Hey friends and happy Wednesday!

I don’t know about you, but I cannot BELIEVE that we are ONE WEEK away from THANKSGIVING!! I mean, seriously — where is time going?!
You guys. DO I HAVE A TREAT FOR YOU TONIGHT!

Holy cow, this recipe is a crowd pleaser, let me tell you!
Just what is it?! A beautiful Cashew Veggie Curry! And this particular night, I served it over millet (but you could sub rice or quinoa or even pasta!), and along side a beautiful piece of curry-crusted cod!

It was — truly a magical meal!
The sauce on this curry — I’m telling you, it is good enough to bathe in. I was practically drinking it it was that good. ((And just a little note — I took these photos before I smothered it all in the sauce, because it was more aesthetically pleasing this way!))

But the flavors are so exotic and exciting! It’s spicy, somewhat sweet, a little tangy, a little creamy — just delicious!

Plus — it’s gluten free, vegan, and paleo! AND Specific Carb Diet friendly if you omit the millet!

Now let’s just pause for a hot sec and talk about millet. Because typically, people hear “millet” and they think birdseed. And — yes, you would technically be correct. BUT – it is actually an ancient psuedo-grain that is actually a SEED that mimics a grain! So it’s terrific for paleo and grain-free diets, because it’s fluffy like rice and really soaks up the sauce and flavors you’re cooking with! PLUS! It’s a terrific source of protein, fiber, B vitamins and manganese — not to mention it cooks in less than 10 minutes!

Here’s What You Need: (Serves 4-5)
1 1/4 cups millet, cooked in 2 1/2 cups of veg stock, per package directions
1/2 head cauliflower, broken into florets and roasted or steamed
1 big stalk of broccoli, broken into florets and roasted or steamed
1 red pepper, chopped
2 large carrots, chopped
1 yellow onion, chopped
1 1/2 cups sugar snap peas, cut in half
1 Tbsp freshly grated ginger
3 garlic cloves
1 rounded tsp curry powder
salt and pepper
Garnish:
cashews, chopped
cilantro, chopped
3 green onions, sliced
Sauce:
1 cup vegetable stock
juice of 1 lime
15 drops pure liquid stevia (or 1 Tbsp honey)
1/2 can light coconut milk
Fish:
1/2 lb cod per person
curry powder
salt and pepper
lemon juice
Tools:
Large nonstick frying pan
2 baking sheets
Nonstick Tin Foil
Steamer basket
Good chef’s knife (This is the one I use and love)
Sauce pan with tight fitting lid

Directions:
Preheat oven to 400 degrees.
Put your broccoli and cauliflower florets on an olive-oil sprayed, tinfoil-lined baking sheet and sprits with olive oil. Bake for about 15-20 minutes, until golden brown.

Cook your millet until it absorbs all the liquid, about 20-25 minutes. When it has absorbed all the stock, fluff it with a fork, and add salt to taste.
Meanwhile, prep your veggies.
Then, in a big, nonstick frying pan, sautรฉ the onion in 1 Tbsp EVOO, salt, pepper, and curry powder. Allow them to cook for about 5 minutes on medium heat, until the onions have softened.

Next, add your carrots, and let them cook for about 3 minutes. Stir in your peppers and peas, and let them cook for another 3-4 minutes.
Then, stir in your garlic, ginger, broccoli and cauliflower.
Let those cook for about 4 minutes. It will be very fragrant!
Stir in the vegetable stock, lime juice, sweetener mixture, and let that warm through. Finally, stir in the coconut milk, and let it warm through.
To serve, make a bed of millet and pile on those veggies! Garnish with cilantro, cashews, and green onions! And whatever you do — don’t skimp on the sauce! It’s the best part!
Alongside this dish, I served cod fish! I took the loin, put it on a tinfoil-lined baking sheet, drizzled it with olive oil and sprinkled it with salt, pepper, curry powder and fresh lemon juice. I then baked it for about 30 minutes at 400 degrees, until flakey and cooked through.

Wow, wow, WOW! WHAT A DISH!
There’s something about a meal with a bomb.com sauce that really makes my heart sing. haha
But I’m telling you — the creaminess of the coconut milk, coupled with the deep spice in the curry powder, the *zing* of the lime juice, the fresh bite from the ginger, and then the undertone of garlic — it was the combination of the perfect storm and I was here for it.
HERE FOR IT!!

All the veggies paired perfectly with it. And the millet just soaked up the sauce and all the flavors.
Make this dish. I promise it will NOT disappoint!
(Not to mention it’s pretty fool proof too! The sauce makes itself!)
