Hello friends and happiest of Wednesdays!
What a beautiful week it is shaping up to be, huh? I know the country might be going all which ways, but at least in my kitchen, I’m feeling good in the neighborhood! 🙂
I’ve gotta tell ya…I love Mexican food. I love the flavors, the colors, the approachability, the health benefits. I love it all! Guacamole, salsa, queso, cilntro, lime, margaritas, tequila…bring it all on!
And bring on this FABULOUS dinner I made the other night for myself and a certain gentleman!
SHRIMP TACOS WITH PINEAPPLE SALSA and cilantro-lime rice!!
Now, let me preface: I am all for a delicious homemade salsa. I mean, my homemade mango salsa is so good it’ll make you slap ya mama!
And so, I decided, why not make it with my ultimate favorite fruit, pineapple!?
And believe me when I say, it did not disappoint!
Case in point, I only got *one* stinkin’ photo of the finished product, because our mouths were watering so much, we couldn’t wait to dig in!!
((And I’m not one of those food bloggers that makes my meal-share-ers wait to eat while I take endless photos while their food gets cold. No ma’am. I give myself 30 seconds to get a photo, and then it’s time to dig in!))
So let our scraped-clean plates serve as evidence: it was a bomb diggity meal!

Plus – it was gluten free, paleo, and Specific Carb Diet friendly!
Here’s What You Need: (Serves 2)
1 lb shrimp, peeled and deveined, tails off (1/2 lb per person)
1 tsp old bay
salt and pepper
1 cup diced pineapple
1 red bell pepper, small dice
1/2 cucumber, seeded, small dice
1/4 red onion, minced
1 avocado, small dice
1/4 cup cilantro, minced
Juice 1 lime
3 Tbsp EVOO
Salt and pepper
1 cup white rice, cooked per package directions
Juice of 1/2 lime
1/4 cup cilantro
salt and pepper
Tortillas – flower, corn or brown rice (SCD Omit)
Shredded Mexican Cheese (Optional)
Large nonstick skillet
Large mixing bowl
Sauce pan with tight fitting lid
Good chef’s knife
Cook the rice according to the package direction. When finished, fluff with a fork and stir in lime juice and fresh cilantro.
Meanwhile, make your salsa by mixing everything in a large bowl. Refrigerate until serving.
Finally, cook your shrimp. Start by seasoning your dry shrimp. Sprinkle both sides with salt and pepper, and old bay seasoning. In a large, nonstick skillet, heat 2 Tbsp oil. Place your shrimp in an even layer, and cook for about 1 1/2 minutes per side, until they are completely opaque pink and curled in on themselves.
To serve, either serve the shrimp on top of a bed of spinach, topped with a mound of the salsa and 1/2 of an avocado. (That’s the SCD way!)
Or, place 2 Tbsp cilantro rice in each flour tortilla. Top with shrimp, salsa, cheese, and hot sauce. Wrap up the tortilla and enjoy!
Oh my gosh this meal was AMAZING! First of all, it was a GORGEOUS dish with all the bright colors!
And the textures were phenomenal. The cold, crunchy salsa with the hot snap of the perfectly pan-seared shrimp. The luxuriously creamy avocado was rich and buttery and was the perfect note with the sweet and juicy pineapple!
I couldn’t get enough!!
And the best part is the leftovers! This mean is perfect -as is- for a second day lunch, OR , the pineapple salsa goes great on salads, sandwiches, with chips, on top of fish or another source of protein. It was FABULOUS! (And it just gets better with time as the ingredients get to “marry” in the fridge!)
So do yourself a favor and MAKE THIS DISH! Your tastebuds will absolutely love you! Haha
It’s quick and easy enough for a weeknight meal, and yet has a wow factor that’s perfect for date night or company!!

Ahhh me too…avocado toast is a staple in my house…I was doing scd diet that I picked up from your blog but the fruits and veggies were too much acid for my gut😟 had to throw bready carbs back in!!

I love shrimp. And I love tacos. Yet for some reason I’ve never thought shrimp tacos sounded appealing. This recipe has convinced me otherwise!
