Healthy Hamburger Soup!

Hello my dear friends and Happy Wednesday!

We’re chugging along through another week, and as promised, I am going to share with you one of my new MEAT dishes that I’m currently LOVING!

Introducing my Healthy Hamburger Soup!

Think rustic vegetable soup with grass-fed ground beef!

It is so cozy and warm, and delicious, and filling, and just PERFECT for this time of year! (I don’t know about you but it’s been in the 20’s here in Cincinnati this week!)

Plus, this soup is gluten free, grain free, AND on the Specific Carbohydrate Diet!

Here’s what you need: (Make 5-6 servings)

1 lb 100% grass-fed (and grass finished) ground beef
1 yellow onion, diced
5 cloves garlic, minced
2 large carrots, rough chop
6 celery stalks, rough chop
1 head of broccoli, chopped
1 cup frozen peas
1 red pepper, diced
2 tomatoes, diced
5 stalks of kale, stems removed and diced
1 tsp onion powder
1 tsp garlic powder
2 tsp onion granules
2 tsp garlic granules
2 Tbsp Italian seasoning
1/2 tsp freshly ground black pepper
1/2-1 tsp sea salt (add to taste)
3 bay leaves
1 box vegetable stock (THIS BRAND is SCD-legal)

Directions:

In a large dutch oven or soup pot, cook your onion and garlic in 2 Tbsp EVOO. Add a sprinkle of salt and pepper and cook for about 4 minutes, until the onion has softened.

Then, add your ground beef, and break it up, stirring constantly until fully cooked.

Then add your carrots, celery, broccoli and spices, and cook for about 4 minutes. Then add your red pepper and tomatoes and let cook for another 3 minutes. Then, add your broth, kale, frozen peas and bay leaves.

Bring to a boil, and stir the kale into the soup to wilt it.

Reduce the heat to low, cover and simmer for about 35-40 minutes.

Serve, topped with parmesan cheese and (for those not on the SCD): crusty bread.

Oh my gosh this was just divine. Truly: WOW!

It was just bursting with flavor, it was warm and the perfect comfort food!

I love the addition of the fresh broccoli to this soup, along with the peas — they give a surprisingly creamy bite.

And it just gets better with time. The leftovers are magical, and it makes a great freezer meal too!

I’ve already got plans to make this again this week!

  1. Your recipe looks really good. I want to make this soup recipe. As much as I don’t like cooking with raw meat (it’s so slimy and icky) I might let my husband deal with that part.
