It’s summertime, so you know what that means!
Aka: frozen bananas that have been blended up in the food processor with other frozen fruit, into the most creamy, luxurious soft serve ice cream!
Aka: my most favorite food in the world, and something that I eat multiple times a week!
Well I’m here to share my most favorite combination: two words: ALMOND BUTTER.
That’s right – freshly ground almond butter!
And combined with my blueberry ice cream, it tastes like the most delicious blueberry pie!
I literally had this for breakfast this morning and it was the PERFECT start to my day!
And it’s not only bursting with flavor, but also with antioxidants, vitamins, protein, nutrients, fiber, healthy fats, and potassium!
It’s the perfect treat!
(And did I mention it’s vegan, gluten free, AND on the Specific Carb Diet?!
Here’s what you need: (Serves 1-2)
2 bananas, cut into coins and frozen
1/2 cup frozen blueberries
1/2 cup cold unsweetened almond milk (This brand is SCD-friendly!)
2 Tbsp (or more) freshly ground almond butter
1/2 tsp cinnamon
Optional: 1 Tbsp honey or 1 tsp stevia
Throw all your frozen fruit into the food processor. Process for 10–15 seconds. Then add your cold almond milk. Let process for another 10 seconds, then scrape the sides.
Let the food processor go for another 30-45 seconds, until you get a thick, creamy, soft-serve consistency.
Serve with a generous dollop of almond butter.
Other fun toppings: chocolate chips, chopped nuts, a drizzle of honey, sprinkles, sliced fruit, nutella, etc.
Oh my gosh. When I tell you that this is my favorite food in the world, I mean it.
I eat this literally five days a week. I look forward to it every day. I miss it when I don’t have it. I dream about it when I’m on vacation and without a food processor. I am obsessed.
It is so delicious. The texture is unreal — it’s fluffy, it’s creamy, it’s slurpy and melty like ice cream…it’s hard to believe it’s GOOD FOR YOU!
And topped with almond butter — not only does it give it a bump nutritionally with protein and healthy fat and fiber, but it just tastes phenomenal! Plus the texture is so pleasing.
Do yourself a favor and make this today! I promise, you’re going to wish you had discovered this delicious treat sooner! But it’s just the beginning of summer, so you’ll have allllll summer long to enjoy this frozen treat! ((And I won’t tell if you want to put a little vodka in there, and have it be a boozy dessert! I will plead the fifth as to whether I’m planning on doing that for the Fourth of July on the boat! 😉 ))
