Introducing your newest obsession…CHOCOLATE TURTLE BARS.
Turtle candies. They’re the classic combination of rich pecans, sticky caramel, and luxurious chocolate.
Well. I’ve taken that delicious flavor profile and translated it into a decadent snack bar that will literally make your eyes roll to the back of your head in sheer bliss.

And the best part? They’re completely, 100% healthy!
Whaaaaaat?!! Yes! You read that correctly! (Aside from a Tablespoon of *optional* chocolate) they are made entirely from whole food ingredients. FIVE to be exact!
And yet they taste like something straight from Godiva chocolatier.

Don’t believe me? I delivered these to a special person, and lets just say, he eats them two at a time!
Have I sold you yet?
And they’re grain and gluten free, paleo, vegan, AND Specific Carb Diet friendly!
PLUS – no oven required.

Here’s what you need: (Makes 12 generous bars, or 36 cookie bites)
20 medjool dates, pitted
1/4 cup almond butter
2 cups raw pecans + 24 whole pecans
1/8 tsp salt
1 tsp cinnamon
1 tsp pure vanilla extract (alcohol free)
Optional Drizzle:
1/4 GOOD semi-sweet or dark chocolate
1 tsp coconut oil (not SCD or paleo friendly)
Tools:
Food Processor
Square Brownie Pan
Parchment Paper
Good Chef’s Knife
Pyrex measuring cup
Directions:
Throw all your ingredients (minus 1/2 cup + 24 whole pecans, and the chocolate/coconut oil) into the food processor and process until it is well combined. It will look like coarse, wet, sand.
Then, add your remaining 1/2 cup pecans to the processor (reserving the 24 whole pecans), as pulse 5 or 6 times, until they are just beginning to break up. (This is for texture variety).
Line a 6 or 8 in square brownie pan with parchment paper. (Have the parchment paper extend over the sides so you can easily lift it out of the pan.)
Then spread the sticky date mixture on top. (To do this, I took another sheet of parchment paper on top and “smooshed” the dough to the edges with my hands.

Then, place your remaining 24 pecans evenly on the top, and with that same parchment paper, press them into the bars.
Finally, add the optional drizzle. Melt 1/4 cup of the best quality semi-sweet chocolate chips you can find, plus 1 Tbsp of coconut oil. I did this in the microwave for 15 second intervals, stirring until melted. But you can also use the stove.

Then, with a fork, generously drizzle the chocolate all over the bars, being sure to get the corners too!
Set them in the fridge for at least one hour. Then, with a sharp chef’s knife, cut into 12 bars. Individually wrap them in parchment paper to preserve freshness! Store in the fridge for up to 3 weeks.

Another option: you can form the dough into 1 Tbsp-size cookie bites, and then dip those into the chocolate.
OH MY GOSH. OH MY GOSH. OH MY GOSH.

These are the best things I’ve eaten in a while.
In full transparency, I didn’t include chocolate on my batch. But that didn’t even matter because THESE WERE SO STINKIN DELICIOUS!!

They taste like the chilled filling of the most decadent, gourmet pecan pie. *Drooling*
The texture is so magnificent…they are super sticky and chewy – and in every bite there will be one little crunch from a large pecan piece.
I love them cold – it gives it a cookie dough texture!

And the flavors — oh my gosh. Dates – when blended up with a kiss of vanilla extract – take on this marvelous caramel flavor and texture. It is truly indescribable. You just have to try it to believe it.
That, coupled with the buttery and luxurious pecans and slight hint of cinnamon…simply divine.
And then, come on…anything with chocolate is just elevated to the highest degree.
