Ok — I would like to make a petition: That just because it’s now November, doesn’t mean you can’t have ice cream for dinner!!

When I tell you that this is my obsession, I mean — this is MY OBSESSION. I eat this probably 5 times a week. It is just so stinkin delicious.
It is creamy and fruity and melty and is everything you want from a frozen treat.
Plus…it’s healthy!
Yes, you heard that correctly — this beautiful dish is made ENTIRELY FROM FRUIT!

Yep! It’s NICE CREAM! Meaning — it’s Banana (or ‘Nana) + Ice Cram! Sooo Nana + Ice Cream = NICE CREAM!
How amazing is that. There’s some magic that happens when you freeze bananas and then put them in the food processor. They become the consistency of soft serve ice cream! I’m serious! If you don’t believe, try it out!

Just as a “client testimonial” — I told a couple of my guy friends about this “healthy dessert” — and they are now hooked. They text me all the time with photos of their nice cream, with captions like, “Nice Cream Strikes Again!” hahah
But for real — this is magnificent.
So okay – what the heck is it?
TROPICAL BERRY ICE CREAM!

Notes of mango and pineapple with creamy banana and punchy berries!
It literally tastes like vacation. And if you want to throw a splash of coconut rum or pineapple flavored vodka in there — I certainly won’t tell π
Plus — it’s gluten free, vegan, paleo and Specific Carb Diet friendly!
Here’s What You Need: (Serves one or two)
2 ripe bananas (preferably with brown spots) – sliced into coins and frozen
1 cup frozen strawberries
1 cup frozen pineapple
1 cup frozen mango
1/2 cup frozen blueberries
1-2 Tbsp almond butter (the more the better!!)
1 orange (not frozen) — OR 1/3 cup coconut milk OR 1/3 cup almond milk
1 tsp ground cinnamon
OPTIONAL: 1 dropper full of french vanilla stevia OR 1 Tbsp honey
Tools:
Food processor (This is the one I use and love)
OR Vitamix Blender (or another high powered blender)
Good Chef’s knife (Here’s the one I highly recommend)
Zip-top baggies
Enormous bowl haha
Directions:
This recipe is so easy, even NYC bachelors can make it! ((hahah sorry, fellas — no offense!!) But for real.
First things first: You’ll need to freeze your bananas. Preferably over night, but for at least 4 hours, until solid.
Protip: This is a great meal-prep dish. So I buy a bundle or two of bananas — let them get to the perfect ripeness (with LOTS of brown spots) and then cut them up into one-banana-baggies, put them in the fridge, and then this dessert is ready and rarin’ to go whenever it strikes my fancy!
So okay – throw all of your frozen fruit into the food processor, and then let it go until all the frozen fruit is broken up into little tiny pebbles. Warning — this makes a LOUD NOISE, and your food processor will shake. So brace the machine, and warn any small children. hahahaha — but for real.
Once you reach this consistency, add your peeled orange. This provides the liquid for the dish. But you can also substitute 1/3 cup coconut milk or 1/3 almond milk, which are super yummy options too.
After you add the orange, stop the food processor, and scrape down the sides. You’ll need to do this once or twice.
Finally, once everything is starting to come together, add your cinnamon and sweetener of choice.
**If using stevia, once you add it, it will “puff” it up, and create this fluffy consistency. So be sure to add it right at the end, after it is all mixed together.

OPTIONAL GARNISHES: You can top this with shredded coconut, chocolate chips, chopped nuts, pumpkin seeds, more fresh fruit, pomegranate seeds, left over halloween candy, candied ginger, a sprinkle of cinnamon, a drizzle of honey or Nutella, a gob of peanut butter — the sky is literally the limit!

Alright, if you’re not currently making a shopping list of these ingredients and grabbing your car keys to run to the grocery store, what are you doing with your life?! hahhaha Juuuuuust kidding. But for real, whenever I’m home, the people in my family (my nieces in particular) always beg me to make this for them. It is that good.
Honestly, it is better than ice cream. It is light and fluffy. It’s fruity with a kiss of spice from the cinnamon.
It does not taste like bananas — I promise. It tastes like tropical bliss — much like a hearty piΓ±a colada!

The mango gives it a beautiful tangy sweetness, while the pineapple hits ya with that intense sweet note.
And then the berries provide the best brightness. And did you know — the antioxidants in blueberries are SO GOOD FOR YOU!?! My Ulcerative Colitis doctor said that he recommends that every single person eats at least one handful of blueberries a day to reduce memory loss and increase brain function!? So there you have it — eat your bluebs!

I love nice cream and make it all the time in a Vitamix. I usually make chocolate-mint nice cream, pumpkin-spice nice cream and occasionally berry nice cream. Coconut milk sure sounds like a tasty ingredient to add to the mix! How many servings does your tropical berry nice cream make? I feel like this recipe would make multiple servings.

How many servings does this make? Can it be frozen if you don’t use it all in one sitting? And if so, how does the consistency hold up? Thanks! Looks yummy!!
I eat it all hahaha but it could make up to three servings. Yes it can be frozen but that definitely alters the consistency. I would only freeze it for Max one hour. Itβs still delicious, but more of an icy sorbet consistency rather than the fluffy soft serve that you get initially. Hugs and love xox

This looks amazing, but once again as a 56-year-old divorced bachelor, it’s not going to come to fruition (get it?) Anyway, my bad jokes aside, dad was Air Force and we moved a lot, and the best ice cream I ever tasted was at legendary Steve’s Ice Cream in Somerville, Massachusetts. Back in the 1970s, you had to stand in line around the block for over an hour, but it was worth the wait. I even found that corner on Google Maps. Steve Herrell supposedly had some secret process in which he removed most of the air out of the ice cream. It was really thick and tasted incredibly delicious. We had one of those hand-crank ice cream makers at home, but it never quite worked correctly, although it produced good memories. I live near Busch Gardens and Water Country USA, and they have pretty tasty ice cream too.
