I’m going to get in sooooo much trouble for this!

This bread…is…everything.
It has been in our family for over 50 years! And it is absolutely DELICIOUS!

Seriously. I dream about this bread. Starbuck’s pumpkin bread can’t hold a CANDLE to this masterpiece!

Because it is SO MOIST!
That is the first thing that everybody says about it. I made this bread for two different groups of people this past weekend, and I heard that comment four different times!!! “It’s so moist!”

And that’s because the ingredients are….decadent!
But it’s got pumpkin in it, which is a vegetable, so it’s basically a salad, right?!
Anywho — make this for a housewarming gift, make it for new moms, if someone is sick, or if you want to be the hit of a party! Just make this bread!

So without further ado…I’m spilling the beans!
Here’s What You Need: (Makes 2 loaves)
3 cups sugar
1 cup “salad oil” (I used canola oil)
3 eggs
2 cups canned pumpkin
3 cups unsifted flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp cloves
1 tsp cinnamon
1 tsp nutmeg
Tools:
Whisk
Measuring cups & spoons
Large mixing bowl
Small mixing bowl
2 loaf pans
Directions:
Preheat the oven to 350 degrees.
Add salad oil to sugar and blend. Whip in eggs. Pumpkin is stirred into creamed mixture.
Then, sift dry ingredients together and blend in to complete batter.
Batter is poured into ungreased tube pan OR two loaf pans may be used.

Bake in 350 degree oven for about 1 hour and 10 minutes. (I like to bake it for 1 hour and 5 minutes so the middle is still slightly gooey. Trust me…it’s the best!)

Cool in pan then remove.
May be garnished with whipped cream (or ice cream) for dessert or warm and buttered as bread.

OK – listen. You need this bread in your life.
Even if we’re on the brink of spring, you need this bread. Today.
You will dream about it forever.

You know, being on the Specific Carb Diet, there are a lot of things that I can’t eat anymore, and THE QUESTION I get asked the most is, “What food do you miss the most?” And friends, THIS IS IT.
This was my favorite food growing up. My brothers and I used to flight over who gets to lick to bowl haha.

But I’m serious. It really is so tender and light. And the crumb on it is absolute perfection.

I laughed at the ‘it’s a salad!’ comment. When people try to bring me down for loving chocolate I tell them, ‘It’s a bean ergo it is a vegetable!’. I am going to try this recipe. I love these sorts of breads. Thanks for the recipe!

Reminds me of my Granny’s persimmon pudding. Hard to come by persimmons, but I think you can actually use pumpkin too. Similar to your bread except it doesn’t rise. Completely decadent. 🙂 🤗🙏

Problem with persimmons is if you get them too early, they’re very bitter, like alum. Will set your teeth on edge and pucker your lips. 😙 LOL. I’ll see about sending you the recipe. 😁

It looks like my mom’s pumpkin bread recipe. I missed it too, so I came up with a low carb version that hits the spot. I actually made some this week, despite the fact that it is spring. 🙂 I was missing it.

Hmm, looks “almost” as good as my various pumpkin bread recipes from Pumpkin Apricot Walnut Cake to Pumpkin Buttermilk Cake! As for licking the bowl, I remember my Mother graciously would leave some batter in the bowls or on the beaters for my brother and me as long as we were home. I noted after he went to college that the bowls and beaters were a lot emptier and the breads were just a little larger. Makes me miss my Mother, again.
