Here’s the deal…we’re all trapped in our houses with nowhere to go. We’re burning through Netflix titles like it’s our job, and the novelty of playing boardgames and puzzles has run out.

So. Perhaps you’re like me, and cooking dinner has become the main event.

It’s something to look forward to. Something that’ll kill an hour of time. And frankly, something that is going to taste gosh darn delicious.

Y’all, allow me to introduce you to the most delicious thing you will ever eat in your life.

And I say that, knowing full well how strong of a statement that it.

SKYLINE CHILI DIP

This is, in a word, outrageous.

Backstory: Cincinnati Skyline Chili is legendary. It’s my hometown’s claim to fame. Skyline is a secret recipe chili (hint, there’s chocolate and cinnamon in it) that’s eaten over spaghetti or a coney hot dog, and mounded with finely shredded cheddar cheese.

It is its own food group in the midwest. We are bred on this delicacy. And it has come to be a way of life.

Well…Ohioans being the bright bunch of innovators that we are, took it to the next level with…SKYLINE DIP.

A party is not a party without it.

I’m telling you — tailgates, potlucks, holidays, BBQs, poker nights — this dip is always front and center. And it doesn’t last long! You always have to make two batches, because within literally 2 minutes of setting it out, it is gone. People inhale it.

Imagine: a casserole dish – thick layer of cream cheese. Topped with skyline chili. Topped with bubbly, melty, cheddar cheese. Served with Fritos or tortilla chips.

I mean, I am salivating just thinking about it.

Well — needless to say, it’s comfort food. And it’s absolutely something I’d like to be quarantined with right about now.

(Although, sadly, it’s not Specific Carb Diet friendly).

But I’m making this today to share with you guys, and I was PLANNING to bring it over to my best friend’s house down the street, but I DROPPED IT!!!! ((You can see that tragedy play out on my video)).

Anywho, without further ado: allow me to present: SKYLINE CHILI DIP!

Here’s What You Need: (Makes one family sized dip)

1 can Cincinnati Skyline Chili
1 8oz package of finely shredded sharp cheddar cheese (or 2 cups grated)
1 8oz block of cream cheese (do not use low fat)

Fritos (Get the “Scoops” variety if possible)
Tortilla chips (optional)

Tools:
Silicone spatula
Can opener
Pyrex pie pan or casserole dish

Directions:
Preheat oven to 350.

In a pie pan or casserole dish, spread an even layer of cream cheese along the bottom.

Then, (shake the Skyline can) and pour one can of Skyline chili evenly over the layer of cream cheese.

Then, cover the skyline layer with shredded cheddar cheese. Do not skimp. GO WILD.

Bake for 20-25 minutes until the cheese is bubbly and melted.

Let cool for a few minutes before serving with Fritos or tortilla chips.

OK – this dish is downright sinful. Something magical happens in the oven, I’m telling you.

You’ve got the tangy cream cheese, paired with the spicy and completely unique flavor that is Skyline Chili, and then the sharp, rich note of the cheddar cheese, all mounded on top of a salty-sweet corn chip….LIFE DOES NOT GET BETTER THAN THIS.

Look, it’s not a glamorous looking dish. It’s unassuming. Frankly, if I didn’t know what it was, and I saw this dish at a party, I’d probably take a pass. BUT — don’t let its humble appearance fool you, it is ADDICTING and will knock your socks off.

I’m serious. Making this dish for someone during quarantine times is a gosh darn humanitarian relief effort. It’s a game changer. A turn-your-day-around, hug-on-a-plate, show stopper.

    I need it! You just gave me a craving on Easter, as I just caught up with you here, I don’t think I could ever catch up with you really!
    Rejoice Our Lord has Risen even though our world is in a Most Unprecedented modality full of corruption like never before we should smile that He loves us beyond measure and we can be victorious over all of this madness and sin! I probably would have noted all this before now but during the week up till Good Friday the furnace in my home went kaput and I basically had to refurbish and tune up the whole system to troubleshoot the cause, while I was feeling mot so good but on Good Friday it all came together and she fired up again so I had heat and hot water again!

