Hello friends!
And hello first recipe of 2022!
I am so excited to share these little babies with you, because let me tell ya…they are a fail proof STAND BY!

Anytime I need to whip up something to bring to a party or a gathering that is healthy and delicious, these are my go to!

Because sure, my Peanut Butter Cup Cookies are heaven on a plate, but sometimes…like at the beginning of the year, we want something a little healthier, but without sacrificing the taste. And baby, these are they!
Made with whole food ingredients, like baked apple chips, almond, cashews, dates and almond butter – you can feel good about popping one after another after another!
And when you gussy them up with a white and dark chocolate drizzle, honeyyyyy they are dressed for the ball!

In fact, I made these — by request — for my New Years Eve gathering.
And they’re gluten free, vegan, Specific Carb Diet friendly, and paleo!

And here’s a fun story: When my special gentleman and I first started dating, our apartments were about as far away from each other as you can get in Manhattan — diagonal uptown vs downtown. And so in the summer, when he’d ride his bike down to see me, I’d always have some of these for him to take home, to refuel when he got back after the 30 minute bike ride one way. 🙂

Here’s What You Need: (Makes 22 cookie balls)
20 dates, pitted
1/4 cup almond butter (I use fresh ground, but you can also use a store-bought with just almonds as the ingredient!)
1/2 cup raw cashews
1/4 cup + 8 raw almonds (divided)
2 cups baked apple chips (divided)
2 tsp ground cinnamon
2 healthy pinches of salt
1 tsp vanilla extract
Optional Drizzle: (SCD and Paleo: omit)
1/4 cup white chocolate chips
1/4 cup semi-sweet chocolate chips
1/2 tsp coconut oil, divided
Tools:
Food Processor
Parchment Paper
Pyrex measuring cup
Throw your dates, almond butter, 1/2 cup cashews, 1/4 cup almonds, 1 cup baked apple chips, cinnamon, salt and vanilla into the food processor. Process until it resembles wet sand, and is starting to clump together.

Then, add your remaining apple chips to the food processor, and pulse several times. (You want them to remain somewhat chunky for texture.)

Form balls out of 1 Tbsp spoonfuls. (Roll in your hands, and then set on parchment paper.)
If desired, you can drizzle the balls with white chocolate and/or dark chocolate.

To prepare your drizzle, melt your baking chips + 1/4 tsp coconut oil in a microwave safe dish or pyrex. Microwave at 30 second intervals, stirring frequently. Then, once it is all drizzly, with a fork, drizzle over your bites, as much or as little as you’d like!
*Pro tip: These are best served cold.

OK WOW – what a treat are these!?!
The flavor and texture of these beauties is bar none. Truly. Imagine a rice krispy treat, but then add sticky dates and crunchy nuts. mmm!!
The baked apple chips have this wonderful crispiness to them that is complemented so much by the hearty, chewiness of the date dough.
And the flavor…WOW! The warm cinnamon and the cozy vanilla, paired with the nuttiness is so delightful, it truly tastes like the homiest apple pie ever.
And topped with the dark and white chocolate, it’s out of this world!

It’s no wonder my friends always request that I make these for gatherings!
So do yourself a favor and make these little guys! They’re the perfect healthy treat for when that sweet craving strikes, or a delicious snack, or if you grab a few: an on-the-go breakfast!
