How is everyone doing? I’m still up north with my family, enjoying the lakes, the sunshine, and best of all…time with my loved ones!

Tonight’s recipe is definitely one to keep on your “short list” of delicious side dishes!
My Sriracha Honey Glazed Carrots are absolutely bursting with flavor!

Slow roasted carrots in a sweet and spicy sauce!
I discovered this recipe when I was on a business trip, speaking at a women’s conference, and the restaurant was known for the Sriracha Honey Brussels Sprouts appetizer! So I decided to recreate the delicious sauce they were in, but this time, pair them with my favorite veggie: carrots!

They’re great on their own, they’re great as a solid side…or they’re great served with roasted acorn squash and pulled pork, like I made!

And they’re gluten free!
Here’s What You Need: (Serves 2)
4-5 large carrots, cut into lengthwise-quarters (aka thick matchsticks)
3 Tbsp EVOO
1/8 tsp red pepper flakes
Salt and pepper
Dressing: (You can double or triple this recipe if you want to have extra to keep on hand for future roasted veggies.)
1 Tbsp Sriracha
3 Tbsp Honey
Juice of 1/2 lime
Tools:
Good chef’s knife
Nonstick tinfoil
Baking sheet
Directions:
Preheat oven to 400 degrees.
Spread out your carrot sticks onto a tinfoil-lined baking sheet. Drizzle with 3 Tbsp EVOO, and sprinkle with salt, pepper, and red pepper flakes.
Bake for 35-40 minutes, stirring once halfway through.
While they are baking, combine your dressing ingredients.
When the carrots have finished baking, immediately toss them in a bowl with your dressing.
Serve immediately.

Oh my gosh, these were so delicious. Now, I know the photos leave a bit to be desired, but it’s because it was late when we were eating, and artificial light just doesn’t photograph as well.

But I promise, what these photos lack for in clarity, the carrots make up for in flavor!
First of all, roasted carrots by themselves are exceptional. The natural sugars in them caramelize, and they become so sweet and tender. Pair that subtle sweetness then, with the heat from the sriracha, and the honey…then add a slight kick of tang from the lime…it is a flavor explosion!

Let’s just say, Doritos WISH that they could develop a flavor this tasty and multidimensional!
And this sauce is not just for carrots — it’s also great with roasted brussels sprouts, broccoli and cauliflower too!
I served these carrots with BBQ pulled pork (and Cajun shrimp for me) and slow roasted acorn squash. And the flavor combo was divine…because every meal element had a subtle sweetness to it! The acorn squash, the sweet and hot BBQ sauce, the sweet and spicy carrots. It really was the perfect meal!

So give these carrots a try…I promise, you’ll love them as much as we do!

I like this because it’s something I’d do. I like to use honey on different things. I did it with broccoli. Even used it as a sauce for pork chops or my honey cinnamon cutlets. Very good Caralyn.
