Behold, my all time FAVORITE FOOD.
Truly, I think if I could only eat one thing for the rest of my life, this would be it.
My Sunshine Ice Cream is what dreams are made of!

Why sunshine? Well — this is not because it’s the perfect treat for a sunny day — but rather, because the main ingredients are…yellow!
That’s right! Bananas and Pineapple team up to make the most amazing, creamy, delicious frozen treat you’ll ever enjoy!

Seriously, everyone I make this for is HOOKED, and literally goes out and buys a food processor the next day so they can make it themselves!
Now that’s saying something!
It’s gluten free, it’s dairy free and vegan, it’s sugar free and on the Specific Carbohydrate Diet...and it is 100% kid-approved!

Here’s What You Need: (Serves 1-2)
2 ripe bananas, cut into coins and frozen
1 cup pineapple chunks, frozen
4 strawberries, frozen
2/3 cup ice cold almond milk (or water)
Optional: 1 tsp honey or stevia
Tools:
Food processor
Zip top baggies
Directions:
Peel and slice two very ripe bananas into coins and place in a ziptop bag. Freeze until solid, at least 4 hours. Preferably overnight. (PRO TIP: I buy bananas in bulk, let them get extra ripe and covered in brown spots, and then slice & freeze a bunch of them in individual baggies. That way, theyβre ready to go when I want to make smoothies or nice cream!)
Throw all of your frozen fruit into the food processor and process until it forms a bunch of little pebbles. Then, scrape down the sides and add your liquid. Continue processing until itβs formed a beautiful, fluffy, frozen soft-serve-like consistency. (You may need to scrape the sides an additional time or two. Finally, add your stevia or honey at the end and then blend until just incorporated.
Serve immediately.
Fun toppings include: sprinkles, granola, chocolate chips, cinnamon, berries or other sliced fruit, a glob of Nutella, shaved coconut, chopped nuts, a drizzle of chocolate or honey. Or my personal favorite: a glob of freshly ground almond butter!
Let me tell ya β thereβs something magical that happens when you freeze bananas and then blend them in a food processor or Vitamix. The texture becomes that of soft serve ice cream. Seriously β it is the most amazing thing.

Itβs fluffy and melty, and truly one of my absolute favorite foods in the whole world.
It’s hard to believe it’s so healthy!!!

And I’m telling you – top it with almond butter! It takes it over the top!
So there you have it — freeze those bananas and make it tonight!!
