T’was the eve before Thanksgiving and the turkey was prepped.
The potatoes were mashed and the kitchen floor swept.
The feast was all ready, the only thing left
Was sleeping and dreaming of the feast coming next!
But, wait! Interjects this blogger, B3,
There’s a forgotten meal not consisting of turkey!
And that of course, is brunch — the meal of champs,
Where anything goes with a glass of crisp “champs.”

So crack a few eggs, and greet the day,
Because Thanksgiving is 24 hours, I say.
This bougie beginning is surely a star,
An herby omelette topped with CAVIAR!

So enjoy this recipe, gluten free and fair.
And share it with people you love and care.

Haha, ok that was fun to write 🙂 But let’s get down to business, because this Smoked Salmon Herbed Omelette is seriously one of the most delicious things I’ve ever made!
And definitely the fanciest!
And quick note…I don’t always just have caviar lying around my apartment. No way. I had some leftover from a “Champagne and Caviar” night I hosted for a couple friends last weekend. It was really fun. After bumming around our apartments in sweatpants for all of quarantine, it was nice to have an excuse to get all gussied up!
Here’s What You Need: (Makes one omelette)
3 eggs, beaten
1 Tbsp fresh chives, chopped
1/2 cup fresh spinach, finely chopped
2 Tbsp EVOO
Salt and pepper
4 pieces of smoked salmon
1/2 tsp caviar
Garnish:
Minced chives
Capers
**Dairy options: If you can have dairy, I would reccommend a slice of brie or goat cheese, or a dollop of creme fresh.

Tools:
Nonstick omelette pan
Spatula
Good Chef’s Knife
Mixing bowl

Directions:
Crack your eggs into a small mixing bowl, and whisk in your spinach, chives, salt and pepper. (I used 2 healthy pinches of salt and about 10 cracks of freshly ground black pepper.)
To my omelette pan, I added 2 healthy tablespoons of oil, and let that heat over medium heat. Then, I poured my egg mixture into the pan and let it sit. After about a minute/minute-and-a-half, once you see the bottom has set but the top is still liquidy, I carefully tilted my pan so that the liquid could slide to the rim of the pan, and slowly swirled it around so that it would cook along the surface of sides of the pan, thereby increasing the surface area of my omelette.
Then, I ran my silicone spatula around the edge of the omelette, to make sure it would come off, and then gave it a quick little flip. I let that cook for literally, 10 seconds, and then folded it onto a plate.
**Dairy-full Optional here: This would be a great time to add some brie cheese or goat cheese if you can have cheese. I would put a slice into the center and fold the omelette over it so it would melt.
Top your folded omelette with some slices of quality smoked salmon, chives, capers and 1/2 tsp caviar. You may also add a dollop of creme fresh if you so choose.
Serve immediately.

Well, well, well, if this isn’t just the prettiest, most fancy little breakfast I ever did see!
And she isn’t just a pretty picture…this was hands down, one of the best things I’ve ever eaten.

And, I know, I know, I do tend to say that a lot. But the fact is, this was amazing.
I happen to love eggs in the morning. Which is honestly a new thing for me. And this omelette has so much flavor with the chives and the onion. It gave this perfect subtle depth to the flavor punch of smoked salmon. And the caviar! My goodness. I have only had caviar a couple times in my life, and I just love the salty little *pop.* I have to force myself to forget about the fact that I’m literally eating fish eggs…eww… but honestly, they add this unique ocean water flavor that I just can’t describe any other way.

Finally, it goes without say, that this was just a really special treat. It’s not every day that you eat fresh salmon and caviar in the morning. Definitely a “highly special occasion” meal that is just perfect for Thanksgiving. Especially if you’re spending it away from home and needing a little something special to help you forget about the fact that you’re not at home eating pilsbury cinnamon rolls with your family watching the Thanksgiving Day parade while helping your mom prepare her famous “drunken turkey.”

By the way, not sure if anyone has ever mentioned it, but you should consider making a cook book if these are your own original recipes. Besides the delicious food, the pictures would sell the book too! Would certainly boost your income and help those who have food intolerances etc. and are on specific diets. Just an idea!

Brought back a good memory of my mother – I wanted to taste caviar, so she got melba toasts, lemon and sour cream. I can say I will never try caviar again, but I relish the memory. She was so creative with the way she brought me up.
