Paleo Pumpkin Pie!

Well, here we are folks, the day before Thanksgiving.

I battled the airports today, and am now currently in Ohio with my family, basking in the joy of squealing nieces and delicious Thanksgiving smells coming from the kitchen.

The house is full, my heart is full, and come tomorrow, my tummy will be even fuller!

So I couldn’t not share this recipe, because I’m going to be honest here, I’m kind of known in my family for it.

My squash skills are second to none, what can I say 🙂 haha

And who are we kidding, dessert is the best part of Thanksgiving dinner anyways, amIright??

SO – allow me to introduce…

PALEO PUMPKIN PIE!

I’ve got a true show stopped here, folks.

It’s Gluten Free. It’s Dairy Free. It’s Specific Carb Diet friendly. And it’s fan-frickin-tastic.

Here’s What You Need: (Makes two pies)

Filling:
1/3 cup raw cashews
2 cups pumpkin or butternut squash puree (canned or from a whole pumpkin/squash)
2 tsp ground cinnamon
1/4 tsp ground cloves
1/8 tsp ground ginger
4 droppers-full of liquid stevia (SCD omit, and use an extra Tbsp of honey instead)
2 healthy pinches of salt
2 Tbsp honey
3 egg whites
12 oz coconut milk — I used light

Crust: (Makes 2 crusts)
16 dats
1 cup raw cashews
1 cup raw almonds
4 healthy pinches of salt

Tools:
Food Processor
Baking Sheet
Tin foil (preferably nonstick — it’s life changing, people!)
Good Chef’s Knife
Pie Pans

Directions:
Preheat oven to 400 degrees Fahrenheit. Cut your pumpkin or squash in half, length- wise, scoop our all the seeds and place cut-side-down on a tin-foil-lined baking sheet. Bake for about 45 minutes to an hour, until tender. Take our and let cool for about 7-10 minutes, until you are able to touch it. When you take it out, increase the oven temperature to 425. ((Optional: use canned pumpkin)).

While the squash is baking, make your crust. Pit and chop your dates into small pieces to help out the food processor. Then, add all the nuts and salt to the food processor and process until they have broken down into small bits. Then, add your dates and continue processing until it forms the consistency of chunky, wet, sand. You’ll need to scrape the sides once or twice.

Spray two, 9-inch pie pans with cooking spray, and divide the crust evenly between the two. Then, with your fingers, press the crust together along the bottom and up the sides. The dates will hold it together. Set aside.

Reassemble your food processor. You will now make the rest of the pie.

Place your filling cashews in the food processor and process until it forms a fine dust. Then, scoop out the flesh of the cooled squash and add it to the food processor. (Or add the canned squash.) Process until smooth, scraping the sides several times. Then, add your stevia, spices, honey, and egg whites. Process to combine. Then, in 2 batches, add your coconut milk and slowly pulse to combine, so as not to splatter. The batter should be a thick, creamy, liquid.

Divide the batter evenly between the two pie shells. Place in the 425 degree oven for 15 minutes. Then, reduce the heat to 350, and bake for 40-50 minutes. When you reduce the oven to 350, place a tinfoil “hat” around the edge of the pie so the delicate crust doesn’t burn. It is finished when a knife or toothpick inserted in the center comes out clean. Allow to cool for 2 hours before cutting into it.

Oh. My. Gosh. You guys, I don’t mean to brag, but this pie is a show stealer! I have made this for the last several Thanksgivings, and every time, my family polishes off my entire pie! While the store bought pies — practically untouched.

Everyone raves about this pie! Because here’s the thing: it is unbelievable that there’s no butter or cream in it, because it is so decadent and delicious!

The flavor is warm and spice, and the texture is so rich, luxurious and creamy. And the crust — wow — nutty, sweet, chewy, sticky! The perfect compliment to the luscious filling!

  1. I’ve made healthy pumpkin pie filling before without the crust. I didn’t have a crust recipe….until now! I acutely cheat and buy pumpkin spice mix. I was lucky to find it at the local supermarket here. Thanksgiving in Canada was in October and I was tired of the store-bought pumpkin pies. There’s SO much added sugar in them. Ugh.

