Hello from Park City, Utah!!!
Yep! I’m coming atcha from out west, where I’m at the Sundance Film Festival! I’ll be seeing some movies, spending quality time with my family, eating some delicious food, and best of all, going skiing!
Skiing is one of my all time favorite activities. All time. Not snow boarding. Not snow shoeing, or tubing. Good old, down hill, alpine skiing.
And I’ve been doing it since I was 5, so …not to brag buuuut… homegirl can ski a little bit.
Anywho – skiing takes a lot out of you. You’ve got to have lots of energy to last from the first tracks on the corduroy at 9am, all the way until the bowls close at 3:30 pm!
SO, one of the first things I do when I get to our ski place is make these uh-mazing energy bite cookies.
Now here, here…don’t let their humble appearance deceive you, dear friends.
They are hands down, one of my TOP THREE desserts ever. They’re always requested for picnics, potlucks, Bachelor girls’ nights.
And just what are they, you ask?
PEANUT BUTTER AND JELLY BITES!
They’re poppable, they’re delicious, they pack a punch in the nutrition department, and best of all — they’re SO EASY TO MAKE!
I would suggest tripling or quadrupling the batch you’re planning to make, because trust me, these are a fan favorite. And your ski buddies will be gobbling these up just as fast as you can say FRESH POWDER!
They’re SOOOO good. I’m going to be totally honest — I have a hard time not eating the entire batch at a time!
But oh my gosh, I cannot say enough good things about these! PB&J’s were a staple in my house growing up. And these taste like peanut butter cookie dough with a kiss of sweet strawberry goodness!
And they’re…get ready… Gluten Free, Grain Free, Vegan, Specific Carb Diet friendly and Paleo!
Here’s What you Need: (Serves 2-3)…or one 😛
1/4 cup freeze dried strawberries
4 Tbsp peanut butter
24 almonds, whole
8 almonds, halved
This recipe couldn’t be simpler! Throw the dates, strawberries and peanut butter into the food processor, and process until it resembles sand. Scrape the sides and the bottom, and process for another few seconds.
Then, add the 24 whole almonds, and pulse it about 4-5 times, so that they are still in big pieces. then, stir in the almond halves.
Take about 1-2 Tbsp of the dough, and form balls. It will make about 8 bites. Refrigerate for at least 30 minutes. (They’re best chilled.)
Holy. Cow. These are INCREDIBLE! They’re like the inside of those “PB&J Uncrustables.” Not that I’ve ever had one of those, but this is how I imagine they’d taste 🙂
They’re stick-to-the-roof-of-your-mouth delicious! And the texture is out of this world! They’re sticky and chewy, but there are unexpected crunchy bits from the almonds!
I’m making another quadruple batch of these tonight….because they’re already gone!!!
