Hello friend and happy Wednesday!
Boy, do I have a treat for you today!
Lunch just very well may be my favorite meal of the day. Ok, maybe just THIS lunch – I am obsessed!
I kid you not, I think I eat this about five times a week. It is addicting!! And so healthy, bursting with flavor, packed with protein and just darn beautiful!
Plus, it’s gluten Free, grain free, paleo and Keto, AND Specific Carb Diet friendly! Woo hoo!
Plus, you can whip it together in less than 15 minutes! Sounds like a win to me!
Here’s What You Need! (Serves one!)
1 cup romaine lettuce
1 cup baby spinach
1/2 avocado, diced
1/2 red pepper, diced
2 medium carrots, chopped
6 grape tomatoes, halved
1 serving frozen shrimp, thawed
1 tsp Old Bay seasoning
salt and pepper
1 Tbsp EVOO
3 Tbsp EVOO
1 Tbsp champagne vinegar (or white wine vinegar)
salt and pepper
Nonstick Frying Pan
Large mixing bowl
Small pyrex mixing bowl for dressing
Directions: start out by thawing your shrimp by soaking them in warm tap water for about five minutes. I change the water every couple minutes to make the process go faster.
Meanwhile, chop your veggies and make your dressing.
Finally, hear about one Tablespoon of EVOO in a screaming hot Pan. Add your shrimp in a single layer. Sprinkle on salt, pepper, and a healthy amount of Old Bay seasoning!
After about 2 minutes, flip your shrimp and let cook for another 2 minutes until they are completely opaque and have curled in on themselves.
Take them off the heat, cut into bite sized pieces.
While they cook, toss your veggies and lettuce in the dressing. Finally, add the shrimp, and toss with the dressing.
This salad is everything off the sort!
Trust me, this is no boring, wimpy cafe Salad! This bad boy packs a punch!
Just look at those fabulous ingredients! They really shine!
And the dressing is the perfect bright compliment to the Smokey and spicy shrimp!
But the avocado, let’s be honest, is the best part! It’s creamy and rich and cooling with the heat from the Cajun Shrimp!
This lunch is an 11/10! But you’ve been warned! You just might end up making it just about every day for lunch like I do!
