I’m going to be honest…I totally forgot that yesterday was Monday.
Oops!
It’s President’s Day weekend, and right now I’m out in Utah with my family skiing! We went to church on Saturday night so that we could get a full ski day in on Sunday…which made Sunday definitely not feel like a Sunday, and then Monday being off…my days were just all helter skelter. So my apologies.

But as I said, we’re in Utah, and we’re currently bracing ourselves for their biggest snow storm of the season!!! They’re expecting 40 INCHES of snow over the next day and a half. And as I’m looking out the window this morning (Steven and I are working from the condo for the rest of the week while the family skis) — the snow has just begun to fall!!
Will it really be 40 inches? Will it just be a dusting?
Typically, the snow forecasters are pretty spot on out here…I mean they’re in the business of snow with all these ski resorts in Park City. And plus, when it blizzards out here…they’re not kidding! They get BIG SNOW, and it has been a record winter already for snowfall.
So I would not be surprised if we really do see over three feet of snow!
I may just have to try and sneak out for an afternoon and shred some fresh powder while we’re here. I mean…we did fly all the way out here!
So far, we’ve eaten at the raclette Fireside Dining, which — being President’s Day, we weren’t able to get a reservation for my whole family, so Steven and I were able to snag one. I checked OpenTable at like 4:30 am (my body is still on Eastern Time and that’s when I naturally wake up out here), and sure enough there was a cancellation for two that night, so Steven and I were lucky enough to have a date night.

But this restaurant is out of a dream. Just imagine a huge ski lodge with five, huge two-story-tall stone fireplaces with roaring fires. One with huge wheels of raclette cheese, melting onto plates for you to dip veggies and potatoes and cured meats and baguettes into.

Another fireplace with homemade stews and fire roasted salmon and chicken. Another fireplace with all the salads and soups. One fireplace with a huge leg of lamb spinning over the flames, slow roasting all night. And the final fireplace with melted chocolate, complete with all the dippers for your heart’s desire. And did I mention it’s all you care to eat!
It is, in a word, the most glorious dinner you could imagine. It’s set in the mountains, and they offer horse drawn sleigh rides outside for between trips to the fire places.
And the most amazing part is that they made me special versions of everything to fit my Specific Carbohydrate Dietary needs. It was so kind.
Other than that, we’ve just been hanging out and skiing with my family. One of my brothers and his family is here too, so we’re having a blast bonding and just being together in this winter wonderland!
So that’s what we’ve got going on for the next few days! I’ll keep you posted on my Instagram (@beauty.beyond.bones) of what the snow decides to do! We’ll see if there really is 40 inches coming our way! I don’t know about you, but I think it’s kinda fun being snowed in! Especially if you’re with the people you love!
