Hello November! And hello cozy cooking season!
Tonight I have got one of Steven and my favorite dishes that I make!

My hearty and delicious Turkey Chili! It’s the perfect dinner for fall: high in protein, and high in flavor! Plus you can make it in under an hour!

AND – it’s gluten free, keto and Specific Carb Diet friendly! Here’s what you need!
Ingredients:
3-4 Tbsp olive oil
1 yellow onion, chopped
4 garlic cloves, minced
1 medium red bell pepper, chopped
1 pound lean ground turkey
3 or 4 tablespoons chili powder (depending on how spicy you like it!)
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1 (28-ounce) can diced tomatoes (use San Marzano if possible)
1 1/4 cups chicken or veg broth
2 (15 oz) cans dark red kidney beans, rinsed and drained (SCD do not use canned, but soak and cook them per SCD directions)
1 (15 oz) can sweet corn, rinsed and drained (SCD substitute 1 cup frozen peas)
Garnish:
Sour cream (SCD omit)
Cilantro
Cheddar cheese
Avocado (My favorite!)
Tools:
Large Stock Pot
Good Chef’s Knife – this is the one I use and love!
Directions:
In a large pot, sautΓ© your onion, garlic and red pepper in olive oil and a sprinkle of salt and pepper for 5 minutes until tender.
Add the ground Turkey and brown until thereβs no more pink. Then add your spices and mix well. Finally add the tomatoes, broth, corn and beans and stir to combine.

Cover with a lid, reduce heat and simmer for 30-40 minutes.
Serve with garnished of choice – I love tortilla chips, avocado, sour cream, cilantro and cheese!

Oh my gosh, what a perfect fall meal! I served this with a hunk of crusty bread, and let me tell you, my fiance was one happy camper!

This is so hearty and delicious – it’s hard to believe that it’s healthy.
Ground turkey often gets overlooked. It’s seen as the dry, less-flavorful, “healthy alternative” to ground beef…but I think that is grossly unfair.

There is so much going on in this chili, from the garlic, to the cumin, to the sweet corn — having ground turkey as your protein really allows for all of those flavors to shine, without this being a “beef-centric” stew, if that makes sense.

And of course, you could substitute ground beef for the ground turkey if that’s more your jam…but I really think the turkey adds a little something special here.
And this definitely has a kick to it! So pile on that sour cream to cool it down!
But the best part about this recipe — the leftovers! They only get better with time!

This dish is a 10/10! Definitely give it a try tonight!

This looks so delicious, Caralyn! I made another pot of chili this afternoon, I just toss the onions in and let them soften and flavor the chili. I tried sauteing them which made the chili taste odd.
