I’m writing this from Newark airport, as I am on my way home to Ohio for Chirstmas!
Boy, do I have a special recipe for you tonight!
Introducing my Strawberry Banana Ice Cream!
This is my favorite food.
Hands down. I eat this – I’m not even kidding – four to five times per week. It is that delicious.
It’s healthy enough to eat every day, and delicious enough to make you feel like you’re having dessert for breakfast!
I’m going to let you in on a little secret…and that is the magic of frozen bananas.
Let me tell ya — there’s something magical that happens when you freeze bananas and then blend them in a food processor or Vitamix. The texture becomes that of soft serve ice cream. Seriously – it is the most amazing thing.
It’s fluffy and melty, and truly one of my absolute favorite foods in the whole world.
And by adding frozen strawberries, it gives it this beautiful pale pink color, and a kiss of subtle strawberry flavor. It’s just divine.
And when you top it with almond butter — holy cow…NEXT LEVEL! It’s like a dessert form of PB&J!
Plus – it’s super healthy. Not only is it refined sugar free, but it’s also vegan, Specific Carb Diet friendly, and gluten free!
So, without further ado…
Here’s What You Need:
1 cup frozen strawberry slices
2 frozen bananas (cut into coins before you freeze for easier blending)
1 tsp cinnamon
1/2 cup ice cold water or almond milk (This brand is SCD-friendly)
Optional: 2 tsp honey or liquid stevia. (I prefer this brand)
Tools:
Food Processor
or
Vitamix/high powered blender
Ziptop baggies
Directions:
Peel and slice two very ripe bananas into coins and place in a ziptop bag. Freeze until solid, at least 4 hours. Preferably overnight. (PRO TIP: I buy bananas in bulk, let them get extra ripe and covered in brown spots, and then slice & freeze a bunch of them in individual baggies. That way, they’re ready to go when I want to make smoothies or nice cream!)
Throw all of your frozen strawberries into the food processor and process until it forms a bunch of little pebbles. Then, scrape down the sides and add your liquid. Continue processing until it’s formed a beautiful, fluffy, frozen soft-serve-like consistency. (You may need to scrape the sides an additional time or two. Finally, add your stevia or honey at the end and then blend until just incorporated.
Serve immediately.
Fun toppings include: sprinkles, granola, chocolate chips, cinnamon, berries or other sliced fruit, a glob of Nutella, shaved coconut, chopped nuts, a drizzle of chocolate or honey. Or my personal favorite: a glob of freshly ground almond butter!
OK – if you follow my Pinterest, then you know that I make this A LOT. And for good reason: it is phenomenal!
I kid you not, if there was only one meal I could eat for the rest of my life, this is it.
It’s cold and creamy, and light and fluffy. It melts like ice cream. Is sweet and refreshing.
I will literally layer up in a sweatshirt and blanket just to eat this during the winter.
The subtle hint of cinnamon in this ice cream is so nice. It adds a subtle warmth that lingers after every bite. I just love it.
When I make this at home, my nieces — and mother — all line up to get a spoonful from the food processor.
I mean just look at it — how gorgeous!
So do yourself a favor: Make this for breakfast. Have it as as snack, or a healthy dessert. And revel in the glory of FROZEN BANANAS!!

I’ve done the frozen banana ice cream – I think it was your recipe for that, too? ‘Anywho’, this looks like a nice enhancement we will try … maybe when it gets a little warmer. We’re spoiled in KY and think that 45⁰F for a high is coooold. 😉
