Hi friends and happy Wednesday!

OK – I officially have a new favorite, go-to meal! It is insanely simple, only takes a few ingredients, and can be whipped up – start to finish – in 20 minutes!

Plus, it’s perfectly healthy! Talk about that for a weeknight favorite!
Oh yeah, and did I mention it’s absolutely delicious too?

OK, OK — so what is it?!
Savory spinach and cauliflower rice with baked fish!
Now, before you scratch your head, or run the other way at the thought of “cauliflower rice” — let me assure you that it is absolutely BURSTING with flavor! And, as evidence: all of my family members loved it! Even the kiddos!

SO – let that just be a testament to it’s deliciousness!
And it’s grain and gluten free, paleo, keto, and Specific Carb Diet friendly with a Vegan option!

Here’s What You Need: (Serves 1)
One 1/2 lb filet cod, salmon, halibut, or other fish — OR vegan protein of choice
1/2 lemon
1 herb sprig: I used rosemary
1/2 avocado, sliced
Cauliflower rice:
1 head cauflower, riced
2 cloves garlic, minced
1/2 onion, small dice
3 baby bella mushrooms, sliced
1 cup baby spinach
1/2 cup green beans (fresh or frozen)
2 Tbsp tamara (gluten free soy sauce) – or Coconut Aminos (SCD/keto option) – or regular soy sauce
1/2 tsp toasted sesame oil
2 Tbsp EVOO
Salt and pepper
TOOLS:
Large, nonstick frying pan
Food processor
Good Chef’s Knife
Measuring spoons
Nonstick tinfoil

Directions:
Preheat the oven to 400 degrees.
On a tinfoil-lined baking sheet, place your fish filet. Drizzle it with 1 Tbsp EVOO, the juice of 1/2 a lemon, salt and pepper. Also, top it with an herb sprig, and a slice of lemon. Bake for 20 minutes, until it begins to flake.
While it’s baking, make your cauliflower rice. You can either buy store bought, or use the food processor, which is what I did. Take your head of cauliflower and break it into florets. Place the florets in the food processors, and pulse it until it breaks up into small pieces. (Don’t just let the processor run, or the rice will become too fine and as a result, watery.) There may be a couple larger pieces of cauliflower – that’s okay!

In a large, nonstick pan, heat 2-3 Tbsp EVOO. Add your onion and cauliflower, salt and pepper, and stir to combine. Let cook for about three minutes, then stir in your garlic. Stir that around, and let cook for another 3 minutes. Then, add in your mushrooms and green beans. Let cook for 3 more minutes, then add in your spinach and stir it until it wilts, about 2 minutes.
Finally, add your tamari (or soy sauce of choice) and toasted sesame oil. Stir to combine. Serve warm.

To plate: place a bed of the cauliflower rice on your plate. Top it with 1/2 of your avocado, and the fish filet.

OH MY GOSH – THIS IS AMAZING. Honestly, I can’t believe you can produce something this gourmet tasting and elegant looking in less time than it takes to make Kraft Macaroni and Cheese! I’m serious! It’s so quick to whip up, and only uses a couple ingredients!
Here’s the thing: once you have the tamari (or soy sauce of choice) and the toasted sesame oil in your pantry, a) your options are endless, and b) you always have an easy and fast dinner available!

I can’t even begin to describe how amazing this tastes! There’s this warm earthiness from the mushrooms and soy sauce/toasted sesame oil. It’s a very familiar flavor from your favorite Asian takeout restaurant, but with this fabulous nuttiness. There’s a really beautiful thing that happens with cauliflower when you brown it on the stove or oven…it truly takes on a nutty flavor…honestly like buttered toast!
And then, when you add to it the rich, luxurious and buttery avocado — it’s creaminess is the perfect compliment!
And the meaty and herby fish. When you combine all three it is the perfect bite!
It’s hard to believe how easy it is to make! Seems too good to be true!

And if fish isn’t your thing — it would also be great with chicken or even steak! Just don’t forget the avocado — it’s the best part!

I made this dish the other night for my wife and is was a delicious dinner. I changed it by doing shrimp. After making the veggie base, I fried the shrimp in rosemary olive oil and the meal became a one pan meal. As we ate we discussed using other greens in place of the spinach and also other proteins. The base vegetables were inspiring future meals. And there was enough for two lunches! Thank you.
