OK yall, I have a confession. I have adopted a “bad” habit.
And it involves SweetGreen Salad. It’s this amazing chopped salad place in New York City, and there’s a shop literally on my way home from errands.
And recently, I’ve been going there 3-4 times a week for…wait for it…their peach salads.
UUUGHHHH. You guys it is SO GOOD. Peaches are at their peak right now in August and they just SHINE in that salad.
But it is such an expensive habit….
But it is so yummyyyyyyyyyyy.
They chop up all the ingredients, and toss them all together with their delicious dressings. And it’s just way too dang easy and way too delicious. Especially because it’s all gluten free and you can find amazing Specific Carb Diet legal options.
Well. My pocketbook convinced me that I need to start learning how to recreate this salad from my own dang kitchen. Sure, it won’t be as quick and easy, but I was sure I could make something equally as flavorful and delicious.
And BOY WAS I CORRECT!
My Perfectly Peach Salad Salad!
And if you’re smiling reading that…good! Because this salad will make you smile too!
Eat it for lunch, top it with a protein and have it for dinner! Whatever you do — JUST MAKE IT AND BASK IN THE BLISS THAT ARE SUMMER PEACHES!
**Oh yeah, and one other amazing thing, is that since this is a hearty salsa-of-sorts, the leftovers are incredibly versatile! You can top a filet of cod or sea bass with it, or throw some shrimp on the barbie and serve them with this salsa and some corn chips! You can add it to summer gazpacho soup, serve it with tortilla chips, add it to a hummus wrap, serve it over quinoa, add some black beans and serve it with brown rice — the sky is the limit!

Alright — onto the recipe!
I served mine as a salad with roasted asparagus. And now, I know you’re probably scratching your head, thinking…peaches and asparagus!? But trust me, my friends — it’s totally amazing and not weird at all! haha
Ingredients (Serves 1)
1/2 bundle of asparagus
1 Romaine heart, chopped
1 ripe peach, diced
1/2 tomato, seeded and diced
1/2 red pepper, diced
2-3 Tbsp red onion, finely minced
1/4 avocado, diced
2-3 Tbsp cilantro, chopped
juice of one lime
1 Tbsp EVOO
Salt and pepper
Green onion, sliced (Garnish)
Lime Vinaigrette Dressing:
Juice of 1 lime
2 Tbsp Extra Virgin Olive Oil
Preheat oven to 400 degrees. Place your asparagus spears on a tinfoil-lined, olive oil-sprayed baking sheet. Spritz them with olive oil and sprinkle with salt and pepper. Bake for 25 minutes.
Meanwhile, make your salsa by combining all the ingredients in a small-to-medium sized bowl. Refrigerate until serving. You can make the dice as small or as large as you like. I like more substantial pieces, but it’s totally up to you!
Also, combine your dressing in a small mixing bowl. Set aside.
Plate by topping your romaine with the asparagus and salsa, and drizzle with the lime vinaigrette. Garnish with any extra cilantro and green onions!
This salad was so wonderful! It was fresh and crunchy, and sweet and everything you’re looking for in a summer salad!
I can’t explain why, but the combination of the earthy asparagus with the sweet and succulently juicy peaches were out of this world! And the cilantro and lime took it over the top!
And the textures were outrageous! The cold, crunchy salsa with with warm, chewy asparagus was just delightful! And the buttery avocado brought it all together!
Finally, the colors were just stunning. I mean, the dish just screamed “Summer!”
