And I know, I know. I feel like I say that a lot. But every time, I mean it! I just love cooking yummy food for myself and my loved ones. And I’m convinced that when you enjoy the process, it makes the food taste better! You can taste the love! Afterall, they always say that love is the secret ingredient, am I right?

Anywho – this meal was extra special. I made it for my parents and I on my last night in Ohio. It was a bit of a “thank you” meal, because, my goodness was it ever delicious!

CURRY POACHED SEA BASS!

Here’s the backstory. I heard my dad mention in passing that he enjoyed interesting, spicy flavors of Asian and Indian cuisines.

SO, my little culinary wheels started turning, and I decided right then and there that I was going to create a fabulous recipe for a luxurious coconut curry sauce to poach some succulent sea bass fillets in.

And HOLY COW, it did not disappoint!

The sauce was remarkable, truly. So aromatic, and rich and creamy from the coconut milk. And the best part, was that the fish cooked in that sauce, so it took on all those tantalizing flavors and was super moist and truly melted in your mouth.

I served it over rice for my parents, along with na’an bread — WHICH IS AMAZING. If you’ve never had Indian Na’an bread, drop what you’re doing and GO GET SOME! They sell it at most grocery stores, and it’s not gluten free, sadly. But it unlike anything. It’s incredibly chewy — almost stretchy! — and has a bit of a smoky flavor. And it’s the perfect vessel to sop up all of fabulous sauce.

I served mine over a bed of greens, which was lovely — but next time I will definitely serve it over cauliflower rice for myself. But you could also serve it over quinoa if you’d prefer, too!

But this meal, (sans rice and na’an) is 100% Specific Carb Diet friendly!!! 🙂 Plus, it is grain and gluten free, paleo, and keto friendly!

And did I mention, it was fabulous decadent and bursting with flavor!?!

Here’s what you need: (Serves 3)

1.5 lbs sea bass, cut into three fillets, skin removed (1/2 lb per person)

1 cup white rice, cooked per package directions
(Or mixed greens, or quinoa, or couscous, or millet, or even pasta)

Na’an bread (heated for 20 seconds in the microwave before serving)

1 onion, diced
3 cloves garlic, minced
1 medium carrot, diced
1 red pepper, diced
1/2 head cauliflower, diced
1/2 cup green beans, trimmed and chopped into 1/2 inch pieces
2-3 large tomatoes, diced – roughly 3 cups with juices
5 prunes, chopped (or 1/4 cup raisins)
1/2 can coconut milk (I used light)
2 tsp curry powder
1 tsp cumin
salt and pepper
1/4 cup olive oil

Garnish:
Fresh cilantro
Chopped cashews
Sliced green onions

Tools:
Large, nonstick high sided saute pan with lid
Good chef’s knife
Sauce pan with lid
Measuring cup

Directions:
Start by making your rice according to package directions.

While that’s cooking, saute your onions and garlic in a large, high sided saute pan over medium-high heat in 1/4 cup olive oil, salt and pepper. Let that cook for about three minutes, until it becomes translucent. Then, add the rest of your carrot, red pepper, cauliflower, and green beans, along with your spices, and let those cook for about 6-7 minutes, until the cauliflower becomes tender.

Finally, add your tomatoes. Let those stew until they begin to break down – about 3-4 minutes. Then, stir in your coconut milk, olives and raisins (or prunes).

Once your sauce begins to boil, carefully place your sea bass fillets evenly in the pan, so they are not overlapping. Use a utensil to make sure they are submerged in the liquid, and then cover the pan with the lid. Let cook – boiling – for about 15-20 minutes, until the fish is cooked through.

To plate, place a bed of rice on the plate. Then, spoon a heaping portion of the veggies atop the rice, and then place the sea bass fillet on top of the veggies. Then, liberally ladle the sauce over everything. Garnish with fresh cilantro, chopped cashews, and green onions.

Serve with hot na’an bread.

OH MY GOSH. I cannot begin to express how flavorful this dish was!!!

I mean, I literally licked my plate. We’re talking, I lapped up that sauce like a dog! It was so delicious, I could bathe in it!

But for real, everything about this dish was exquisite. From the presentation, to the textures, to the flavors — it was a 10/10.

I have never cooked fish this way (ie, poaching it in a liquid — and especially not a coconut milk-based liquid). And when I say, I have found my new favorite fish preparation, I mean it! It made it SO moist, but the best part was that it took on all those delicious flavors! All of the spices and aromatics, and creaminess from the coconut milk! I mean, my goodness, it melted in my mouth, truly!

And speaking of flavors — the best part, which is going to sound weird — were the prunes! They were these tiny, sticky little bites of intense sweetness, that paired so beautifully with the spicy tomato curry sauce! And then that crunch from the cashews — that was another highlight that made the dish particularly delicious! Oh! And the olives!! That fatty, salty bite was ALSO a high note!

But the warm, earthy spiciness from the curry powder, combined with the butteriness from the sea bass – it was out of this world.

Sea bass, truly is the superior fish. It is worth every penny, I kid you not. Yes, you could make this dish with cod, or with halibut, or even Sole, and it’d be wonderful. But sea bass — makes it outrageous. It might just be my favorite food.

  2. I couldn’t stop myself from commenting. It looks delicious ,however I can’t imagine eating that “rice”.
    You’re into Indian cuisine,please buy “biryani rice” only from Indian store as the one which you are using doesn’t taste good at all and it’s of low quality. I am in no way trying to judge or anything,it’s from my personal experience that rice sold in popular chains outside is of very low quality.
