And even though I’ve had to cancel my Christmas party because I’m sitting here with covid doesn’t mean that I can’t dream about the cookies I would have made!

This is everyone’s favorite Christmas Cookie! Peanut Butter Blossom Cookies! Hershey kisses in a decadent peanut butter cookie! They’re a classic for a reason!

These are super simple to make and I’m willing to bet you already have all the ingredients on hand!

**Fun note: You may use red and green colored granulated sugar instead of white sugar to roll the cookie dough in before baking, to add a festive Christmas touch.

Here’s What You Need: (Makes 2 dozen cookies)

Ingredients
1¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
4 ounces (1 stick) butter, at room temperature
½ cup smooth peanut butter
½ cup granulated sugar, plus more for rolling **(May use red and green colored sugar for the rolling step for Christmas-styled cookies)
½ cup light brown sugar
1 large egg
1 tablespoon milk
1 teaspoon vanilla extract
Nonstick spray or vegetable oil for cookie sheet (optional)

5 dozen (one 11-ounce package) Hershey Kisses

Step 1: Sift together flour, baking soda and salt; set aside. Using an electric mixer, cream together butter, peanut butter, ½ cup granulated sugar and light brown sugar. Add egg, milk and vanilla; beat until well blended. Gradually add flour mixture, mixing thoroughly. If the dough is very soft, refrigerate for about 1 hour.

Step 2: Preheat oven to 375 degrees. Spray, oil or line a cookie sheet with nonstick liner and set aside. Roll dough into 1-inch balls. (For a precise number of cookies, divide the dough into 5 pieces, and shape each piece into 12 balls.)

Step 3: Roll cookies in sugar and place 2 inches apart on cookie sheet. Bake until very light brown and puffed, 6 to 8 minutes. Remove sheet from oven and lightly press a candy kiss into center of each cookie, allowing it to crack slightly. Return to oven until light golden brown, 2 to 3 minutes.

Step 4: Remove from oven, cool completely and store in an airtight container.

Man, oh man, are these ever a hit!

My mom made a batch of these when we were up in Wisconsin at the end of the summer, and let me tell you what – there was not a single one left after the first day.

People absolutely love these, because they really play up the classic combo: chocolate and peanut butter.

I think the Reese’s peanut butter cup really has a cap on the market when it comes to that flavor combination, to the point that it overshadows all the other variations of this sweet and salty combo.

The combo of the the chewy, deeply nutty peanut butter cookie, paired with the pure, unadulterated milk chocolate, in form of a Hershey’s kiss…it is unbeatable.

That is, unless you eat it in the way my mom likes to:

She puts it on a plate and microwaves it for about 15 seconds so that the Hershey kiss gets nice and soft and gooey. It is unparalleled perfection.
