Arguably the best meal of the day.
You can go sweet. You can go savory. You can eat steak. You can eat bread pudding. Heck, you can even eat cold pizza!
But this morning, let’s eat PANCAKES.
But not just any pancakes…these, on top of being outrageously delicious…are secretly HEALTHY! Yep, believe it or not, these flapjacks are made from BANANAS! No flour here!
It’s hard to believe how good-for-you they are, because they are so delectable. But it’s true! Not only are they PACKED WITH PROTEIN from almond butter and almond flour, but they’re also naturally sweetened, grain and gluten free, paleo and Specific Carb Diet friendly!
And you can whip them up in less than 10 minutes!
(And these are so good, you’ll adopt breakfast-for-dinner like I have!)
I make them for Steven and myself all the time as an afternoon snack or easy, on-the-fly dinner!
Here’s What You Need: (Serves 2)
1 super ripe banana
3 Tbsp almond butter
5 dates, pitted
1/2 cup almond flour
1 Tbsp cinnamon
Dash of salt
1 Tbsp EVOO
5 drops of stevia (optional)
Large nonstick skillet
Throw all the pancake ingredients into the fo0d processor and process until a thick, smooth batter forms. To thin it out, add an additional Tbsp of EVOO oil.
Heat 1 Tbsp EVOO in a large nonstick skillet over medium heat. Spoon 1/4 cup of batter (make four per batch). Cook for 2-3 minutes per side, until golden brown. (I like to undercook mine a little). This will make 8 silver dollar pancakes.
Serve with warm syrup, fresh berries, and enjoy!
Oh my gosh, this meal was SO DANG DELICIOUS! I mean, wow!!!
The texture and flavor of these pancakes is so unique and truly phenomenal. They are denser than my “light and fluffy classic pancake” recipe, but in a good way!
Because they’re incredible most! The combination of the banana, dates and eggs gives it this sticky custard-like texture. Mmm mmm mmm! They are just amazing.
And the flavor!! They’re kissed with just the right amount of sweetness, but the toasted almond flavor with the warm cinnamon, I mean…it’s out of this world.
I make them probably twice a week. It’s my go-to snack! And my handsome gentleman loves them too – they’re one of his favorite things I make! He always requests them! hahah
So do yourself a favor and try these banana pancakes! I promise, you’ll love them too!