  5. It looks delicious, and I have been eating gluten-free for over five years now to soothe my horrible asthma and allergies. However, I doubt if I will ever get motivated enough to put together all those ingredients. Meanwhile, it’s sunny and windy here in coastal Virginia. I have been outside watching all the beautiful leaves finally fall to the ground for the season. Happy Thanksgiving to you and your family in 2019!

  6. Hello! I have a question. I don’t mean it in a hateful way; I’m just genuinely curious. I’ve followed you for a while now, and I’ve noticed that you ONLY share gluten-free, dairy-free, low-sugar, low-fat, specific carb diet friendly recipes. My question is this: Why? Again, I’m not a hater. I sincerely hope that you don’t take this negatively. I just find it slightly disordered that you resort to such “clean,” “healthy” foods. Having suffered with an eating disorder myself, it isn’t good for me to stick to such a rigid set of foods. I understand that health is different for everyone, but I wondered why you seem to ONLY post diet-y foods. In my opinion, it would be quite refreshing to see a recipe for a greasy, full-fat, full-flavor cheeseburger. Anyway, this has become much longer than I meant it to be. I hope you have a good day, and HAPPY THANKSGIVING!

    • Hi Taylor, thank you for your question. I don’t take offense at all, because it is something that I have written extensively about. I was diagnosed with a severe case of Ulcerative Colitis when I was 16. It’s an autoimmune disease that effects the intestines, much like Crohns Disease. I was on bed rest for 11 months back in 2011, and my body rejected every medication. My options were either surgery, to basically remove my intestines, OR get on a chemo-like infusion medication for the rest of my life — Humira — that would in essence shut down my immune system. SO, faced with this difficult decision, I decided to try for one month, the Specific Carbohydrate Diet — which is a therapeutic diet for people with Chrons, Ulcerative Colitis, and autism, believe it or not. But I had resisted adopting this diet for all of those 11 months, because, as a fellow survivor of anorexia, I did not want to go on such a restrictive food plan, because I was loving my life in recovery, eating those greasy, full fat, full flavor cheeseburgers. But faced with that rock and hard place, and not to mention the fact that I was in constant excruciating pain with no hope, I gave the SCD as a last ditch effort. And you know what? In four weeks, it completely healed my ulcerative colitis. It has been a complete God-send. And by following it, I have been in remission, symptom free and MEDICATION FREE for over eight years now. It has been absolutely life changing. And so yes, I have had to make alterations to the way I eat, I am eating from a place of freedom — not only free from ED, but also from the freedom of health — where I am nourishing my body in a way that is healing to my intestines. And that gives me great joy. I hope that makes sense. Honestly, I was hesitant to begin sharing my recipes, because as someone in my 12th year of recovery from anorexia, I worried what people would “think” about this therapeutic diet — but these recipes have truly changed my life, and allowed me to live abundantly, even without the cheeseburgers. So — sorry this is so long — but I did need to thoroughly answer because it’s important. 🙂 I hope you have a great thanksgiving. Ultimately, God is in control, but it breaks my heart to see individuals struggling at the hands of an eating disorder. Praise God that you were able to find the help you needed! He is sovereign!

      • Yeah I totally feel you. That’s why I resisted adopting it for so long, and why I hesitated sharing it. But you’re right – He really is in control. And the crazy thing is that it was by adopting the SCD that really solidified my recovery to be honest. Before then, I still had some lingering ED habits that I hadn’t fully kicked, and this really made me learn to a) trust my body, b) truly East three full meals a day, c) kick my exercise addiction and d) really understand what it means to take care of my body’s needs and nourish it fully. It was honestly the best thing that ever happened to me, even with the 11 months of bed rest. God has a funny way of working sometimes. Amen-He is sovereign !! Love ya friend 😘

      • I might have to try the specific carb diet. I am already eating gluten free anyway. I do eat a lot of canned foods though. I guess I would just have to go to the grocery store more times per month.

