Hello from my quarantine kitchen!

Yep — Day 15 of self-quarantine in Manhattan. Let’s chat real quick about the food situation in NYC.
First, was the run on toilet paper, and hand sanitizer. Then, it was people bulk buying non-perishables. Then, it was just all food in general.
The line to simply get into Whole Foods or Trader Joes is an all-day deal…not to mention the very serious risk of exposure to the virus in the huge crowd.
Amazon Fresh doesn’t have open delivery slots until MID APRIL, and all that to boot – my fridge is pretty tiny, any way, and doesn’t hold all that much.

Luckily, I’ve got a secret little mom-and-pop grocery chain in my neighborhood that delivers, so thankfully I’m doing just fine in the grocery department.
One item that I’ve found really wonderful during these quarantine times is frozen fruit. Granted, finding frozen strawberries is like finding gold in these times, but you can always freeze fresh fruit yourself. (Which I did with my 6 banana-gate bunches).
So this recipe utilizes just that.
PEACH AND PINEAPPLE ICE CREAM!

I have eaten this for dinner the past three nights in a row and I’m not even mad about it.
Because it’s HEALTHY, and such a source of joy! hahah
And the mind boggling thing about it, is that it’s all fruit! The bananas in this recipe make it so incredibly creamy – it’s really quite magical.

Protein, fiber, anitoxidants, vitamin C — there is literally nothing better to be eating during a virus outbreak that supports your immune system so terrifically!!
AND – it’s … wait for it … gluten free, vegan, paleo and Specific Carb Diet friendly!

Here’s what you need: (Serves one hungry quarantine gal, or two people for dessert)
2 Tbsp almond butter, OR 1/4 cup raw cashews
1 cup frozen strawberries
1 cup frozen peachttps://amzn.to/2Ujb3YHhes
1/2 cup frozen pineapple
1/4 cup frozen blueberries
2 frozen bananas
1 non-frozen orange (or 1/2 cup almond milk, or milk of choice)
1 Tbsp honey (or 10 drops french vanilla stevia)
TOOLS:
Food Processor
OR
Vitamix
Spatula
Directions:
First, if you’re using cashews, place them in the food processor alone, and process them until they become a fine powder.
Next, add all your frozen fruit to the food processor, and process until they get all chopped up into little pebbles. Then, add your orange or liquid, and then scrape down the sides of the food processor. Let it process for a couple minutes until it becomes smooth and creamy. You’ll need to stop and scrape the sides/stir it several times. Lastly, add your sweetener of choice, and blitz it for several seconds, until incorporated.
Serve immediately for that soft-serve consistency.
Top with chopped nuts, more fresh fruit, cocoa nibs, chocolate chips, flaked coconuts, a sprinkle of cinnamon, a drizzle of almond butter, dried fruit – like raisins or dried pineapple, granola, cereal, or even sprinkles! Your imagination is the limit!
(OR – you can freeze it, and enjoy later — but the consistency will be more “icy” than creamy.)
OK WOWWWWWWW! People, there is a reason I have eaten this for the past three nights in a row, and that’s because it is SO. STINKIN. DELICIOUS!!

I’m telling you — my body craves it. There’s something about the vitamin C, or the cold and frozen-dessert-ness of it, but this tastes so dang good right now!
There is something so delightful about the combination of peach and pineapple. They’re both such bright and delicately sweet flavors that make this such a special treat.

Combined with the buttery cashews and the tangy-sweet orange, it really is a flavor explosion in your mouth.
And then the texture! I’m telling you — Dairy Queen wishes it could be this creamy! The bananas give it this body and creaminess that is truly a delight. It feels decadent and rich — it’s hard to believe that it’s made with only fruit!
Finally, this is such, a) a budget friendly meal, but also – b) it’s something that I always have on hand to whip up if I’m low on groceries, or just wanting a sweet treat before bed. Freezer staples are awesome items to have on hand. And even before my quarantine banana fiasco, I always have little ziptop baggies of sliced frozen banana coins in my freezer, just waiting to be made into a frozen delicacy.
Because that’s the thing: this recipe can be personalized to your liking! So long as you use two frozen bananas and 1/4-1/3 cup of liquid, the rest of the ingredients are to your personal taste! I’ve substituted the liquid with coffee, you can use any type of fruit juice, I’ve used non-frozen cotton candy grapes, you can use plant milk. ANYTHING!

So there you have it! I hope that this recipe can bring your quarantine a little sparkle and joy like it has for me!

Awesome, I was wondering if you actually do from that photo, I’d be there have the same appetite for my treats, you just don’t do it too often then its fine! At least in my case it works been this way since a child when I would hunt early in the morning looking for my dad’s cache of chocolate bars which was his big treat after working hard all day siting up late watching late movies and pigging out, he had to get clever were he hid them but I was a regular sweets seeking missile and would home-in for the kill! It was a cat and mouse routine kinda, and he was surprised how I would figure out where the loot was! 😜 🤣 👍 🇺🇸

Looks great. A friend showed me how to make ice cream with fruit, coconut milk, and vodka. 🙂 Perhaps I’ll dig up the recipe, but use almond milk instead.
In my community, the grocery store has switched almost everyone to self-checkout with attendants who clean the stations after each use. For me, that was odd, since I love talking to the cashiers and baggers. small town joys
The really odd thing was that a lot of items were on sale because the shelves had been picked almost-clean and a new delivery was expected. I got a loaf of the whole wheat for 59 cents, three limes for a dollar, and an entire chicken for $5.
I have to be careful, or I’m going to gain weight during this shutdown.

It looks like Watermelon! lol I am from NYC, but my career and getting blizzard-weary took me south of the Mason-Dixon line long ago, so not experiencing anything near what you guys are out there. Still suspicious about the origin of this “plague”, but they all pass eventually. Its like a reset from the Gods. Take GOOD care.

That looks mouth-watering awesome-yummy!
See now, where I’m at things aren’t so rough. The people are pretty calm, and the food situation is still just fine.
However, I came up with my own quarantine recipe (that would be the complete opposite of yours).
One slice of Grandma Sycamore’s white bread—toasted.
After bread is toasted you butter it and put a slice of American Cheese on it.
Place one (or two) slice(s) of Hickory Smoked Spam in pan and cook one side.
When that side is done, flip the Spam over and if only one slice add one egg into pan (next to Spam) to cook—do NOT break the yolk. If two slices, move them to the sides of the pan and drop egg in between.
Crumble some Lay’s BBQ chips over egg—for flavor.
Once egg is cooked, but yolk is still liquid, flip onto bread—yolk side down.
Drizzle Sweet Baby Ray’s Hawaiian BBQ sauce over the top.
Before eating, use fork to press down and break yolk—as it runs over the side of bread, allow bread to soak it up.
Disclaimer: It tastes amazing, but I am sure it is not something that should be repeated often (or at all).
Seriously though, that ice-cream looks like a super yum sherbet! Thanks for sharing!

Also, it’s crazy that grocery stores are that crowded in NYC! I live in SoCal where things are a little more spaced out, so fortunately we’re not dealing with overcrowded grocery stores. But everything is pretty much wiped out here, too.
