Hey friends! How’s everyone holding up? How’s quarantine life treating ya?

Things here in NYC are…well…a bit surreal.

One of the biggest adjustments that has upended life for most people, is working from home.

Holler if ya feel me.

All of a sudden, people have been forced to learn how to cook, how to share a communal space with their roommate 24/7 (or if you’re like me…figure out how to beat the feelings of isolation as a single, roommate-less human).

But safe to say, life is different, and we’ve all got a lot more time on our hands than we know what to do with.

SO.

My suggestion?

BRUSH UP ON YOUR COOKING SKILLS!

And I’m going to give you a great recipe to make for breakfast or brunch today…because frankly, if you’re not having a dope breakfast when you’re working from home, you’re doing it wrong.

Sweet, spicy, and just the right amount of healthy! And if you top them with my homemade pumpkin pie butter custard, they are simply irresistible!

Here’s What You Need: Serves 1 – makes 6 silver dollar pancakes

Pancakes
1 butternut squash — you will need 1 cup pureed (or pumpkin, or acorn squash, or if you really want, canned pumpkin)
1/2 cup almond flour
2 egg whites
1 tsp ground cinnamon
pinch nutmeg
pinch cloves
1/4 tsp salt
2 Tbsp honey or agave OR 12 drops of french vanilla stevia

Pumpkin Butter Custard
1 cup pureed butternut squash, or pumpkin, or acorn squash
1/4 cup cashews
1/4 tsp salt
2 Tbsp honey or agave OR 12 drops of french vanilla stevia
1/2 tsp ground cinnamon

Tools:
Food Processor
Baking sheet
Nonstick tinfoil
Good Chef’s Knife
Paring Knife
Spatula
Large Nonstick Frying Pan
Measuring cups

Directions:
(This can be done the night before, and refrigerated overnight!) Preheat oven to 400 degrees. Carefully cut squash in half, lengthwise. Scoop out the seeds (and discard or roast them for a snack!), and bake, cut-side-down, on a tinfoil-lined baking sheet. Bake for 1 hour, or until the flesh has cooked, and the skin is spotty brown.

Let cool, and then carefully peel the skin with a paring knife. (Either discard, or, I like to eat the skin as a snack! It’s super delicious!)

You now have your cooked pumpkin to use for this recipe!

For the Pumpkin Pancakes:
Add 1 cup of cooked pumpkin/squash to your food processor, along with the rest of the batter ingredients. Pulse until well incorporated, and smooth.

Spray a large, non-stick frying pan with olive oil. Heat the pan over medium-high heat until it is very hot. Then, scoop 1/4 cup batter onto the screaming hot pan. Let it cook on one side for about 2 minutes, until small bubbles form on the top. Then carefully flip, and cook for another minute on the other side.

Makes roughly six silver dollar pancakes. Serve, topped with pumpkin custard (see below), syrup (if not SCD), fresh fruit, warmed and drizzly peanut butter, granola, coconut yogurt, or even whipped cream!

For the pumpkin butter custard:
Place your cashews in the food processor, and blend until they form a fine powder. Then, add your pumpkin puree, spices and sweetener. Process until they are well incorporated and smooth. Refrigerate until ready to serve. (You can also freeze this for an hour to create a custard-like consistency!)

OH MY GOODNESS yall, these pancakes were absolutely knock-your-quarantine-socks-off divine! It was like eating pumpkin bread for breakfast, but in a delightful, decadent pancake form!

That kiss of cinnamon with the sweetness from the pumpkin and the honey…it was simply amazing.

And then topped with the pumpkin butter custard! SOMEONE CALL THE DOCTOR because I have fallen and can’t get up! I’m going to be honest…this Pumpkin Butter Custard is a staple in my house. And when I say staple, I mean I eat this at least 4 times a week for lunch. It is my absolute favorite food, it’s like I’m eating ice cream for lunch and I love it.

And let me tell you — dolloped on top of these pancakes…is sinfully good. And there’s something about the hot pancakes with the cold custard that is simply out of this world!

We just learned today we will be working from home for another three months to help curb city efforts to flatten the curve. I’m very thankful to be safe and healthy but trying to maintain positive. The self isolation has been hard!

  3. Looks and sounds absolutely delicious! I love pancakes. This morning I was making our new favorite buttermilk pancake recipe, from the Magnolia Table cookbook, and while my back was turned for 3 seconds, one of our cats jumped up on the counter and started lapping up the batter! So I had to toss it and start all over again. Of course, I had the time to do that, haha! Can’t wait to give this recipe a go! I bet I’ll love it.

  6. Pumpkin spice and everything nice! Did you know that you can buy pumpkin spice at the grocery store? I was delighted to find this stuff at a local grocery store in Canada.

The spice mix always contains ginger, and i personally don’t like ginger in my pumpkin pie flavor profile, i think it’s a little over powering. but it certianly is convenient! hope you’re staying well!   9. Mmmm those look do yummalicious you made my mouth water!!! How did they turn out? I wish I knew how to make pancakes. When I have tried they ended up cooked on 1 side not cooked on the other. So I kinda stopped trying! Lol but those look worth trying out the recipe maybe on a day I have a bit of confidence!!

    Oh, and as far as different… it is very different living with 2 just under 7 (my nephews turn 7 in May) year old boys who have been cooped up in the house for like 3 weeks and they have reached a level of crazy you did not think possible before now. It is…interesting and also a bit tiring. But I understand how they feel. Everyone needs some fresh air now and then and unless you count them eating dinner outside a couple of times in the past week, they are inside always. I kind of envy you having your apartment to yourself. Enjoy the peace and quiet and I see the quiet gives you time to think of amazing things!!!! Pumpkin pancakes are something I too would eat year-round if I did not make pancakes a special trear for myself so I enjoy them more!

      • Okay so how many minutes on each side of the pancake (like so how many minutes before you flip it over and then I guess same amount of time before the other side is done but how long on each side)? I may have to try it!!

      • I do about 2-2.5 minutes on the one side and then 1-1.5 minutes on the other!

    • You’re so welcome! Yes! You can cut the squash into small cubes and steam it! That’s how i used to make this all the time! I just stopped because it was easier to just cut it lengthwise than peel the dang thing. But you can definitely do it that way! Hope that helps! (You can also but the squash pre-cubed, either fresh or frozen!)
