AHHH THE SUPER BOWL IS ON SUNDAY!!!
As a Cincinnati gal, born and raised…to say that I am ECSTATIC that my hometown team — The Cincinnati Bengals!! — are in the Super Bowl!
I am so stinking excited! In fact, I’m sitting here in my Bengals jersey, because IT’S SUPER BOWL WEEK BABY!
Naturally, I’m hosting a party on Sunday. Because that’s what you do when your team is duking it out for the title of Super Bowl Champs.
And I have got quite the menu planned for this little soiree.
So I thought…why not share with you what’s going to be included in my Super Bowl Spread!
(And PS – if you’re looking to include some traditional “Cincinnati eats” at your party…I’ve got you covered!)
Which brings us to….
No Cincinnati party or get together was ever complete without this bubbling, gooey dish of sheer bliss. Layers of cream cheese, our famous Skyline chili (found here!), and finely shredded cheddar cheese, all bubbly and hot from the oven…only to be dipped with Fritos Scoops (yes: the corn chips) and/or tortilla chips.
I’m telling you what, back home in Cincy…you’d set this down at a party, and within…I kid you not: three minutes….the entire thing would be demolished. If you hosted a party, it was an unwritten rule that you always had to make 2 skyline dips, because they’re just so popular!
So naturally, that will be the star of my Super Bowl spread!
This is another Cincinnati claim to fame that will be served during half time of the Super Bowl.
Fun fact: Graeter‘s was Justin Timeberlake and Oprah’s favorite ice cream! Their black raspberry chip ice cream is what puts us on the map. Since 1870, they’ve been making their phenomenal ice cream in a French Pot style…so it’s about as high of milk fat as you can get. But what really is special is their hunks of really good chocolate in their ice cream. They’re also a candy and chocolatier…so their fine chocolates are in the ice cream…not as chips, but as CHUNKS the size of a mini candy bar.
My favorite was always their peanut butter chip. But their black raspberry chip is world famous. Steven’s favorite, however, is their black CHERRY chip. (Link here).
Also: they deliver anywhere in a dry ice package, and make a great gift.
These cookies of mine are requested at every single get together I have with my friends. They are irresistible! Truly. They are ALWAYS a hit. Homemade chocolate chip cookie dough, baked in a mini muffin tin, and then just when they’re almost set in the middle, you push in a mini Reeces peanut butter cup. OH MY GOSH they are the world’s greatest cookie.
Most people make these with peanut butter cookie dough instead of chocolate chip cookie dough, but I think that makes the peanut butter flavor too intense. Trust me…these are perfection.
MY WORLD FAMOUS GUACAMOLE:
This will have you singing with joy. And I will serve it with freshly cut up veggies, like: carrot sticks, celery, red peppers, seeded cucumbers, cauliflower florets, and broccoli florets. To make:
squeeze of lime
1 garlic clove, grated on a microplane zester
1 tbsp red onion, grated on a microplane zester
2 Tbsp cilantro
4 pinches salt
Combine all the ingredients in a large bowl and smash with the back of a fork. The secret is to grate the garlic and red onion on a microplane zester, so you don’t get an intense mouthful of either!
I will be serving a cheese plate with lots of “vessel options” — from pita chips, to bagel chips, to vegetable crudités. My mother is known for always serving this specific brand of triple cream brie cheese – called Fromager D’Affinois -, and honestly…it’s for good reason. It is SO creamy and mildly flavored, you don’t know if you’re eating butter or cheese. It is just…*chef’s kiss.* And you can find it HERE on Amazon. (To be honest, I feel a little guilty, like I’m letting the cat out of the bag with her secret famous cheese!) I’ll also throw a gouda cheese on the cheese plate, and maybe a little vessel of spreadable goat cheese.
I’ll also be serving my FAVORITE sweet snack: medjool dates stuffed with almond butter and sprinkled with cinnamon! Holy cow, these are the greatest thing ever! (And sorry, this is a TERRIBLE photo, I literally took this at 10pm when my sweet tooth hit…but I promise, they are divine!
I will also be serving “finger nibbles” – such as cotton candy grapes (which are the best!), almonds, the veggie platter with my guacamole and hummus, a bowl of peanut M&M’s and then maybe a bowl of Smart Pop just to round things out.
Will be BYOB, as most get togethers are when you’re a young New Yorker…but I will also supply bottled water, Le Croix, various “mixers” for spirits, hard seltzers, and whatever liquor I have on my bar cart is fair game too.
All of this will be presented on my table, complete with an orange table cloth and black and white striped napkins…because #WHODEY!
TIPS FOR PARTIES WHILE ON A SPECIAL DIET!
Lastly, I wanted to close out by offering some tips I’ve found useful over my 11 years on the Specific Carb Diet, when it comes to attending parties or get togethers. Because, let’s be honest: most parties revolve around the food…and when you’re on a special therapeutic diet – or have food allergies – it can really be a bummer to not be able to partake in the delicious party foods!
Tip #1. Bring something to share!
If you’re bummed you can’t eat the nachos or the myriad of other temptations, BRING YOUR OWN! Make something delicious you CAN eat, and bring it as a platter to share! Not only will this give you something to munch on (that isn’t the veggie sticks), but it was ALSO really help out the host or hostess, as they’re probably stressing over what to serve that will accommodate your dietary needs. That way, you can take the pressure off her, AND get to make something you enjoy eating! (I always bring the almond butter-stuffed dates or my homemade guacamole to parties…they’re always a hit, and I love them too!)
Tip #2. Come prepared with “emergency food.”
For me, this is a Larabar…but you can also make my homemade Larabars. I have also been known to bring little packets of almond butter. Or a banana. “Purse foods” that will be a life saver if the game goes into double over-time.
Tip #3. Eat before you go!
This one is crucial, because that way, you don’t really have to rely on there being something substantial enough for a meal at the party. Not only is this smart, just from an energy and health stand point, but it also is just dang smart when it comes to social gatherings where there’s alcohol involved!
Tip #4. Go, knowing that it’s not about the food.
This was the biggest thing that helped me, when I first adopted the Specific Carb Diet. Previously, one of the highlights of any party of get together was…naturally, checking out the snack table! lol! But now, I’ve shifted my perspective, realizing that the highlight of a get together, is being with the friends that are there! It’s about the people! Not the food! And that shift in thinking really really helped with the “disappointment” of not being able to enjoy the crock pot meatballs, or the pigs in a blanket, or the magic 7 layer bars.
Tip #5. When in a bind, just order something to be delivered!
Living in New York City, there are so many places that offer “safe” dining choices for me. Sweetgreen is my favorite “go-to” with their salmon and avocado salad. I can usually get it delivered in less than 30 minutes. So if all of a sudden a pizza appears, and you feel deprived of something delicious, you can quick order something too!