      • Yeah it really has been an actual life saver. It all has to do with the molecular structure of the food. It is believed that people with Crohns and ulcerative colitis’s stomachs did not evolve to be able to break down complex carbohydrates. If you envision a spider web, with all the connectors- that is how a complex carb is built – and that is difficult to break down. Where as a simple carb is like a dumb bell, with only one connector, and is way to break down. So when the food is digested unbroken down, they’re like little asteroids that bang into the little finger-like villi that line the intestines and absorb the nutrients. So when these asteroids crash into the villi, they break and that’s why you get so sick because you can’t absorb any nutrients. But a when you eliminate the complex carbs, the villi can grow back and you can heal because you have the adequate nutrition to do so. So the specific carb diet eliminates all complex carbs. Yes it is difficult to adhere to, but it absolutely works. Sorry that was long.       • Thank you for the clear explanation. It is so hard to give up the foods we love, as the emotional attachment to them is incredibly intense. I really wanted to eat that old-fashioned green bean casserole (Virginia caviar) yesterday, but the fried onions have wheat. They add such great texture to the overall meal. However, I will try it for a full month. Do you have a recommended ‘specific carb diet’ grocery list? That would help with my bachelor shopping (ha ha.) By the way, do you have any tips for improving my gluten free turkey soup today? I just sort of throw everything in there with some different types of rice. It tastes okay, but I would really like to improve my cooking skills.

      • Thank you for all the great advice. By the way, have you tried plantain chips yet? I have been eating them as an alternative to potato chips. They are really tasty and some varieties don’t have sugar in them.

      • I have an interesting story you are welcome to use for your blog. One day I was shopping in the Tabb Walmart when I ran into a couple from the adjacent neighborhood. They noticed the food in my basket, and I explained how I have been eating gluten-free for several years now. They mentioned their son, who is about 40 and went to school with my younger brother, has celiac disease. Just then he walked over to us by the frozen foods, lifted up his white T-shirt, and showed me a huge scar from his recent surgery to remove a large portion of his colon. Needless to say, I had to silently chuckle at his boldness, and frankly could have lived without the visual image. To make a long story short, I asked him why he just didn’t give up gluten, as he looked pale and frail. He replied, “no way, I love my old foods too much.” That’s how incredibly powerful foods are to the human mind and psyche. He would rather have both the illness and the surgery than change his lifestyle. I opted for the lifestyle change, but I will bet his Thanksgiving dinner was tastier than mine.

      • oh wow what a story, thank you for sharing that. yeah people certainly can have a strong attachment for food. haha i have noticed that my taste buds and palate have actually changed since cutting out certain things! have you noticed this??

      • Definitely! I tend to get really strong food cravings these days, especially for eggs and smoked salmon. Go figure. I rinse my mouth with salt water, which seems to help the taste buds. My Grandpa Fogg used to start each day with lemon water, and he lived a long life. Of course, I miss all my old gluteny favorites. My theory is to try to eat as many different types of foods, especially fruits and vegetables, as possible. Many Americans tend to eat the same foods over and over. I just bought some teff, which is used to make that delicious Ethiopian bread. I first tried it in college and loved the taste. If I try that SCD diet, I am going to really miss bananas, plantains, and sugar. It may be worth it though.

      • That sounds like Great plan! Yeah – I eat two bananas a day! They just have to be covered in brown spots. Plantations though are a no go unfortunately.

      • Ah, because bananas without brown spots haven’t converted their carbohydrate stores to sugar yet. I just ate five spotted bananas the other day. My day was a Vietnam tough guy and ate his bananas almost green. He said they didn’t even bother his stomach. The main problem with the SCD diet is I need to eat at least 2,000 calories per day to maintain my weight. I am trying to figure out what I will eat to get those calories if I cut out my corn tortillas, rice, and plantain chips, which I eat almost every day. Oh, a delivery truck just went by the house. Maybe he brought my new Winter Mahonia for the yard I just bought from Walmart recently.

      • exactly!! i have found that it’s actually not a challenge to meet my calorie requirements (I was apprehensive about it too)– i just boost my healthy fat intake: olive oil, avocado, nuts, seeds, fish — it takes a bit more planning, but it’s really quite easy! oh interesting! i hope you got your winter mahonia delivery! 🙂 xoxoxox

      • That sort of sounds like a cross between the Mediterranean diet and the low-lectin diet, although nuts (and eggs) do contain lectins. I will have to create a list of foods to buy. In my younger, handsomer days (ha ha) I worked part-time at a gym, tutored algebra and SAT Prep, and ate 7-11 burritos at 2:00 a.m. after partying and dancing at the club or attending a Van Halen concert. Now I watch Wheel of Fortune and Jeopardy, head to bed about 9:00 in the evening and wake up at 4:30 the next morning. If I eat anything spicy, I regret it. My how times have changed!
