Friends, my entire world just changed.
I have seen the light.

Over the weekend, I ate BEEF for the first time in 20 YEARS.

AND THEN…just yesterday, I ate CHEESE for the first time in 20 YEARS!

Talk about tastebud whiplash! — And Instagram BACKLASH! Wow.
I posted a video on Instagram of eating the meat and the vegan community went absolutely berserk, telling me I’m an animal killer, I’m weak, contributing to global warming, etc.
But no mind.
I actually ate it twice. The first time, I cooked some ground beef and added it to a homemade tomato sauce that I served over spaghetti squash, so it really tasted like pasta! It was actually delicious — it tasted like childhood. 🙂

And then the second time, I ate Hamburger Soup (my own recipe, which I will share on Wednesday), and it was SO tasty! Think rustic vegetable soup with ground beef in it.

I haven’t worked my way up to beef chunks yet — I’m still a little chicken…no pun intended.
And then YESTERDAY, I ate scrambled eggs with cheddar cheese mixed in (Specific Carb Diet legal!) Which…was euphoric.

And then for DINNER, I made the most OUTRAGEOUS grilled cheese sandwich.

The “bread” was made out of cauliflower, almond flour, eggs, and parmesan cheese (also SCD legal!) and I stuffed a mixture of cheddar and swiss between it! (Also SCD legal!)

Oh my gosh it was the best thing I have EVER eaten.
Now listen, I didn’t eat just ANY beef and cheese.
The beef was 100% grass fed, organic 93/7.
And the cheese came from GRASS FED cows.
Both of which I ordered from Whole Foods via Amazon.
But having GRASS-FED beef and cheese made from GRASS-FED cows is super important because the cows weren’t given added hormones, or antibiotics, they weren’t fed genetically-modified corn. But rather, they were eating grass and bugs and were getting sunshine and living healthy lives. AKA: thriving cows.
Now for the big question…..WHY?
WHYYYYYY after 20 years of not eating meat or cheese am I all of a sudden partaking in these culinary delicacies?
First — let me preface this by saying, the Specific Carbohydrate Diet does allow a very few, very specific hard cheeses. Cheddar, Swiss and Parmesan being three of about 20.

And meat has always been allowed on the diet.
I have just chosen not to eat them. The meat for — just being “icked out” by it… And the cheese, because in the preliminary phase of the diet when I was getting out of the 11 month Ulcerative Colitis flare that had me on bedrest, cheese was off limits. They suggest adding it in only after your symptoms subside, and then adding very slowly and cautiously after that. And frankly, I didn’t miss it and I was just really scared of “upsetting the applecart” if you will, and triggering another flare. After all, I had just gotten my life back.
BUT…and now for the answer of why….
My husband and I are trying to have a baby! And so I want to have my body be as nutritionally sound as possible. And so that means eating the broadest spectrum of the Specific Carbohydrate Diet — including meats, legal cheeses, honey, legal beans etc.
SO…here we are!
I am totally expanding my repertoire. And it’s been absolutely glorious.
I don’t want to place too much of a spotlight on food, but wow — it’s like my eyes have been opened and I’m seeing everything I’ve been missing for TWENTY YEARS!
Now, of course, I am going to be eagle-eyed on my Ulcerative Colitis symptoms going forward, and at the first inkling of one, I am going to put the kibosh on it. But wow — I feel like a new woman!
So anyway. Please pray for Steven and I on our fertility journey – we would so appreciate any prayers you can spare! 🙂
Until Wednesday!

Best wishes on your journey.

1st of all, let me say that I did NOT love sone of the comments on that.
Seems like the “Tolerance” group are only tolerant of those who agree with them.
Good for you though for choosing what is right for you in any circumstance or situation.
2ndly, I’m a huge animal lover. That being said, I believe there is a reason we were given animals as a food source and why our bodies take in and absorb the nutrients we need from them so easily. 3rdly, I also have become aware of the devastating effects of animal over population. In areas that are either unhunted or have no natural predators and become over populated, they don’t thrive. They overwhelm their food source, starvation, illness and disease set in.
Part of taking care of this big garden, it’s health and wellbeing is to control animal population whereby they may thrive. If that makes sense?

Sending prayers for you two on this journey! 🙏 And I’m sorry to hear about the negative comments on IG. It doesn’t matter what you do, some people will find something to judge. Remember God’s opinion is the one that matters! ♥️

So exciting!! It’s so interesting how all our nutrition needs are so individual, isn’t it? Me personally – I am a different person (in a BAD way) when I don’t have red meat somewhat regularly. I’m glad you’re able to eat some meat and cheese as well, since it’s much easier to get optimal nutrition when your diet is as broad as practical for you.

So I somehow missed that post on Instagram. Just now I went back and watched it (awesome!). And I liked all the positive comments and the ones refuting the negative comments. (And to the person who was concerned about mad cow disease, I wanted to say something about how there seemed to be a lot of mad cows in the comments… oops, did I say that out loud?)

Dear Caralyn, I’m so very happy for you as you’ve taken another step in your recovery journey! I’m excited with you. Especially since the goal is to prepare yourself to try and have a baby. Just be patient if it doesn’t happen right away. It’ll happen in God’s time, I’m sure. Meanwhile, you are in my prayers for success in the addition to your menu and your quest for a child!

Sending prayers. You’ll be such a great parents! If you’re open to recommendations, I recently read Real Food for Pregnancy by Lily Nichols and would recommend it for anyone else on their fertility journey. It not only lists beneficial foods, but cites studies on why and how particular foods help mom and baby, as well as things that may be detrimental.

Our body chemistry is different for each person and you need to find out what is necessary to sustain your own good health. One of your friends stressed moderation and that is important in all aspects of life. You are answerable to God alone and not to any pressure group and God is more balanced and knowledgeable than any of our agitators here on earth so He will always guide you and I know you are committed to him. I will only eat fish occasionally as I’m careful about any kind of processed food as most of what you get in the supermarkets is laced with some chemical the body doesn’t like. But we can’t be extreme about that and just trust in God that the food we pray over at each meal will be beneficial to us.
