Two things tonight: First….I just painted my fingernails green.
Secondly, I’ve been watching the show Alone on Netflix, and it is really an enthralling show! Basically it’s a wilderness survival competition show. Ten survival experts. Months on end. I am hooked!
Anywho – while I was in Ohio, for Christmas, I discovered my new favorite lunch. It’s super delicious, absolutely beautiful, fast and incredibly filling!
I haven’t really come up with a snappy or flashy name for it yet, but it consists of beautiful smoked salmon, buttery avocado and a champagne vinaigrette.
I’m telling you – I dream about this salad. The combination of the delicious healthy fats with the crunchy veggies all smothered in a bright and fresh vinaigrette — I’m literally salivating right now! (And I had it for lunch!)
Plus, it’s grain and gluten free, paleo, Specific Carb Diet friendly, and Keto!
Here’s What You Need: (Serves one)
3 oz Wild Caught Sockeye Salmon (not farm raised) – cut into bit sized pieces
1/2 avocado – sliced
1 medium carrot, diced
1/2 red pepper, diced
6 grape tomatoes, halved
handful of spinach
2 Tbsp EVOO
2 tsp champagne vinegar
Salt and pepper
Good Chef’s Knife
Small mixing bowl for the dressing
This could not be simpler. On a bed of spinach, top with your diced veggies, half of avocado, and smoked salmon.
In a separate bowl, whisk together the dressing ingredients. (I like to make a huge batch of this and always have it on hand, it’s that good!)
Drizzle liberally with the dressing, snap a photo — because it’s BEAUTIFUL — and enjoy!
OK – when I tell you this salad has exactly everything you want in a salad, I mean it! (OK, maybe some Texas Toast – style buttery croutons…but hey…this gluten free and grain free gal is doing the best she can!)
Anything with avocado, I believe, is the cat’s meow. Seriously. Avocado is the bacon of the vegetables! And it is the star of this salad! It gives this beautiful creaminess and butteriness that pairs perfectly with the crunchy veggies, the meaty smoked salmon, and the bright pop of champagne vinaigrette!
That combination of protein and healthy fat gives it the staying power to last you to dinner!
And did I mention how beautiful it is?! I made my avocado into a rose — which I did a tutorial of on Instagram…if you follow me there (@beauty.beyond.bones) you can check out all my fun extra stuff like that! And then with my smoked salmon, I arranged it to also look like flowers.
You eat with your eyes first, and this salad definitely is a feast for the eyes, as well as the stomach!
So go ahead, and make this healthy and tantalizingly delicious salad for lunch this week. I guarantee it won’t be the last time you have it!
