Peanut Butter “Disappearing” Cookies!

Oh friends.

Ohhhhhh friends, I have just made — and polished off — one of the most DELICIOUS recipes I’ve made in a long time.

Introducing my PEANUT BUTTER COOKIES!

I’m going to be honest: I took only one photo, and no video footage, because I didn’t know if these were going to be any good. And frankly, they were just for me. haha

I didn’t want to have a whole cooking production…I just wanted cookies, and I wanted them now. Not after photos, not after asking my husband to take footage of the process. I just struck while the iron was hot. And I feel no regret 🙂

They were phenomenal.

They were cakey, they were super moist, and with the most beautiful peanut butter flavor you’ve ever experienced.

The first day, my husband and I had four each. FOUR COOKIES!

And then we proceeded to kill them all the next day. They disappeared!

And they are COMPLETELY SPECIFIC CARB DIET FRIENDLY!!!

These cookies use grass-fed GHEEthe first time I had EVER had that ingredient! For those that may be unfamiliar as I was, ghee is clarified butter. So they heat butter up until the milk solids rise to the top. Then they skim those off, and what’s left is ghee!

These cookies also use single-ingredient peanut butterwhich IS allowed on the SCD after you’ve been symptom free for quite some time. It’s like “phase two” of the diet.

They’re ALSO gluten free and 100% delicious!

Here’s What You Need:

1/4 cup GHEE (this brand is from grass-fed cows)
1/2 cup peanut butter (SCD: make sure the only ingredient is raw or dry-roasted peanuts)
1/4 cup honey (make sure it is raw and unfiltered. This is my favorite brand)
1/2 cup almond flour
1 egg
1/8 tsp baking soda
1/2 tsp pure vanilla extract

Directions:

Preheat oven to 325 degrees F.

In a medium sized- bowl, cream the ghee and the peanut butter until soft and incorporated.

Add the remaining ingredients and mix until well incorporated.

Drop 1 Tbsp balls onto a non-stick tinfoil-lined baking sheet and bake for 10 minutes at 325. Will make about 16 cookies.

Oh my gosh – I cannot get over how good these are. I can’t believe I went all this time on the Specific Carbohydrate Diet not realizing that PEANUT BUTTER was legal after you’re symptom free!

I’ll tell you what, we’ll be making these for Christmas!

I dunked them in almond milk, and they were phenomenal. Steven drizzled a little honey on his: super luxurious!

These will absolutely not disappoint, AND they’re almost good for you! 😉

So make these for the holidays, make them for a treat on a weekday, make them for your kids’ lunches. Just make these cookies!

    • You need to make a cook book with all your recipes. I bet it would be a smash hit and there are definitely loads of people who need this information.
