I hope this finds everyone safe and healthy.
Before I share tonight’s recipe, I want to just take a minute to offer a quick prayer for our deeply hurting nation. May we take to heart Jesus’ instructions to “act justly, love mercy, and walk humbly with God” (Micah 6:8) and above all: to love one another.
OK – onto tonight’s recipe.

I don’t know about you, but it is hot in my apartment! I have not been able to get my air conditioner installed, thanks to COVID19 restrictions put in place by my building, so I am sweating it out, people.
And let me tell ya – there is nothing more refreshing than WATERMELON. Ice cold, juicy watermelon on a hot and humid NYC afternoon. Yes please.

And this recipe is taking that summer staple, and turning it into ICE CREAM!
Yep! Healthy ice cream — three ingredients. And it can be ready to eat in less than five minutes.

Plus — it’s Gluten Free, Vegan, and Specific Carb Diet friendly!
Here’s what you need: (Serves 1-2)
1 cup watermelon, cubed and frozen
1/2 cup watermelon – not frozen
2 frozen bananas
1/4 cup frozen blackberries
1 1/2 Tbsp honey or agave
Tools:
Food Processor
Zip Top Baggies
Good Chef’s Knife
Silicone Spatula

Directions:
Add all your frozen fruit to the food processor, and process until they get all chopped up into little pebbles. Then, add your non-frozen watermelon, and then scrape down the sides of the food processor. Let it process for a couple minutes until it becomes smooth and creamy. You’ll need to stop and scrape the sides/stir it several times. Lastly, add your sweetener of choice, and blitz it for several seconds, until incorporated.
Serve immediately for that soft-serve consistency.

Top with chopped nuts, more fresh fruit, cocoa nibs, chocolate chips, flaked coconuts, a sprinkle of cinnamon, a drizzle of almond butter, dried fruit – like raisins or dried pineapple, granola, cereal, or even sprinkles! Your imagination is the limit!
(OR – you can freeze it, and enjoy later — but the consistency will be more “icy” than creamy.)

OK WOW – this was such a treat. It was cool, and creamy, and refreshing, and so fluffy and delicious. I seriously could have eaten three bowls of this, no question!
There’s something about watermelon that just brings back so many happy memories, isn’t there? It always transports me to the Fourth of July barbecues with my cousins as a kid.

Well that sweet and nostalgic flavor gets a gourmet burst with that slightly tart kiss of blackberry esesence!
And the texture is so phenominal. Something magical happens when you freeze bananas — they honest-to-goodness take on a soft-serve, whippy-dip consistency! It’s so delightful!

Make this treat. Your tastebuds will thank you! 🙂

My husband and I tried this recipe at home tonight! He loved it. I’m not a huge banana fan, but it was still a nice treat. Have you heard of Dole Whips? They are dairy free and taste so good. My local ice cream shop sells them and they remind me of this.