      • Hey there my one and only Caralyn that I know, even if in this tiny way, don’t know another, so I’m lucky to have ya! Happy Easter Dear! Let me tell you, you’re the go to Lady for any sweet eating delights, you have those bases all covered for real! After I got hooked on eating the Peanut Butter and Jelly Flap Jacks I’ve been going through jars of MaraNatha like crazy, actually an almost weekly staple item on my grocery list. Hey, I don’t think I can die from eating lots of peanuts?! But, so far so good, and this kid “took a lickin and kept on tickin” so I think I’m ahead anyhow! I know it’s tough being holed-up but you must be getting so caught up on reading and making nice things, those hobbies and good things most of us hardly get around to usually; and of course lots of loving prayer always. Stay healthy and please don’t take any chances like I did this week when I told my sister I don’t want anyone taking a risk for me when I was so out of everything while not up to par here, but got suited up and went to the market and spent an hour and a half loading up on at least the things they still had!!! Actually I got all the things I usually find even another jar of the peanut butter, just the paper goods isle was totally empty along with the frozen veggies! Good Lord please don’t allow things to get any worse I pray, it’s so strange and sad already. OK, I said too much already and so I bid you adieu for now! Hugs and Love! XOX 🤗❤️ 🙏 🙏 😇 😇 🙏 🙏

      • Caralyn! That is so kind; of course you are much sweeter than I could ever dream of being, but I’ll take the compliment happily and hold it dearly! It has been a very peaceful day although just like you I’m sure, we both know this is an Easter like no other for good reason, which I’ve decided is all in our Lord’s loving hands as well it should be; we are truly at His mercy and must make our faith our first and foremost priority in life or its not working, as we see happening to so many who are lost in the world presently. It’s no doubt a very conflicting world and I hate to say it but it’s not getting better fast enough, but we should just put all of our hope and faith in Him to see us through it all. It’s a tough climb up to the promised kingdom of God, but this day “Easter Sunday” was the real turning point when the promise of Salvation was manifested in His body and blood! He turned our impossibility into a certainty, and all we must do in return is love and serve Him with our hearts! It’s so beautiful isn’t it! This little old life we each get here won’t be a meaningless flickering flame that goes out in the twinkling of an eye in universe standards, but will become a gloried life in our Heavenly Father’s eternal presence, where total absolute love will be emanating from Him filling us eternally so that we will be happier and more fulfilled than any mind on earth can fathom! This is just a taste or a peak of the joy and love that will be; He made that clear to us on Easter Day on the cross. I hope your day has been peaceful and secure through your strong faith!       • Hello Caralyn my interspace friend! I read your very heartfelt article and see you are truly in tune with all that is happening and most of all your faith in our Lord Jesus runs as deep as ever, but now perhaps this faith is expanding exponentially like some of us with ours feeling just as you do, how it’s proving itself in a way we never thought it would or could do! You know the cliché “putting feet to the fire” and being tested. You’ve gotten to know me and it’s hard online to really know who or what you’re dealing with and that’s one reason I was never interested in Facebook and whatnot. I may be too harsh about these things but I think I have a pretty good handle on the fact that there is too much disingenuous rigmarole and empty heartened lip service going on out in the cyberspace world, and it can be downright dangerous too and in the least a lot of going nowhere poppycock. That said, I slap myself and say hold on I like what I’m hearing from Caralyn here and some other folks I’ve gotten a little familiar with and I do see that the fantastic opportunity to communicate ideas is unprecedented in all recorded history we can actually share honest to goodness beliefs and feelings with others anywhere on the planet instantaneously and that is amazing by itself! A lot of love can go along with that, and it is significant, even if not in person it is a view into humanity for those that don’t abuse it and will see it for what it is! So, I guess I’m saying it’s all a double edged sword and we must take care but also use the tools of our time to be not just hip or with it but in our Christian faith especially, stay close to the pulse of what our fellow mankind heirs to God’s kingdom are doing as this world moves ever so quickly toward a dramatic destination as we can plainly see that it is on the way! It’s never been this amazing and messed up at the same time! Now that was an oxymoron if I ever said one! I love how you see Jesus as always the core to all you do in this life, that is a strong deep commitment to Him and He is your Savior as you are full aware; that is beautiful and inspiring to me. I must be off about something’s as I’m not anyone that has much more to go on than any other Joe Smoe, but, I think my best quality is I’ve always had a sensitive heart and it got me in trouble and even screwed over, like many other human beings have done through the ages and still do. But also, I like you survived something that woke me up and also beat me up, in my case badly; even so I gained something important from all of that tough stuff and sadness, that will do some good somewhere at some point, if I hold on to faith and determination to see it through to the end, no if’s and’s or but’s about it; even to the last breath now I will offer what I have for my Lord Jesus where and when He wants me to! I’m available to Him, and as actors know that is a good place to be if you want to be real and visceral in a performance, so that the inner voice and real “genuine” person comes through! The method; and also a means to and end! I can’t begin to explain all of the mountain of things in me and what is happening to my soul in a text message, but I’m sure doing one thing totally, and that is I’m reaching out and being honest, humble, even scared, upset, hurt, lonely; but angry too, I want to see JUSTICE, the dirty wicked lies and sins have gone on too damn long and I’m sick of it! But, that is just me venting too, I’m good; I can say I want to only do what Jesus will want me to do, nothing else if I can help it or myself. I believe we have some very similar feelings and pains, but the biggest thing we have in common is our faith in Jesus and the trust that grows in Him! Don’t be lonely, He is with you as you stated, and rest assured others like me care; there are a few other good souls floating around wouldn’t you say so too!

