I mean, wow, can you believe it?!

I thought I’d kick off this month with one of my FAVORITE breakfasts I’ve been enjoying recently.

I don’t know about you, but I follow quite a few “food accounts” on Instagram. And every self-proclaimed “foodie” knows how to make an instagram-worthy smoothie bowl. It’s got a drizzle, some funky toppings, it’s a beautiful gem color, and typically served in a coconut or some outlandish bowl.

Well — I have neither a coconut tree at my disposal, or even a bowl without a couple chips on the rim — but I still wanted to make a smoothie bowl that was as pretty as it was delicious!

And folks, I think mission accomplished! And it’s so good, I’ve been eating it nonstop all week!

It’s my VERY BERRY CHERRY SMOOTHIE BOWL!

You could freeze all the ingredients and have it be like my famous “nice cream” dishes. But for this, I only used some frozen ingredients so it was a more traditional smoothie consistency. I really like that contrast with the crunchy granola.

And it’s grain and gluten free, paleo, vegan, and Specific Carbohydrate Diet friendly!

Here’s What You Need: (Serves 1)

2 Very Ripe (with lots of brown spots) Bananas (Use 1.5 in the smoothie, and reserve the other 1/2 for the topping)
1 cup mixed berries (strawberries, blueberries, raspberries) (I don’t use blackberries because I don’t like the seeds in a smoothie)
1 cup frozen cherries (Trader Joes has a great brand)
1-2 Tbsp Almond Milk as needed
*Optional* 2 tsp honey or agave

Toppings:
Grain Free Granola
1/2 banana cut into coins
handful fresh raspberries
raw cashews
sunflower or pumpkin seeds
nut butter of choice (I used almond)

Tools:
Food processor OR blender
Good Chef’s Knife (this is the one I use and love)

Directions:
This could not be more simple. Put all the ingredients into your food processor or blender (reserving half of one banana for the toppings). Blend until completely smooth.

Pour smoothie into a bowl, and top with your desired toppings, and drizzle with your nut butter.

*Artistic tip:* it’s aesthetically pleasing to have different textures and shapes in your array of toppings. Also, be sure to leave 1/3 – 1/2 of your smoothie bowl surface “open” so you can see the beautiful purple color of the smoothie itself. It’s a nice juxtaposition to the jumble of toppings!

THIS WAS SO DELICIOUS!

I am a firm believer that you eat with your eyes first. So I personally believe that when we have a beautiful dish in front of us, it just tastes better. Whether it actually does or it’s just our eyes influencing our taste buds, the world may never know, but it just tastes special.

The combination of the super sweet cherries with the creamy banana and the tart and sweet berries gave it such a satisfying flavor. Combined with the grain free, crunchy granola and buttery cashews — it was just marvelous.

But the almond butter drizzle took it over the top!!! Oh my gosh, I am obsessed.

It’s not wonder why I’ve eaten this 4 times already this week!

  1. Hey, what happened to the “fabulous Fiesta Shrimp and Avocado Salad” from last week? 🤣🤣🤣 Next week maybe? 😉 Excellent as always. And I believe you’re right, taste and enjoyment begin with the eyes, and that’s a beautiful dish. Can’t wait to try it out.       • I could probably handle another granola, but your idea of using grain-free caught my attention. I don’t have UC or Crohn’s, but I do have some allergy reaction to just about all foods other than chicken. 🙄 So I’ve wondered if getting rid of grains might be a good idea. BTW – I’ve told some folks about your success with the SCD and suggested they check it out as well as your cookbook for alternative recipes. Thanks for another great food idea! 🙂

  2. For a while, I was making smoothie bowls but they weren’t nearly as exciting as your smoothie bowl. I agree that the garnishes makes the dish even more visually-appealing than it already is. Cherries are delicious! My fave are frozen cherries but they are expensive so I hardly buy them. 🍒🍒

  5. While I do not have any dietary restrictions—and don’t always agree with them—I really enjoy how you make efforts to present foods that pretty much—if not all—anyone could eat.
