Paleo Thai Chicken Curry Soup!

This spicy and healthy soup packs one heck of a flavor punch! With spicy curry, fresh cilantro and bright lime juice! Definitely give this a try! It’s perfect for lunch, a light dinner, and BONUS: it is great to freeze and save for a future quick, delicious and healthy meal!

Two weeks ago, my special gentleman came down with a bad head cold, and so I brought over a big vat of this soup, and I’d like to think it contributed to his speedy recovery! 🙂

AND the best part is that it’s gluten free, keto, paleo and Specific Carb Diet friendly!

Here’s What You Need: Serves 4-6

1 rotisserie chicken, chunked
1/2 large red onion, diced
1 large carrot, julliened
1 red bell pepper, diced
1 Tbsp ginger, grated or minced
5 cloves garlic, minced
2 Tbsp fish sauce (SCD omit)
2 Tbsp coconut aminos (You can also use soy sauce or tamari)
4 Tbsp red curry paste
2 makrut lime leaves
1 tsp sea salt
1 – 15oz can of full-fat coconut milk
4 cups chicken broth
1/4 cup fresh squeezed lime juice

Garnish:
green onion, sliced
fresh cilantro, sliced

Serve With Ideas:
Spiralized zucchini
Spiralized butternut squash
Cauliflower rice

Tools:
Good chef’s Knife
Large Stock Pot
Measuring cups/spoons

Directions:
In a large stock pot, heat 1/2 Tbsp of olive oil over medium- high heat. Add the ginger, garlic, red bell pepper and lime leaves to the pot with salt and pepper. Cook for about 4 minutes, until the veggies begin to become tender.

Then, add your red curry paste and rotisserie chicken chunks. Stir until well combined.

Add your broth, coconut milk, lime juice, fish sauce and coconut aminos (or soy sauce) to the pot. Let it come to a boil, then reduce to a simmer. Let the soup simmer for 20-30 minutes. Adjust seasoning to taste with more salt or fish sauce.

Serve over butternut squash or zucchini noodles or cauliflower rice. Garnish with green onions, cilantro and a squeeze of fresh lime juice!

OH MY GOSH this soup was so delicious! There’s something about the combination of the ginger and the lime and cilantro, plus the heat of the curry and the creaminess of the coconut milk that really makes this soup sing!

Plus, using rotisserie chicken make it SO incredibly easy and FAST! I was able to whip this up in under 30 minutes!

And as a bonus, you can add some shrimp on top to really make it a hearty meal!

    Otherwise, where in NYC is your eatery!!!

  2. You could do theme cooking. 😋 Just have one meal per night (or day, or whenever!!!). Looks delicious!!!

  3. Looks spicy.. Do you like Spicy food. If so, then you should try some Sri Lankan stuff. Being a national of Sri Lanka, I can say that it is the spiciest that I’ve had.
    We have a chilli paste called “lunumiris”; which my brother and I call “lunar-miris”. The reason being it would send you to the moon. LOL.
