We have officially entered the Lenten season, which means, for Catholics, Fridays are meat free, and today – Ash Wednesday – is a day of fasting.

Tonight, I’m sharing a beautiful Lenten supper that the whole family will enjoy.

Roasted Brussels sprouts, caramel ones beats, crunchy pistachios and roasted grapes come together in a hearty quinoa pilaf. The perfect compliment to broiled halibut!

Here’s What You Need: (serves 2)

1 lb halibut
lemon
fresh thyme,

1 cup dry quinoa, cooked per package directions in vegetable stock
12 Brussels sprouts, halved
1 beet, cut into 1/2 inch rounds
36 grapes, roasted
1/3 cup roasted and shelled pistachios

Tools:

Sauce pan with tight fitting lid
Baking sheets (2)
Nonstick tin foil
Measuring cups
Good Chef’s Knife

Directions:

Preheat oven to 400 degrees. Cook your quinoa per package directions using vegetable stock instead of water.

Line a baking sheet with nonstick tinfoil. Place your beet rounds, Brussels sprouts halves and roasted grapes in a single layer and toss with olive oil, salt and pepper. Bake for 15 minutes. Remove from the oven, and flip. Return to the oven for another 15 minutes. Then, take out and remove the grapes and Brussels sprouts. Put them on a plate and set aside. Return the tray with the beets still on it to the oven for another 15 minutes, until they are tender.

Finally, place your halibut on a baking tray. Drizzle with olive oil and sprinkle with salt and pepper. Lastly, top with fresh thyme and a lemon round. Squeeze the juice of half a lemon over top, and bake for 12 minutes, until the internal temperature reaches 145 degrees F.

Prior to serving, combine the quinoa with the pistachios, Brussels sprouts, beets (cut the rounds into matchsticks), and roasted grapes.

(To make SCD friendly, top a bed of spinach with the vegetable mixture and only. (Omit the quinoa).

The pilaf is so satisfying. You’ve got a symphony of flavors and such a diverse mix of textures!! The pistachios are crunchy and salty, the quinoa is nutty and *pops* in your mouth. The earthy beets are nice and chewy while the Brussels sprouts have a wonderful bite to them!

    • hahaha – you’re right about that – I have added fish back into my diet, and honestly, though I would love to have been able to stay vegan, my health was suffering. Not being able to eat soy products, grains, or legumes (because of my auto immune disease) made being completely 100% vegan nearly impossible. The sheer volume of fruits and veggies I had to eat aside, I just simply wasn’t getting enough protein. Since adding fish back to my diet, I have become fertile (I was infertile as a vegan), have gained a few healthy pounds that have allowed me to blossom, and i don’t have the reflux from always being stuffed to the brim with veggies and fruit. (Sorry if this is TMI) – but as much as i wish i could have remained 100% vegan, my body just responded better to adding fish into my diet, and so i must listen to my body! thanks for stopping by!!       • Well.. to be honest, I can’t be a vegan. I like my meat too much. And I don’t believe God intended us to be vegan. He would have given us much longer digestive tracks.
        While I know that there is a lot of science to support the claim that the vegan diet is the healthiest for us humans, I don’t believe it to be completely true. So many vegans I know had to move off it because they were vegans for ideological reasons; love of animals, saving the planet, etc. The reason they had to was because they had to either supplement the less protein with pills or it just was not agreeing with them at all. Even evolutionists attribute the development of man and our superior reasoning to the addition of meat and protein into our diet. So their science is contradicting itself.

        There is a common thing that says the only reason man started eating meat was because of the fall of Adam and Eve. They had to kill in order to get skins for clothing. I don’t believe that to me completely true. There is also a theory that in the garden of Eden, there were no predators. Even lions ate grass.. Nope.. not buying that at all.
        If you read the bible, in the garden of Eden, God never gave any commands that said,”Thou shalt not kill and eat animals.” I believe that Adam and Eve were allowed to kill and eat.. They had everything in the garden that allowed them to survive and have the best and balanced diet.

        Even the outline of rules God gave the Israelite about what they should and should not eat. Those also contained meat. And scientists have confirmed that the diet outlined in those pages is basically the most healthiest and balanced diet for us. That was God’s way of ensuring that His chosen people were the healthiest people on the planet. If being a vegan was the best for us, why didn’t God specify that in those pages… Have you ever thought about it?..

        Anyways.. your reply was not TMI. Feel free to share.. we’re all friends here and as long as you are doing well, that is all that matters. I agree.. you have to listen to your body. Every time I eat some sort of vegetarian cuisine for dinner, I always dream of eating the biggest burger in the world at night. I guess my body in trying to tell me something.. LOL.
