It’s a glorious day here in NYC, the sun is out, the breeze is perfectly pleasant, and I have a working air conditioner!!

SO that means only one thing — I can use my oven again!!

Oh my goodness, I am so grateful that my AC unit was finally delivered from storage. COVID19 restrictions are no joke here in Manhattan. No joke!

So – what was the first thing I made?

THIS DELICIOUS DINNER!

Now let me just say — everything on this plate was amazing, but that fried cauliflower rice stole the show.

I mean, danggggg it was so tasty! And in case you’re afraid it tastes like cauliflower, think agian! It was nutty and buttery and rich, and was the perfect backdrop for the warm, earthy flavors in the cod and the asparagus.

Plus – it’s grain and gluten free, paleo, AND Specific Carb Diet friendly!

Here’s what you need: (Serves 2)

2 cod fish fillets (1/2 lb per person)
fresh rosemary
2 lemons
1 bundle asparagus, wooden ends trimmed
1/2 head of cauliflower, riced
1 egg
salt and pepper
olive oil

Tools:
Food processor
baking sheet
non-stick frying pan
olive oil mister
nonstick tinfoil
spatula

Directions:
Preheat oven to 400 degrees F.

On a tinfoil-lined baking sheet, place your two cod fish fillets. Drizzle with olive oil, squeeze of 1/2 a lemon, salt and pepper. Lastly, top with fresh rosemary.

On the same pan, place your asparagus on the other half. Toss with about 2 Tbsp olive oil, and sprinkle with salt and pepper.

Bake for about 20-25 minutes, until the cod fish begins to flake.

Meanwhile, rice your cauliflower by placing the raw cauliflower in the food processor. Pulse until it resembles rice.

In a medium sized, nonstick skillet, heat 1 Tbsp EVOO. Then, add your cauliflower rice. Drizzle the cauliflower with another Tbsp of EVOO, and sprinkle liberally with salt and pepper.

Let that cook for about 7 minutes, stirring every minute. Once you see it becoming golden brown, create a little well in the center, and crack your egg into that well. Immediately scramble that egg in the pan, mixing it together with the caulilflower rice.

Allow that to cook and come together for another 3 minutes. Remove from heat, and cover until serving.

When you remove the cod fillets from the oven, immediately squeeze the other half of the lemon over it.

To plate, place a bed of cauliflower rice on your plate. Top with asparagus, and a filet of cod. Serve with a lemon slice, to squeeze on top of the fish!

HOLY COW, you guys. This meal was insanely delicious!

Not only was it a stunning dish with the colors and the beautifully caramelized asparagus, but it was a savory feast of flavors!

Words do not do this cauliflower rice justice. I’m serious. I would have never known it was cauliflower, because it took on this toasty, nutty flavor that had this rich butteriness from the egg. YUM. And to top it off, it had the texture of sticky rice!

The asparagus was so perfect – it caramelized in the oven, and soaked up all the olive oil, oh my gosh.

And finally, the cod — mmm mm mmmm! The earthy depth from the rosemary infused every bite. And the bright note of lemon was the perfect kiss of fresh flavor. My mouth is literally watering as I’m typing this!

  4. just had some Icelandic cod last night (thank you wegmans), I like how it flakes almost like sheets of ice off a glacier, big, huge flakes.. and it cooks quicker than it looks imo. I made mine blackened (hey, I love the spice and the excuse to break out the cast iron pan), love the cauli prep… gotta try that… have you ever done fish like this in ‘papillote’ ? I think you might dig that, kind of a “one pot” meal, but not in a pot… especially great for low carb/low fat stuff…
