Hey friends and Happy Wednesday!
It is a beautiful summer day here in NYC. I’ve got an installed, working air conditioner, and a potluck picnic on the horizon, so that means one thing…TIME TO BAKE SOME COOKIES!
Yes! With the bars and clubs still closed, thanks to COVID19, picnicking has become this summer’s “hotspot.” And this Friday, my friends and I are doing a potluck picnic for dinner, so what better treat to bring than cookies?!
Now, here’s the thing — I have been doing some baking recently. And yes – these cookies are not something that I can personally enjoy, because they do not adhere to the Specific Carb Diet, which I follow to keep my Ulcerative Colitis in remission.
BUT – sharing the joy of food with other people is one of my all time favorite things to do! Cooking is a love language, people. And don’t let anyone tell you otherwise!
So – in addition to my fabulous Fiesta Shrimp and Avocado Salad, I’m going to making these OUTRAGEOUS cookies!
(And if you want me to highlight the salad recipe next week, let me know! It’s also a winner!)
But…without further ado…drumroll please…
Introducing my BUTTERFINGER COOKIES!
They’re chewy, they’re peanut buttery, they’ve got a kiss of toffee and chocolate. But best of all…they’re PACKED with BUTTERFINGERS!
I don’t know about you, but growing up, during Halloween, I had my radar set on one candy, and one candy only: Butterfingers.
Sure, I loved Snickers. And Starburst were fine too.
But those butterfingers were like literal gold.
So I cannot imagine a better cookie than this childhood dream!
Here’s what you need: (Makes 30 cookies!)
1/2 cup butter, softened
3/4 cup sugar
2/3 cup brown sugar, packed
1 cup peanut butter
1 1/2 tsp vanilla extract
1 cup all purpose flour
1/2 tsp baking soda
1/8 tsp baking powder
1/4 tsp salt
5 (2.1 oz) Butterfinger candy bars, chopped
2 (1.63 oz) bags peanut butter m&m’s
Preheat oven to 350 degrees.
In a large mixing bowl, cream the butter and sugars until perfectly smooth. Use either an electric mixer, or a whisk with lots of elbow grease. Add the eggs and beat until creamy.
Then add in the peanut butter and vanilla, until well combined.
In a smaller mixing bowl, combine the flour, baking soda, baking powder, and salt. Add to the egg/PB/sugar mixture to combine. Stir in the candy bars and m&m’s.
Drop by heaping Tablespoons onto a parchment-lined baking sheet.
Bake at 350 for 12 minutes, or until the cookies just start to turn brown. Do not over bake.
Let sit on the cookie sheet for a few minutes before transferring to a flat surface or wire rack to cool completely.
Or, of course, eat one warm, preferably with a scoop of vanilla ice cream!
OK. SO. The verdict is in, and these cookies were A HIT AND A HALF! They were polished off, not a single one left!
My friends were obsessed with the huge chunks of butterfingers, and of course, the peanut butter m&m’s! They thought the m&m’s were regular chocolate candies, so they were all so pleasantly surprised to find more peanut butter inside!
And these were not wimpy cookies! They were big, and although they had so much “going on,” they were super soft and chewy!

I brought my blueberry muffin bites, and oh my gosh, I was in cookie heaven, too!
If you have someone in your life you care about…make them these cookies. They will be such a happy camper!
