Quarantine Day 48: NYC
So here’s the thing about quarantine: Some days, you feel like being Martha Stewart and whipping up something gourmet, that uses every gadget and appliance in the kitchen. While other days, you’re just trying to shovel food as fast as you can into your mouth, most probably forgetting to chew.
Yeah, that’s coming from the girl who just housed an entire bag of frozen peas.

Things are getting desperate.
Anywho — tonight’s recipe is going to hit the spot when the hungry snack monster strikes.
Allow me to introduce to you, Pina Colada Cookies!
They were actually inspired by a Disney movie I watched recently in the Q.
So here’s a little fun fact: When I was growing up, I was a huge Disney Channel Original Movie fan. I mean, we’re talking: High School Musical. The Lizzie McGuire Movie, Zenon the Zequel, Cadet Kelly, The Even Stevens Movie. I was all in.

But my favorite of all time was Rip Girls. And thanks to Disney+, we can now all relive our adolescence as quarantined adults. Wine highly encouraged.
But Rip Girls starred Camilla Belle. It was set in Hawaii. And I may or may not have had a slight surfer girl obsession afterwards, complete with a bedroom decoration overhaul.
So when it comes to anything beach or tropical themed, I like to consider myself an expert 🙂
Thus was born: my Piña Colada Cookies!

I whipped up these bad boys with visions of board shorts and palm trees in my head 🙂
And not only are they gorgeous, but they’re healthy! So you can pop one – or seven – the next time you feel a quarantine snack attack coming on!
They a scrumptious blend of dried fruits and nuts. Kinda like an amped up version of a Larabar. Only, better, IMHO.
And they’re Grain and Gluten Free, Vegan, Paleo, and Specific Carb Diet friendly!
In a word…they’re DELICIOUS!
Tropical healthy cookie bites that take your taste buds to Hawaii! 🙂
Here’s what you need: (Makes 10 cookies) — enough for 3-4 people 😉
5 dates, pitted
4 dried pineapple rings
12 almonds
12 cashews
1/4 cup shredded coconut
2 Tbsp coconut butter (NOT oil)
Optional:
Melted dark chocolate (NOT S.C.D. friendly)
Tools:
Food Processor

Directions:
Put everything in the food processor and process for about a minute until everything is roughly the same size. (Like the size of peppercorns.) Then, roll 1 Tbsp of dough into balls. Chill for at least 20 minutes, and enjoy.

Pro Tip: The dough may feel a bit wet when you roll it into balls initially, but that’s just the heat from the food processor melting the oils in the coconut butter. This will go away and “firm up” after 20 minutes in the fridge)
Optional: Melt about 1/4 cup dark chocolate in the microwave (do 30 second increments, stirring in between), or double boiler and dip half of the cookie. (Do this after they’ve firmed in the refrigerator for 20 minutes).
I was literally dreaming about my toes in the sand while chewing on these AMAZING COOKIES!
They’re so tropical! It’s seriously the cookie form of a Piña Colada! You’ve got the pineapple, you’ve got the coconut, you’ve got the sweetness from the dates…now all you need is rum!

But seriously, these are fantastic. They’re sticky and chewy, and the dark chocolate just takes them over the top!
Not to mention they look super elegant and “dressed up!”
I can’t wait to share these with my friends once quarantine is over!
And you don’t have to tell anyone that they’re secretly healthy!! 😉
So bring on the tropics!
If you need me, I’ll be watching Rip Girls, and online shopping for a bikini 🙂
What are you snacking on during Quarantine?

you had me at pina colada! and who doesn’t like cookies? this looks like a fun snack, thanks.
Pina Colada Cookies may be nice, but if you sub white chocolate for the dark stuff, Pina Colada Snowballs are even better!! Hmm, wondering if caramel could make Pina Colada Mudpies. I may try that and let you know! 🙂

Bwahahahaha! Gotta love disney originals. Fun Fact- my husband and I met doing musicals. We went to different high schools in neighboring towns and when he picked me up from school one day, a bunch of girls from my choir class started squealing, “YOU’RE DATING TROY BOLTON!” Apparently I missed the fact that he played Troy in his high school’s performance of HSM. 😝 #smalltownfamous
