My Ulcerative Colitis has been in remission for more than 12 years now. I’m symptom and medication free, and I have the Specific Carbohydrate Diet to thank for that. And I’ve gotta say, it’s been quite the life altering change. I adopted it when I had been on bedrest for 11 months in a terrible Ulcerative Colitis flare. I was facing a fork in the road: either have surgery to remove part of my intestines where I’d have to have a J-Bag for the rest of my life, OR be on an immunosuppressive intravenous megadrug that I’d get infused every 4 weeks for the rest of my life, that in essence, would turn off my immune system. So faced with that difficult decision, I asked my doctor if I could first give the Specific Carbohydrate Diet a try. Most people don’t give it a shot because it is so restrictive, but I decided to try it for a month. And wouldn’t you know, IT HEALED MY ULCERATIVE COLITIS!

I thank God every single day for bringing this diet across my radar, because it saved my life.
Well — like I said, it’s very restrictive, because it has to do with the molecular structure of food. So, in addition to no gluten, grains, dairy and soy…I ALSO cannot have sugar… which, if you’ve never noticed… is in everything.
HOWEVER — I CAN have honey! Honey is the only “legal” sweetener on the Specific Carb Diet! So, when I say it is nectar from Heaven…I mean it!

But if there’s one thing this whole healing experience has taught me, it’s that what we put in our bodies matters. Quality ingredients and wholesome foods that are nutritionally sound and calorically sufficient are so important to help the body, heal, move and thrive!
So, in my quest for healing, I discovered manuka honey, which is a specific kind of honey that comes from New Zealand that, unlike regular honey, has tremendous health and immune system benefits. Not to mention, it also specifically helps with digestive issues and is absolutely delicious! So naturally, it has become a staple in my diet.
I have found that Wedderspoon Manuka Honey is the gold standard when it comes to this liquid goodness. In addition to manuka honey, they also have manuka honey drops and EpiCor lozenges that support the immune system.

And Wedderspoon’s Apple Cider Vinegar with Manuka Honey just might be one of my favorite things. For those unaware of the power of raw apple cider vinegar, it contains a string of beneficial bacteria, enzymes, proteins and minerals which gives unfiltered ACV its beneficial properties. And paired with manuka honey, it’s a powerhouse of an elixir. I use it with olive oil as a salad dressing, and also take a Tablespoon “shot” of it once a day!
So tonight, I wanted to share my favorite way to enjoy this sweet superfood:
My Wedderspoon Manuka Honey, Almond Butter and Banana Quesadilla!

And I’m making it the cool TikTok “Quartered Quesadilla” way! This tasty treat is comprised of creamy almond butter coupled with delicious Wedderspoon Manuka Honey and bananas, kissed with cinnamon, and folded into a chewy tortilla!

I used a keto coconut tortilla (which is Specific Card Diet friendly), but feel free to use whatever tortilla you’d like!

Here’s What You Need: (Serves One)
1 tortilla (SCD use a coconut meat wrap)
1/2 banana, cut into coins (SCD, make sure the banana has lots of brown spots)
3 Tbsp almond butter (divided)
1 Tbsp Wedderspoon Manuka Honey
1/2 tsp cinnamon
Tools:
Good Chef’s Knife
Butter knife
Directions:
On a cutting board, fold your tortilla into quarters. Unfold, and along one of the creases, cut with a knife to the center.
Let the creases be your quadrant divider.
In one quarter of the tortilla, spread 1.5 Tbsp almond butter. On the next quarter, spread one Tbsp Wedderspoon Manuka Honey. On the next quarter, place your banana coins in a thin layer. Sprinkle the bananas with the cinnamon. On the final quarter, spread the remaining 1.5 Tbsp almond butter.

Then, with the cut crease, take that quarter, and fold it over, following the creases. Keep folding in the same fashion two more times, until you have a little triangle of your stacked quesadilla with layers of almond butter, Wedderspoon Manuka Honey and banana.

Oh my gosh this tastes like Heaven! Honestly, it tastes like sweet sweet childhood, but elevated and packed with wholesome goodness!
I love the kiss of cinnamon — it gives it this warmth, and kind of “matures” this childhood staple.
And folding it this way really makes it super easy to eat, and portable too. If you want to go the extra mile, you can quickly throw it on a frying pan, and toast either side for a minute.
The almond butter is so rich and nutty. It really gives this quesadilla some staying power too.
But the star of the show is the Wedderspoon Manuka Honey. It’s sticky, it’s sweet with an earthiness to it, and it’s just so delicious. And I love knowing that it’s doing great things for my body too. Wedderspoon’s pure, raw and unfiltered Manuka honey is brimming with live enzymes and potent healing chemical compounds. It’s a staple in my diet for a reason (plus it’s delicious, and something I look forward to everyday!)

So there you have it! Give this classically reimagined childhood staple a try! It’s great for breakfast, snack, a light lunch, even dessert! And I won’t tell if you have it a la mode 🙂

How does Manuka honey compare with honey from a local beekeeper? I have been using the vinegar, honey, and lemon combination for probably five years and definitely don’t feel my age. I’ve been supporting the local beekeeper all this time. I just don’t get the same sense with honey purchased from the grocery store. I’ve also tried enhancing the vinegar with cayenne pepper, horseradish, garlic, onion, peppercorns, and herbs.