      • This just came up, as I wrote a comment to another Blog Post about germ avoidance now becoming a stark reality and how people are finding that AI cyberspace lifestyle may be actually forced upon us by real genuine self-preservation factors at play right now!
        This was interesting and funny, but imagine if this is where the human race is heading; having to live a cloistered segregated existence each of us in our own protective bubble or exile from the rest of humanity, while AI takes over the planet; so very sad too! Are we all going to become aliens to one another being restricted from actually physical interaction as microbes prevail as the real monsters and demons that haunt us at every turn with the scepter of death hanging over our heads like some invisible “Sword of Damocles” waiting for the opportunity to strike a blow to our existence as we become obsolete? I love old classic movies or those made before the out of control formula hyped up CGI movie-making took over the Industry and whereas in the past a damn good story with top rate Movie Stars with so much Screen Appeal that the camera loved before the audience even got the chance to see the completed work projected on a theater screen! “Cool Hand Like” is one of those films that drove a good message and did it with great actors and took those fine performances interwoven through a well written dialog, building characters that were both unforgettable and very entertaining as well as meaningful! I once met Paul Newman and I have to say I was star struck talking to him, it was like I was talking to a giant of the Screen who walked out of the movie projection and became this real down to earth considerate man with a bit of fatherly awe in my eyes like how I looked up to my own actual father! Does anyone even make movies like that anymore and where are the stars that can compare to those from the Classics Past? Like my dad world say to me when I would talk to him about Old Days, he would say, “that was another era those people came from a very different time; which after they were made the mold was broken.” 🙂

      • Yes but it may have seemed like worlds colliding when I said, “my dad world;” oops. Of course he would! Just so there’s no confusion, its “God’s world of course,” even though when I was a little kid it seemed like my dad’s to me!!! He had a way with keeping me in-line, just the voice and convincing tone; maybe you know that tone too? Something about my dad’s deep voice which just sounded so sure about what he would say to me as a kid!

      • Yes Caralyn, this whole AI and cyber high-tech world is wrapped around almost everything in our lives now; and so metaphorically we know what serpentine creatures do when they wrap around victims, and this thing is growing exponentially all the time with no real boundaries as to what it will ultimately become, which is a very scary thought about where can that actually end up; to me not a good place after all, as we already see in history of the human race’s advancing into new horizons fueled with determination to outdo and monopolize geopolitical sectors and the military industrial complex need to dominate! It’s not about a charity drive to move mountains in order to truly help others now is it! But, on a happier note I actually think things are going to bounce back sooner rather than later from where we are now to give all we Americans anyway and hopefully a majority of the worlds populations the opportunity to see the light a lot more and get serious about doing the right thing in our lives, at least so we can really help others to get a leg up before the real big changes come, and they will because like I said this AI has a mind of its own that is advancing ahead of human capabilities and that makes it an out of control force to reckon with at some point!

      • Caralyn, just for curiosity sake and on a fun note here; but also a sort of reality check, here is the movie trailer for that blast from the past I mentioned from the actual larger originating article by Lew Rockwell which got me on that train of thought about the older Classic Movies I like checking out actually more than the CGI stuff; of a different time and era so different than now by light years in a sense, but in historical terms and lifetimes not that long ago really, even that’s a scary thought because it demonstrates just how radically things have changed and advanced in a short time frame relatively speaking! You know how our grand’s and old timers tell us how it was in the good old days!

      • Oh thanks you kind Lady, I actually used to be funnier but I took a wrong turn down the bumpy road and got a few too many lumps along with a swift kick in the teeth all of which does tend to put a damper on one’s comedic side; but ya know the tough just have to get goin and all that so that kooky side is still there trying to climb up on top of the wreckage into the daylight! 😉 👍
