NYC right now, here are the things you would notice:

#1: I’m 99% of the time in some sort of athleisure wear. Typically from the day before. And typically doused with perfume, because I like to smell like a lady…even when it’s just me. 

#2: My face is slathered in some sort of nourishing face oil. This one is my ride or die. OR I will be in full hair and make up from an audition. It’s either all or nothing.

#3: The candles will be burning. Because I probably have something cooking in the oven, and I’m trying desperately to camouflage and neutralize my cooking aromas from the neighbors.

#4: My fridge will be stocked. Here are my staples: Broccoli, Cauliflower, Baby Carrots, Almond Butter, Cashews, Butternut Squash, Spinach, Grapes, Bananas, Frozen Berries, and Bubbies Sauerkraut. (Trust me people, if you want a healthy gut, eat Bubbies Sauerkraut. This isn’t sponsored, but it is a natural probiotic that helps grow your “friendly flora.” I eat 1/4 cup of this stuff every single day. It is my life saver!)

#5. Also in my fridge, you will find a glass Tupperware filled with tonight’s recipe: Carrot Cake Bites! 

These are the perfect snack to have on hand, and I always do. They’re super easy to make, incredibly delicious, and are wonderfully nutritious and healthy!

These little bites are absolutely magnificent! They taste like the hybrid of carrot cake and pumpkin bread batter. SO incredible. They’re chewy like dough, spicy, sweet, and have a wonderful texture from the ground nuts and carrots.

And they’re Gluten Free, Vegan, Specific Carb Diet friendly and Paleo!

Here’s What You Need: (Serves 4-5)

1/2 cup raw organic baby carrots
1/4 cup cashews (I used dry-roasted with sea salt, because I had them on hand, but raw works too)
1/4 cup almonds (Again, dry-roasted with sea salt, but raw works too)
5 dates, pitted
2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp clove

Tools:
Food processor (This is the one I use and love)
Good Chef’s Knife

Directions:
Place the 1/2 cup of baby carrots in the food processor, and process until they become little chunks.

Then, take them out of the food process, place them in a paper bowl (or clean kitchen towel) and wring out all the excess liquid. (This is a really important step!)

Put the carrots back into the food processor, and process with the rest of the ingredients until a ball of dough forms – about 35 seconds. (You’ll need to scrape the sides once or twice).

Take a 1 tsp measure, and roll 14 little cookie balls.

Set them on a parchment-paper-lined-plate, and place int he fridge for at least 15 minutes. Of course, you could eat them at room temperature too, but I preferred them chilled!

Holy cow, you guys, these were A HIT!!

I brought these over to my friend’s house for a movie night, and they were gone within about 3 1/2 minutes!

Next time I’ll have to make a double batch!

But they’re so “poppable” and delightful. It’s hard to believe they’re so healthy! Truly, talk about wholesome goodness!

You’re getting a nice hit of protein from the almonds and cashews, a terrific source of fiber and potassium from the dates, and then a healthy punch of beta carotene and Vitamin A from the carrots!

Who knew that carrots could be so dang tasty!?

But my favorite part is the texture. They’re so chewy. It reminds me of when I was little and I’d have the coveted job of “testing” the cookie dough!

And they’re so versatile. These little bites are the perfect snack to have on hand, they’re great for dessert, as a potluck dish, a snack for girls’ night or a picnic (great with wine!) or even as a yogurt topper for breakfast!

Don’t let the carrots scare you. I promise, you won’t even know they’re in there!

Try not to eat them all in one sitting! They’re addicting!

  2. Five things? First is family pictures all over the place. Second is antiques! Third is my cheap souvenirs, shot glasses from every place I have been. Fouth is you might sit on a Bible. Fifth is everyone goes barefoot. So you can put your feet in my couch and on my coffee table. Wondering if sweet taters would work or even adding finely minced raisins.

Literally every time I eat baby carrots (which I eat a bag a day because I’m vegan and love them haha) I get the hiccups after the first one for about five minutes! Haha too funny! These however did not trigger the hiccups! Oh my gosh this is amazing. I feel like I just met a long lost sibling! Hahaha Hugs and love xox

Glad you posted this recipe! I have no food processor but I may be able to find a variation of your recipe. ♡

  4. I wish I liked carrot cake. I would be all over these!

    The five things you would notice at my house:

    (1) Shoes by the front door
    (2) Lamps on
    (3) Cozy living room atmosphere – Sectional, thick fleece blankets, and our Young Living diffuser running
    (4) Our ridiculous pink carpeted stairs that we haven’t gotten around to removing yet.
    (5) The severe lack of photos, something that desperately needs to change.

    If you came to my house:

    1. Kids running around screaming.
    2. Hubby watching TV trying hard to ignore them.
    3. Me at the computer trying hard to ignore them. (We’re great parents!)
    4. Lots of veggies and fruit in the fridge and homemade soup.
    5. Lots of toys thrown all over the house (who’s going to pick those up?)

  7. Can’t wait to try these! Have all the ingredients except dates, they’re hard to find here in the Caribbean, may need to try to substitute raisins… My girls are going to love these!

    And 5 things you would see stepping inside our floating home (the only one we have at the moment) –
    1) flip flops outside the door
    2) bathing suits drying in the cockpit
    3) the girls’ most recent art / craft / sewing / Lego / drawing project spread all over
    4) Kindles
    5) camera on a counter ready to be grabbed for photos
