Friends. I am about to share with you my all-time favorite food.

I’m going to be honest, I eat this about five times a week, no exaggeration. It is literally the best thing to come out of my kitchen.
Feast your eyes on my STRAWBERRY PIÑA COLADA ICE CREAM!
There’s no rum in it….although you certainly could if that’s your jam. But this baby is non-alcoholic.

It is seriously the most creamy, sweet, bowl-licking level-of delicious ever.

And you want to know a secret? It’s made from frozen bananas!
Yep, that’s right – there’s NO DAIRY IN IT!
AND NO SUGAR!! It’s completely natural.

I’m telling you, your taste buds are going to think you escaped to a lanai in Hawaii when you eat this. It is that good.
((And only takes 3 minutes to whip up!))
Now look, I know what you’re thinking…….but it’s bananas? How could it really be that good?
Well, friends…trust me, there is magic that happens in the freezer when you freeze and then blend bananas in the food processor. It becomes like the consistency of old-fashioned, ice cream-truck SOFT SERVE!

And I don’t have to tell you how incredibly healthy it is too. 😉
Gluten free, Paleo, Specific Carb Diet friendly, Vegan.
So grab your spoons and bring on the ice cream!
*One quick note: to get this gorgeous consistency, you’re really going to need a food processor. (Or a Vitamix will also work.) But a regular blender unfortunately just won’t do the trick. I use this Cuisinart Pro Classic food processor and absolutely love it.
Here’s What You Need: (Serves 1-2)
2 very ripe bananas, (read: with brown spots) sliced into coins and frozen
1 cup pineapple chunks, frozen
1/2 cup strawberries, frozen
1/4 cup coconut milk, cold
Optional: 1 tsp honey or 1 tsp liquid stevia (this is the brand (and flavor) I think is the tastiest!)
Optional Garnishes: (highly encouraged)
A cocktail umbrella 😉
A gob of almond or peanut butter (SCD use almond)
Shaved coconut
Chopped macadamia nuts (or cashews, almonds, peanuts, pistachios, etc)
Fresh pineapple or other fruit
Sprinkles
Granola
Chocolate Chips
A gob of Nutella
Tools:
Food Processor (like my Cuisinart Food Processor) or a Vitamix
Ziptop baggies
Silicone Spatula (to scrape the sides)
Directions:
Peel and slice two very ripe bananas into coins and place in a ziptop bag. Freeze until solid, at least 4 hours. Preferably overnight. (PRO TIP: I buy bananas in bulk, let them get extra ripe and covered in brown spots, and then slice & freeze a bunch of them in individual baggies. That way, they’re ready to go when I want to make smoothies or nice cream!)
Add the frozen fruit to the food processor, and blitz until they form little pebbles.
After about 10-15 seconds, the chopped up fruit pebbles will stick to the side of the food processor, and the blade will have nothing to chop up. It is at this magic point, that you add the coconut milk to the food processor. Let that go for about 10 seconds.
Then, stop the food processor, and scrape down the sides, and then keep processing until it comes together and forms a creamy, soft-serve consistency. You’ll need to scrape the sides 2 or 3 times, to help the food processor out.
Lastly, drizzle in your sweetener of choice, and process for 30 seconds, to fully incorporate throughout. (Or omit and simply eat as is, it’s certainly sweet enough!)
Dish up this beautiful Piña Colada ice cream, sprinkle with your topping of choice (such as granola, raisins, shaved coconut, chocolate chips, honey etc.) and DIG IN!

Oh my gosh, words do not do justice to how dang delicious this ice cream is!
It is wild that you can get this incredible consistency from frozen fruit! It is literally like SOFT SERVE!

It’s melty, creamy, rich and filling. And the coconut milk really gives it this beautiful body that is mmm mmm mmm – just heavenly.

And the flavor – wow, wow, WOW! It tastes like vacation. The super sweet pineapple and rich coconut, with that intense sweetness from the ripe banana, all you need now is the rum!
And in case you were wondering my topping of choice, I like to add about 1/4 of fresh-ground almond butter…and make it a meal! Who says you can’t have ice cream for dinner!?

I’ve made nice cream without bananas before because I didn’t have bananas. I used a frozen fruit mix and just blended it until smooth! I think it was a strawberry-peach mix 🙂

So here it gets even better…allergic is my life, lol 😂. I have learned to very much accept it. I am very allergic to coconut too, tree nuts, and I will spare you the list. It is so long, let’s just say I don’t eat at potlucks. I carry and Epi-pen and Benadryl on my person. The joys of our human frailties 🥰

Just teasin’. Anita and I often pick up bananas (you know, they are the most consumed fruit in America now?) and when we have them on hand I usually have a quick shake for breakfast using a Cuisinart stick-mixer and Ensure. But we will try freezing some per your recommendation. Thanx!
