I am so excited — it’s in Park City, Utah! And every year, my family goes, and we ski, catch some films, do some incredibly delicious eating, and just have a grand old time!
And let me tell you — I ski hard. I’ve been skiing (and keeping up with my brothers) since I was five years old, so suffice it to say that I like to tear up the slopes.

But all that time shredding the gnar leaves me quite hungry, so one of the first things I do when I get to our condo in Park City is make a batch of my Apple Pie Energy Bites!
Let’s be honest — they’re really cookies, but they’re healthy enough that I can eat a handful, or stuff some in my pocket without feeling guilty!
They’re packed with protein, and fiber and healthy fats. They’re satisfying and really hit that sweet spot too!
In fact, I like to make them when I have dinner guests as dessert — because let me tell ya, they’re a crowd pleaser!
OK TIME FOR SOME ENERGY BITES!
I originally made these bad boys for my sister-in-law’s baby shower.

And well…that baby is now a darling 6 year old. But these cookies have stood the test of time. They were the hit of the party then, and they’re still a party stand-by now.

Yep! A Gluten Free, Vegan, Paleo, and Specific Carb Diet friendly cookie!
APPLE PIE BITES!

These crunchy little bites were sweet and spicy and utterly delightful!

Here’s what you need: (Makes 35 bites)
12 dates
1/4 cup Almond Butter
1/2 cup almonds
1/2 cup cashews
2 pinches of salt
1 cup of Baked Apple Chips
2 tsp ground cinnamon
Additional:
30 almonds, whole
30 almonds, halved
3/4 cup baked apple chips
Tools:
Food Processor (This is the one I use and LOVE)

Directions:
Put everything (minus the additional ingredients) into the food processor and process until it becomes like coarse sand.
Then, add in your additional 30 whole almonds and additional 3/4 cup apple chips. Pulse several times. (You want them to remain somewhat chunky for texture.)
Finally, stir in your additional 30 halved almonds.
Form balls out of 1 rounded tsp.
Chill for 30 minutes. Makes 35 bites.

Holy cow! What a delicious little cookie! Not only are they cute, but they are SO tasty! They taste just like apple pie! They’re spicy from the cinnamon, and have a fresh, sweet flavor from the apples!

And they’re crunchy and chewy, and I love them chilled! Simply incredible.
Plus — they’re great to snack on on the chairlift — portable energy is what I like to call them!
But be sure to bring extra for your chairlift-mates, because they for sure will want some! hahah

Hi Caralyn, and I must agree with you wholeheartedly especially in light of the fact that I sure need that kind of tranquil idyllic place to Park my heart and soul for such a temporary reprieve; and I have faith its coming being long overdue! Climbing the highest mountains even if not actual physical mountains but only metaphoric ones can be very fatiguing to say the least! In some instances I would prefer the actual mountain to climb, LOL!
