Soup season is at it again!
Hello friends and happy Wednesday!
Boy, do I have a treat for you!
Grab your blanket and a Hallmark movie, because tonight we’re tucking into the coziest soup available: Beef Stew!

Now listen — soup always gets a bad wrap for being…whimpy.
Like, “Soup for dinner? Meh…Sounds like I’ll be hungry again later.”
Well friends, this is the antithesis of whimpy!

This soup is like the sumo wrestler of soup! It packs a punch and has some serious staying power!
Massive hunks of tender, melt-in-your-mouth beef, in a thick, creamy (and cheesy) broth, all cuddled together with perfect fall vegetables!

And the best part: it’s Keto! Which means that it’s ALSO Specific Carbohydrate Diet friendly, Gluten Free, and Paleo!

And you can have it whipped up in less than an hour! (Minus the simmering).
But seriously…just look at that meat…

Alright, without further ado, let’s get cooking!
Here’s What You Need: (Serves 4)
1.5 lb stew meat (chuck roast) – cut into large bite-sized pieces (I had my butcher do this)
6 Tbsp EVOO
2 cups carrots, large dice
2 cups celery, large dice
1 large yellow onion, diced
4 garlic cloves, minced
1 zucchini, sliced
1 cup green beans, chopped
1/2 bag frozen green peas
1 can kidney beans, drained and rinsed (Keto/SCD, omit)
1 tsp garlic powder
3 tsp oregano
3 tsp dried basil
1/2 tsp chili flakes
2 bay leaves
Salt and pepper
2 tsp Worcestershire sauce
4 cups beef broth
1/2 cup freshly grated parmesan cheese
Tools:
Dutch oven or large stock pot
Good chef’s knife – this is the one I use and love
Wooden Spoon
Tongs
Directions:
Heat a large stock pot or dutch oven, over medium high heat. In two batches, sear your beef chunks in 2 tsp EVOO. Cook for 2 minutes per side, until brown but not cooked through. Do not crowd the pan. Remove the meat and set aside on a separate plate while you cook your other veggies.

Add about 2 Tbsp EVOO to the pan, and cook your onions, carrots and celery for about 4 minutes, until the onions are translucent. Then, add your green beans, garlic and spices and cook for 2 minutes. Next, add your zucchini and kidney beans, and cook for another 3 minutes.
Finally, add your beans. Give them a toss, and then add the frozen peas, the beef chunks, bay leaves, Worcestershire sauce, and the beef broth. Cover and simmer on low for 2 hours. At the 1:45 mark, add your freshly grated parmesan cheese, and let that cook for the final 15 minutes.
Serve with crusty bread and a final sprinkle of parmesan.

Oh my goodness, where to even begin with this amazingness?? I made this soup for Steven and he ate it for lunch and dinner for 2 days straight and loved it! He couldn’t get enough!

The best part, is the beef – because by cooking it low and slow, it become just melt-in-you-mouth tender. Just buttery and delicious, with those little brown bits of caramelization from the initial searing process. It’s phonomenal!
But the BROTH! Oh wow – this is a close second to the show-stealer! The combination of the savory beef and the salty parmesan cheese with those fabulous herbs — it’s bar none! The perfect Jacuzzi for all those delicious veggies and beef!
TLDR: this is the best thing you’ll eat all week, I promise! Do yourself a favor and make this tonight!
