SO naturally, I’m going to create a recipe that brings the two together!

Allow me to introduce one of my new FAVORITE meals — Peanut Butter and Jelly Pancakes with Veggie Frittata Bites!

HOLY COW, you guys. I am all abuzz from this SUPER feast. Creamy Peanut Butter with Homemade Jelly — I mean, somebody pinch me!

I had it for dinner, but naturally, you can have it any time of day — breakfast, brunch, a midnight snack. It is ALWAYS Peanut Butter/Jelly time in my book!

It was so good. Lick the plate, bask in the deliciousness, fun to eat – good.

And the best part??? THEY’RE GLUTEN FREE!

Here’s What You Need: (Serves 3)

Pancakes:
1 1/3 cup GF Flour Mix (I like Bob’s Red Mill)
1/2 tsp baking soda
1/2 tsp sea salt
1 tsp baking powder
1/2 tsp Vanilla extract
2 Tbsp vegetable oil
1 Tbsp agave
3/4 cup warm water
2 egg beaten to stiff peaks

Peanut Butter Sauce:
1/4 cup peanut butter
4 drops agave
about 3 Tbsp water

Homemade Strawberry Sauce
8 strawberries, sliced
2 tsp organic sugar

Frittatas: (Serves 1)
2 egg whites
salt and pepper
3 button mushrooms, diced
2 green onions, sliced
2 asparagus stalks, sliced
big handful of spinach, chopped

Tools:
Large, Nonstick skillet
Nonstick muffin tin
Immersion Blender
Electric hand mixer or whisk
Good Chef’s Knife
Mixing bowl
Measuring cups

Directions:
First, the frittatas: Preheat oven to 350. Combine the egg whites and veggies in a bowl and stir to coat. Spray a muffin tin with olive oil. Spoon the mixture into 3 cups. Bake for about 25-30 minutes, until cooked through. Run a knife around the edge of help them out. YUM!

Next: the pancakes! Combine the dry ingredients in one bowl, and wet ingredients in another. Beat the egg whites with an electric hand mixer (or whisk) in another separate bowl until they form stiff peaks. . Mix the wet into the dry and stir, just to combine. Then, gently fold in the beaten egg whites. Ladle about 1/4 cup of the batter onto a hot, olive oil sprayed, non-stick frying pan or griddle. Flip after about 1 minute, when the edges begin to brown a bit and bubbles form on top. Keep them warm on a plate under tin foil.

For the peanut butter sauce: Combine ingredients in a pyrex measuring cup. Microwave for about 15-20 seconds. Stir. If it seems too thick, repeat, adding more water. It will be slightly thicker than “drizzly.”

For the strawberry sauce: macerate the strawberries by sprinkling the sugar over them. Mix to coat. Let them sit for about 30 minutes. then, with an immersion blender (aka stick blender), blend until you get a smooth and delicious strawberry sauce.

This meal was absolutely delightful! I mean, where to even start?! The pancakes were amazing – the frittatas were outstanding — I don’t know which to talk about first!

Savory first:

The veggie frittatas were awesome. Since they were only made with egg whites, they puffed up in the oven! The texture was just wonderful — they were so spongy and chewy, while the veggies were slightly crunchy. The mushrooms were chewy and deliciously earthy. And just perfect with the slight bite of the green onion!

They would be great to batch cook/meal prep for breakfasts on the go, too!!

And then the pancakes….

Magnificent, gluten free pancakes with an out of this world peanut butter and jelly flare!

Let’s first talk texture: Gluten free bakery is notoriously bad: chalky, dense, cakey, crumble, sandy. But these were outrageously fantastic! THey wer elight and fluffy!! Airy and chew! It was hard to beliee they were gluten free! The whipped egg whites gave these such a lightness. SO GOOD.

And then to top it off — the PB and J deliciousness! The combination of the rich and creamy peanut butter with the bright and sweet strawberry sauce was irrisistible. It brought back memories of childhood school lunches, with my daily PB & J sandwich! The salty-sweet with the light and fluffy pancake was perfection!

I also served it with pure maple syrup for a different option, but I really enjoyed the strawberry puree as my topping — it was a natural source of sugar. Plus — it was a shot of fruit and extra protein! It was just outrageous. Completely yummy.

No matter what time it is, PB & J is ALWAYS a good idea!

  2. Blueberry pancakes with pure maple syrup and melted butter are my all-time favorite but never had these and would probably go ape for seconds and thirds! Holy Cow; how about Holy Now, I want some! Of course with my maple syrup! Not an easy dilemma you got me into. I only have peanuts here that I give to the squirrels, so do I wait till I shop and buy peanut butter or make some, I think I have everything else ready to go. It would be nice if someone was handy to just take care of all the work and let me do all the eating! We’ll see where this goes, I’ll be dreaming of pancakes tonight!

      • Uh-Huh!!! You know this is torture though right! Almost time for me and the chickens, (actually the dove), to get to sleep and I don’t have all of the ingredients on hand for either dish but there is always tomorrow so tonight I just get to dream right? Hold on here, I could make that peanut butter you suggest, and then again I was already making some homemade hot chocolate and have the gourmet marshmallows to toss in and that can be a not even 10 minutes from now deal! Then in the morning I can go all out after having sweet dreams I can jump into gear and get it all to happen first thing.

      • Not hard to do with such great recipes; you think! I do have a sweet tooth just been part of me since a boy and won’t go away! So far so good, it hasn’t cost me in some nasty way, I think eating well balances me out so not to worry, I guess so far so good! All’s well that ends well.

      • Hi again Caralyn, seems I missed a couple here! I hope to try your amazing recipe tomorrow I had so many previously prepared meals in the fridge that I’m making sure I use them up while freshly cooked. I’m going to use a high quality organic peanut butter for the pancakes but I do want to make some soon too, and add those ingredients, you seem to have a winner there as per usu! Yesterday the blueberry version was great after having the hot chocolate with marshmallows the evening before I’m on a really good roll. Just polished off the rest of a homemade pizza with four cheeses, olives and multi-colored sautรฉed peppers! Now the pot of homemade chicken soup has to disappear or I’ll need to freeze it and I’d rather not do that; make it fresh every-time is my thing!

Good I’m not around you because if I was that blessed and would be eating all of these great dishes I think I would pack on the pounds like I never could it seems always being a medium weight; I would have to morph into something different right? I mean, because I would easily overdo it with so much yummy food in front of me constantly!

I do experiment and concoct different variations on standard breakfast menu items but I’m surprised I never thought of this combo! I definitely will alternate between this recipe and my classic blueberry ones, but this style is so delectable! I didn’t make the Peanut Butter this time but opted to buy a gourmet all organic jar of MaraNatha USDA Organic and Non GMO Peanut Butter out of Lake Success NY which is awesome stuff; I admit I did pig-out! Hey now and again not a biggy! A big hug out to you for this great healthy breakfast treat/meal! XO

I had not tried Maranatha actually before but your recipe got me going and I shopped for a top premade peanut butter; now I’m hooked which is easy with this stuff! I just had some on a gourmet chocolate bar broken up and then a couple of heaping tablespoons on Haagan Dazs Vanilla Swiss Almond Ice Cream!!! WOW! Thanks again for getting me on a new kick, such a yummy change! And I saw the Almond one but said hummm, that is an idea to keep in the back of my mind for an upcoming concoction!

  5. I’m in. I love peanut butter and syrup on waffles. This sounds even better and since I eat peanut butter on toast, every day, it will be a nice substitute from the ordinary.
