Black Cherry Vanilla Ice Cream!

Well I am officially back from the SEEK 2019 conference, presented by FOCUS, and my goodness, what an experience.

But I’m going to be honest, one of the first things I did when I got home, was literally run to my food processor, and make this nice cream.

You see, obviously, I love to cook. And given the therapeutic Specific Carb Diet that I follow (which has kept my Ulcerative Colitis in remission for 8 years and counting, medication free!) the truth is, living out of a hotel room is tough, because I need a kitchen. It can be done, but I love me some home cooked meals!

So whenever I get home from a trip, I am always super pumped to cook myself a beautiful meal.

So what did I cook when I first got home from SEEK?

Well…I made my new favorite Nice Cream recipe!

But nice cream — as a refresher, is ice cream made from frozen bananas! And its clever name comes from: Banana (or ‘Nana”) + Ice Cream = Nice Cream!

It’s a gluten free, vegan, Specific Carb Diet friendly AND Paleo treat that just so happens to be what I look forward to eating juuuust about every day!

Here’s What You Need: (Serves one very hungry person)

2 large, extra ripe bananas (read: with lots of brown spots) —  peeled, sliced, and frozen
1.5 cups of frozen, dark sweet cherries, pitted (I buy the private selection label from Kroger – they’re super sweet!
1 frozen strawberry
1/4 cup frozen blueberries
1/4 cup frozen pineapple
1/4 cup frozen mango
15 grapes (not frozen)
1 Tbsp agave or honey (or French Vanilla liquid stevia)

Tools:
Food processor (here’s the one I use and love) 
zip top bags

Directions:
Peel and slice two very ripe bananas into coins and place in a ziptop bag. Freeze until solid, at least 4 hours. Preferably overnight. (PRO TIP: I buy bananas in bulk, let them get extra ripe and covered in brown spots, and then slice & freeze a bunch of them in individual baggies. That way, they’re ready to go when I want to make smoothies or nice cream!)

Add the frozen fruit to the food processor, and blitz until they form little pebbles. (Warning — this makes a LOUD noise, and shakes the food processor, so be ready!)

99% of the time, the chopped up fruit pebbles will stick to the side of the food processor, and the blade will have nothing to chop up. It is at this magic point, that you add the grapes to the food processor, and let the food processor pulverize those to grape juice at the bottom.

Then, stop the food processor, and scrape down the sizes, and then keep processing until it comes together and forms a creamy, soft-serve consistency. You’ll need to repeat that step 2 or 3 times, to help the food processor out.

Lastly, drizzle in your sweetener of choice, and process for 30 seconds, to fully incorporate throughout. (Or simply eat as is, it’s certainly sweet enough!)

Dish up this beautiful black cherry vanilla nice cream, sprinkle with your topping of choice (such as granola, raisins, shaved coconut, chocolate chips, honey etc.) and DIG IN!

Friends, there are NO. WORDS. to describe the utterly outrageous flavor party that explodes in your mouth.

I mean, I make a mean bowl of nice cream, on the reg…but BLACK CHERRY?! This was next level delicious!

The consistency is just like the old fashioned creamy, whippy dip ice cream from a scoop shop! It is thick and perfectly creamy.

    My stomach screams: me too, for me too… yum, yum…

    I love your cooking recipes as they go along with my taste as well and I fully understand what it means to be in the kitchen and preapare food for ourselves and our loved ones. During my study to become a translator I was working in a restaurant and have learnt to cook hundreds of different meals. At that time I used to be still a meat eater but after it I became a vegetarian and now I can benefit from what I have learnt during this time to be a cook and am I able to cook all food in a vegetarian and vegan style.

    So thanks my dear friend – now I have to go and see what my fridge will offer me to extinguish the burning desire on my tongue… 🙂

  5. Slightly off topic… I’m starting a Paleo diet that’s autoimmune-focused… trying to avoid lectins and phytates – but I REALLY like peanut butter!! Have you discovered/created an SCD-/AIP-friendly peanut butter analogue that you can recommend? I would be most appreciative!

    • Hi friend! Hmm I am unfamiliar with AIP! But i know that I tend to stay away from peanut butter and will usually substitute raw almond butter. Or even cashew butter – that’s super delicious! I’m sorry, I hope that helps! Hugs and love xox

      • All good! It simply stands for “autoimmune protocol!” Yes, I was thinking of going with sunflower seed butter (I have a sensitivity to almonds) – but any seeds/nuts that can be dicey for AIP… I wonder if one could create cauliflower “butter!”
