Happy Wednesday, friends!

It’s currently snowing outside in NYC, and I’m curled up with a steaming mug of my favorite chamomile tea, my life changing down puff slippers — (because, yes those are a thing, and you need them in your life) and a plate of these Banana Bread cookies.
And let me tell you — life is good.
Nevermind the fact that I need to go grocery shopping, and I’m procrastinating doing the laundry.
Right now, in this moment…bliss.
So. Let’s just take a minute to talk about these cookies.
If I were to have you over to my apartment, I would have a plate of these waiting for you because, friends — these are a hug on a plate.
They are amazing.
Now, I know that last month, I shared with you my PB & J Bites. And side note – those were one of my more popular recipes on Pinterest. (Which, don’t get me started on Pinterest. Sorry for the tangent, but I just love Tailwind like a child, so…forgive me.
BUT – these banana bread bites are a fierce contender in the battle for top cookie bite.
Let me just say: they are FAN -FREAKIN-TASTIC!
They’re a cookie. They’re healthy. They’re made with whole foods. And they are absolutely irresistible! Addictive. Scrum-diddily-umtious! ((Have I convinced you to try them yet??))
Plus, they’re Gluten Free, Vegan, Specific Carb Diet friendly, AND Paleo!
Here’s What You Need: (Serves 3-4; Makes 14 bites)
8 dates
1/4 cup pecan butter
1/4 cup cashews
1/4 cup almonds, whole
1 tsp cinnamon
1/2 cup freeze dried bananas
1/2 cup almonds, whole
24 almonds, halved

Good Chef’s Knife

This recipe could not be easier. Throw everything (minus the 2nd group of additional almonds) into the food processor, and process until you get a “sand-like” consistency, scraping down the sides twice. Then, add in the reserved 1/2 cup of whole almonds and pulse 4 times. (You want them to still be “chunky.” Finally, stir in the reserved almond halves.
Form 1 Tbsp balls in your hands by packing it together. Chill for 30 minutes and enjoy! Makes 14 bites!
These are divine! Truly! They are rich and chewy, slightly crunchy and creamy, and stick-to-the-roof-of-your-mouth amazing!
The freeze dried bananas give it a subtle sweetness, while the cinnamon chimes in with a slightly spicy note. Just perfect! And the dates make it so chewy and luxurious.
I kid you not – they taste just like a slice of decadent, delicious banana bread!
