I’ll tell you what…my oven is getting a workout thanks to quarantine! I used it three different times today! (My neighbors love me. lol)
I am a firm believer that every day needs to end with something sweet. And I am SO excited to share this sweet treat with you!
Allow me to present: my WHITE CHOCOLATE MACADAMIA NUT COOKIES!

You all loved my Peanut Butter Cup Cookies the other week so much, that I had to deliver another well-loved treat!
Soft and chewy, buttery cookies, chuck full of rich white chocolate, and salty macadamia nuts.

I’m telling you what, I’m beginning to feel like Buddy the Elf, delivering these goodies to my friends.

And to vouch for their goodness, all recipients have confirmed (through enthusiastic text messages) that they are outstanding, and they’re having a hard time not eating all of the cookies in one sitting!
Subway cookies, watch out — your W.C.M.N. cookies pale in comparison with these bad boys!

And really quickly, before I go on — I was so excited to box these up and deliver them, that I actually forgot to take photos!! hahahha (I am a terrible food blogger! haha What a rookie mistake!) SO – the photos are of the “reject” cookies — you know, the ones that broke, or were not as picture-perfect as one would like gift-cookies to be. But that’s real life! And so the photos aren’t perfect, but hey — neither am I, and neither is life! And that’s what keeps it interesting!

Here’s what you need! (Makes 28 big cookies)
1 cup unsalted butter, softened (brought completely to room temperature)
3/4 cup light brown sugar, packed
1/2 cup white sugar
2 eggs (brought to room temperature)
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups roughly chopped (salted and roasted) macadamia nuts
1 1/4 cup premium white chocolate chips
Tools:
2 baking sheets
parchment paper
large mixing bowl
small mixing bowl
measuring cups and spoons
whisk
silicone spatula
good chef’s knife
OPTIONAL: electric mixer or stand mixer
Directions:
Preheat oven to 350 degrees.
In a large bowl, cream together the butter, brown and white sugars, until completely smooth. I used a whisk and elbow grease, but you can also use an electric mixer or stand mixer.
Beat in the eggs, one at a time, until completely incorporated. Then stir in the almond extract.

In a separate small bowl, combine the flour, baking soda and salt. Add this in three batches to the butter/sugar mixer.
Fold in the macadamia nuts and white chocolate chips.
Drop by heaping Tablespoons onto parchment-lined cookie sheets. (Six cookies per tray — they will spread out) Press 4-5 chocolate chips onto the tops of the dough balls for aesthetic purposes, if desired.

Bake for 12 minutes, until the edges become golden brown.

I’m going to be honest, I’ve never made these cookies before, so I was a bit nervous…but WOW! I may have found my new “go-to” cookie recipe! Especially when they’re juuuuust undercooked…they are a little gooey and have that perfect chewy/sticky crumb that is *chef’s kiss.”

Here’s the thing about these cookies that’s so amazing: the macadamia nuts.
Now I know, I know — people are fiercely divided over whether or not nuts belong in cookies. Growing up, I was staunchly on team anti-nuts.

But have you tried a macadamia nut!?!?

I mean, this is an upscale nut. Let’s be real: they are expensive. They are high in calories. AND THEY ARE STINKIN’ DELICIOUS. On their own – made into nut butter, roasted and dipped in chocolate. But combined with vanilla and white chocolate — oooh child.

They have such a rich and buttery taste — macadamia nuts were just made to be the star of a cookie.
And boy, are they ever in this recipe.

These cookies are absolutely bursting with chips and nuts — there is not a boring bite.
And my friends were raving about them. I received pics and videos of the demolished tuperwares. They were a hit and a half.
SO. Make these cookies. And bonus: they make your kitchen smell like absolute white chocolate/vanilla/roasted nut HEAVEN.

Like, call Yankee Candle and bottle this fabulous aroma up and sell it as a $24 jar candle.
And one final tip: in baking — and in life — the final product is only as good as the ingredients that go into it. SO – splurge for the Ghirardelli premium chocolate chips — use the freshest (unsalted) butter and sugar you can get your hands on. Take the extra time to bring your eggs and butter completely to room temperature. It makes a HUGE difference.

Just went to the store and got supplies for a week, so Iβll be making these later. St Paul is ravaged in the Business District on University Avenue. Saw some MN National Guardsmen at a gas Station and thanked them. Peopleβs lifeβs work and essential businesses were torch by antifa and simply gone. Did go to Burger King and went to a beautiful park to eat it. It was bit surreal. Thereβs a police helicopter circling my neighborhood. These look amazing. I have had macadamia and white choc cookies before but have not made them. Whenever I feel like making cookies I usually never have macadamia nuts at home and end up making them with whatever I have.

I am not a sweets guy but I have had these cookies in the past (old man raffertys in new brunswick nj)…. the only thing better is adding a dollop of peanut butter on top… or a slice of nanners (that’s a banana to those unfamiliar)… yum !

Your story reminded me… For the 1999-2000 school year, I was still living near the university I had recently graduated from, with student roommates, but working full time. I had a lot of slightly younger friends who were still students. During every university finals week that year, I set aside one day to make a whole bunch of different types of cookies and bring them to all my friends who were busy studying. That was always so much fun.

Those White Chocolate Macadamia Nut Cookies look and sound disgustingly good! I’d love to make them, however I do have one question. In your list of ingredients, you ask for 1 tsp of VANILLA extract. But in the directions following you say to stir in the ALMOND extract after adding the eggs.
So which is it, vanilla extract, or almond extract? I mean, almond extract sounds like it would be really good, but…
